They say you haven't visited Italy if you don't know what tiramisu is. This is the most popular delicacy in the world, the name literally translates as - "lift me up." This is not a cake or a cake, rather it is something in between both delicacies. To prepare the most famous dessert, Italians use Savoyardi - an oblong-shaped biscuit cookie and Mascarpone - a young soft cheese. A recipe for tiramisu with strawberries at home cannot do without these products. But unfortunately, they can not be bought always and not everywhere. Such original cookies are hard to find, and the cheese is quite expensive. Fortunately, there are no irreplaceable ingredients. For example, sovoyardi can be replaced with a regular biscuit. Despite the fact that the dessert is quite high-calorie, it goes well with fragrant summer berries, which neutralize its fat content and add summer lightness and airiness. Sugar will also be a little less in the recipe, because it's summer outside and you want something lighter and cooler.

To make Strawberry Tiramisu you will need:

  • 100 gr. young mascarpone cheese;
  • 15 pcs. savoiardi cookies;
  • 2 tbsp. l. strawberry jam;
  • 150 gr. fresh strawberries;
  • 75 gr. cocoa powder;
  • 20 gr. powdered sugar;
  • 1 egg;
  • 100 gr. cream (33-35%);
  • 60 ml of brewed strong coffee;
  • mint leaves for decoration.

Strawberry tiramisu recipe step by step

1. We make coffee. If there is no ground, it can be replaced with soluble. 1 st. l. diluted in 50-70 ml of hot water. Pour the finished drink into a wide deep dish, let it cool.

2. Separate the egg yolk from the protein. The yolk is mixed with powder and sent to a water bath. Whisk gently until the mixture thickens. When the water boils, keep the mixture in the bath for no longer than 7 minutes.

3. Remove the yolk-sugar mixture, pour into a deep dry bowl and let it cool completely.

4. Mix the mascarpone cream cheese with the yolks.

5. Beat with a whisk or mixer until smooth. The finished mixture should increase slightly in volume. It is best to run the mixer on low speed, this will not turn the cheese into butter.

6. Pour the cream into a separate deep bowl for whipping. Most of the fat needed for whipping collects on the sides of the package. Therefore, before pouring the cream into a bowl, shake them thoroughly and crush the packaging with our hands.

7. Whip the cream with a mixer at high speed until stable peaks. The main rule for successful whipping cream is that it must be very cold. Do not over-whip the cream or it may turn into butter.

8. Mix the whipped cream with the cheese mixture with a spatula. The classic cream should turn out to be very tender, so we mix in quickly and gently with the movements of the spatula from the bottom up and in a circle.

9. My mint and berries. Preparing jam, cocoa powder.

10. We put part of the cream and chopped fresh strawberries into the bowls.

11. Cut the cookies into 2-3 parts, depending on its size. In this recipe, it is quite possible to use ugly leftover cookies.

12. Dip savoiardi (lady's fingers) in cold coffee and immediately put them in bowls, in which dessert will be served. This must be done quickly so that the cookies do not become sour. Try not to overexpose the cookies in coffee, otherwise the dessert will be too wet.

13. Top with a couple of tablespoons of strawberry jam.

14. Add the remaining cream, sprinkle cocoa powder on top of the dessert through a fine sieve. Decorate with strawberries and mint sprigs.

15. We put the finished tiramisu dessert in the refrigerator for a couple of hours, it should cool well.

How to make strawberry tiramisu

  1. Let's start with the cream. In our recipe, it is the classic one, but, as indicated above, it can be replaced with other options, the recipes of which you will find at. And for the traditional cream, we separate the proteins and yolks into different containers suitable for whipping. Beat the whites with a mixer, throwing a pinch of salt there, until “stable peaks”, i.e. until such a foam is formed that when the container is turned over, it does not flow out and does not fall out of it. When large bubbles form, pour 1 tablespoon of powdered sugar.
  2. Beat the yolks separately with the remaining powder until whitening and increasing in volume.
  3. Put in the beaten yolks of mascarpone and still work with a mixer until completely mixed.
  4. Gradually add proteins. And already with a spatula, carefully so as not to drop the foam, wrapping movements from top to bottom, mix the proteins into the cream. Ready.

  5. If you just have frozen strawberries, you can turn them into puree without defrosting by mixing with sugar using a blender. In this case, the amount can be determined to taste. Add lemon juice to grated strawberries. It will make the taste of tiramisu more complex and richer. We shift the mixture into a container in which it will be convenient to immerse the savoiardi. Dip cookies on both sides.
  6. Arrange 10 cookies in two rows. In the photo you see a flat dish. In fact, this is done only for better visibility. The dessert is very delicate, it is most convenient to cook it in a container of a suitable size with high sides - in the same food container. You can also do it in portions - in beautiful bowls or wide stable glasses, breaking the cookies into pieces.
  7. Spread half of the cream on the savoiardi. It is very convenient to use a pastry bag for this purpose.
  8. Place the remaining cookies on top, after dipping it in strawberry puree.
  9. Cover with the remaining cream.
  10. We remove the dessert in the refrigerator for several hours. Savoyardi should be well soaked, become soft and tender.

You can decorate tiramisu with fresh strawberries, chocolate chips, grated lemon zest.

This version does not require fresh strawberries. Frozen or sugar-ground berries, which housewives prepare for the winter, are perfect. You can make a dessert with other berries or fruits - both fresh and frozen - apricots, raspberries, bananas.

In extreme cases, mascarpone can be replaced with cream with sour cream or cheese mass made from cottage cheese.

  1. To prepare the best strawberry tiramisu, strawberries are washed well and dried with a disposable kitchen towel.
  2. From the total mass of berries, we put a few of the most beautiful strawberries in a separate container: to decorate tiramisu.
  3. Strawberries for dessert are transferred to a bowl and crushed with an immersion blender.
  4. Strawberry puree is passed through a sieve with small holes. Thus, we will get rid of small bones. But if these bones do not interfere with you, you can skip this cooking step.
  5. If the strawberries you are using are sour, then add sugar and mix the strawberry puree well until the sugar is completely dissolved in it. But I have sweet strawberries, so I did not add sugar.
  6. Now let's make the strawberry tiramisu cream. For this we need very cold cream.
  7. We shift the chilled cream into a separate container and beat them with a mixer at maximum speed until soft peaks.
  8. Add icing sugar, Mascarpone cream cheese to whipped cream, and mix everything well at the minimum speed of the mixer for one minute. Delicious cream with Mascarpone cream cheese for an Italian dessert is ready.
  9. Now let's get on with the cake. For this, I used a detachable form 15 * 22 centimeters. But you can use any other form.
  10. Dip each Savoyardi cookie well in the strawberry puree and place it in the prepared pan. Thus, we form the first layer of dessert without baking.
  11. We form the second layer of tiramisu from the cream and evenly level it.
  12. Then we form a layer of cookies and the last layer of dessert - cream.
  13. Decorate the top of the most delicious dessert without baking with halves of strawberries.
  14. We send the best strawberry tiramisu to the refrigerator for 5-6 hours.
  15. Then we take out the form with the cake from the refrigerator, carefully pass the knife along the edge of the form and remove it.

In the original recipe, the yolks are not thermally processed in any way. I think this is dangerous, so I rubbed them with sugar in a water bath until a homogeneous lush foam formed. This took me about 10 minutes. If you are confident in the quality of chicken eggs, then you should wash them with a brush and baking soda and beat the raw yolks with powdered sugar until a fluffy foam forms. The mass should increase by about 1.5 times.

Next, you need to whip the cream. Ideally, of course, you need to use natural chilled cream with a fat content of 33% - this is how you get the most delicious dessert. Beat - until a thick fluffy foam is obtained. I used vegetable cream, which I dilute with milk.


Add the cream cheese to the completely cooled egg mixture and beat until smooth.


Add cream. Next, mix with a spatula very carefully from top to bottom. Literally 15-18 movements will be enough. The less you stir at this stage, the thicker the cream will be. It should also be noted that the ingredients for the cream should be as cool as possible.


Let's get some coffee. It needs to be cooked in advance so that it has time to cool. Ideally, cool the coffee in the refrigerator. Pour it into a cup to make it easier to dip the cookies.


To adopt a recipe is not enough, the food must also be served correctly. And for this, you should initially choose the right dishes and assemble the dessert itself exactly with the recommendations. A square container works well. Smear a few tablespoons of cream along the bottom of the container. Next, dip the ladyfingers cookies in coffee for literally one second on each side.


We put them in rows in a prepared bowl. Top with cream.


Fill the container like this in layers to the brim.


In the classic version, this is no more than 4 and at least 2 layers.


Top the dessert evenly with a strainer to sprinkle with cocoa powder.
