Ingredients: 1 cup flour, 100 g or butter, 1 egg yolk, 1-2 tablespoons water, a pinch of salt.

Cooking. Mix salt with flour, beat the yolk and chop the butter. Combine the ingredients and knead the dough, gradually adding water. The dough must be put in the refrigerator for half an hour. Roll out the cooled dough into a layer no more than 3 mm thick. Arrange tartlet molds next to each other, cover with a layer of dough and press down with a rolling pin, then remove excess dough. Leave the molds with tartlets in the refrigerator for another half an hour. Prick the dough in several places with a fork before baking. Bake at a temperature of 200-220 degrees for 15-20 minutes. Adviсe. So that the dough for tartlets does not swell in molds, you can put beans or peas on the bottom of the molds. The ready-made warm base for tartlets can be lightly greased with a beaten egg - it will fill all possible "pores" on the surface of the dough and prevent the filling from seeping out, and also keep the base crispy. Cooking. Cut the fillet into medium-sized cubes. Pour water into the pan (about a glass), add mayonnaise and chicken fillet, salt. Simmer under the lid until cooked, add chopped garlic. Grate peeled potatoes and season with salt. Grease molds with sunflower oil. Divide the grated raw potatoes into shapes so that you get baskets. Put the filling in the center and bake for 20-25 minutes in the oven at a temperature of 240 degrees. Grate the cheese on a fine grater, chop the green onion, mix the cheese and onion. After 20-25 minutes, take out the tartlets and sprinkle them with cheese and onions. Place back in the oven for 5-10 minutes.

Recipe. Tartlets with salmon and cheese

Ingredients: 300 g of ready-made puff pastry, 250 g of fresh or lightly salted salmon, 200 g of creamy processed cheese, 100 g, 1 egg, 50 g of green onions, salt, spices.

Cooking. Coarsely chop the walnuts, first set aside 8 halves. Finely chop the fish and herbs, add melted cheese (grind or grate). Mix everything, salt and pepper. Roll out the dough. Cut out 8 large and 8 small (for the lid) circles. Put large circles into baking dishes, distribute them among the forms, fill with stuffing. Cover the filling with small circles and pinch the edges. Draw a light mesh on the lids with a knife, grease with a beaten egg, decorate the center with half a walnut and bake for 20-25 minutes in an oven preheated to 180 degrees.
