Yeast dough pizza with sun-dried tomatoes and pickled mushrooms

Dough Ingredients:

  • Rice flour 400 g
  • Eggs 2 pieces
  • Dry yeast 7 g
  • Vegetable oil 5 tbsp.
  • Brown sugar 3 tsp
  • Salt 1 tsp

Filling Ingredients:

  • Regular hard cheese gluten-free (or home-made cheese with spices, if you do not tolerate traditional dairy products, see recipes) 100 g
  • Dried tomatoes 100 g

Cooking:

  • Remove the base from the oven and place the filling on it. Pour with mayonnaise, sprinkle with cheese and put in the oven, preheated to 180-200 ° C.

Garlic dough pizza with mushrooms, zucchini and olives

Dough Ingredients:

  • Gluten Free Flour Mix 500 g
  • Water 250 ml (more or less, depending on the consistency of the dough)
  • Olive oil 5 tbsp

  • Dried garlic 1 tsp

  • Cornmeal 250 g
  • Eggs 3 pieces
  • Dry yeast 10 g
  • Vegetable oil 5 tbsp.
  • Water 250 ml (more or less depending on the consistency of the dough)
  • Brown sugar 3 tsp
  • Salt 1 tsp

Filling Ingredients:

  • Pickled garlic 50 g
  • Olives (black olives) 20 g
  • Boiled chicken breast 100 g
  • Onion 1 piece of medium size

  • Rice flour 300 g
  • Water 400 ml (more or less, depending on the consistency of the dough)
  • Olive oil 3 tbsp
  • Soda 1 tsp
  • Apple cider vinegar 1 tsp
  • Salt 1 tsp
  • Spices to taste.

Filling Ingredients:

  • Pickled mushrooms (any) 100 g
  • Sweet pepper 100 g
  • Tomatoes 100 g
  • Pickled cucumbers 2 pieces of medium size
  • Olives (green) 50 g
  • Onion 1 piece of medium size
  • Gluten-free ketchup (you can make your own, see the recipe) 50 g
  • Regular hard cheese (or home-made cheese with spices, if you do not tolerate traditional dairy products, see recipes) 100 g
  • Salt, herbs and spices to taste.

Cooking:

  • Pour water into the flour with constant stirring. Mix well.
  • In the resulting mass, add oil, soda quenched with vinegar, salt and spices to taste.
  • Knead the dough for 5-10 minutes until the consistency of thick sour cream. Add water or flour if necessary.
  • Grease a baking sheet or form of suitable size (approximately 30x40 cm) with vegetable oil and sprinkle with flour.
  • Lay the pizza base on a baking sheet or mold.
  • Make the filling. Grind the ingredients to the size you need. Mix all the ingredients except for the cheese and ketchup.
  • Preheat oven to 180-200°C.

  • Bake pizza for 30-40 minutes. Check readiness periodically. Reduce or increase the baking time if necessary.

Corn flour pizza with marinated mushrooms, olives (black olives), tomatoes and basil

Dough Ingredients:

  • Cornmeal 200 g
  • Rice flour 40 g
  • Corn starch 40 g
  • Water 200 ml (more or less depending on the consistency of the dough)
  • Olive oil 5 tbsp
  • Salt 1 tsp

Filling Ingredients:

  • Pickled mushrooms (any) 50 g
  • Olives (black olives) 50 g
  • Fresh basil 3 sprigs
  • Dried basil 1/2 tsp
  • 1 medium sized tomato
  • Onion 1 piece of medium size
  • Gluten-free ketchup (you can make your own, see the recipe) 50 g
  • Regular hard cheese (or home-made cheese with spices, if you do not tolerate traditional dairy products, see recipes) 100 g

Cooking:

  • Mix cornmeal, rice flour and starch.
  • While stirring constantly, pour water into the mixture. Mix well.

I dreamed of pizza! Haven't eaten in almost 3 years. But in my understanding, pizza is a thin crispy flatbread stuffed with ham or salami, olives and, of course, with onions. I am writing Elena's original recipe: "Dough: 1 cup of grated cheese, 1 cup of kefir, 0.5 tsp of salt, 0.5 tsp of soda, 1 tsp of sugar, flour 2 tbsp. (I took flour rice, buckwheat a little, corn and added tbsp each of corn and potato starch) and 1 tbsp vegetable oil. The dough should be like thick sour cream. Pour the dough into a mold and bake"

I slightly modified the recipe for myself, especially for a thin pizza base. And this recipe has become one of the most popular in my kitchen. For the tortilla, I increase the amount of cheese, like Elena's. It turns out great!

kefir - 250ml

grated hard cheese - 30g

salt to taste

0.5 tsp soda

vegetable oil - 2 tbsp.

mix "Gray bread" - 150g

Kefir, salt and flour mix. Grate the cheese. Add soda and cheese to the dough, mix.

Then add vegetable oil, quickly mix the dough. Pour the dough into a greased form and bake in a preheated oven to 170g until cooked.

Lubricate the finished cake with sauce, spread your favorite filling, sprinkle with cheese and bake. It turns out a fragrant pizza on a thin crust.

For bread tortillas, we pour more dough into the mold. You can sprinkle with sesame seeds, herbs or flaxseeds, as Elena correctly noted. A good alternative to yeast bread, and even without eggs.

Ah, pizza ... since everyone already knows what it is, today we will do without lyrical digressions and excursions into history 🙂

So far, I've tried a few pizza dough options. And most of all I liked the bread dough pizza. The crust is quite thin, the side is tasty and crispy. The base holds the filling well, without getting too wet. The cake is delicious to eat even without filling - hehe. The last time I even had a desire to spread jam instead of ketchup, throw in pieces of chocolate and marshmallows ... oh, it didn’t work out without lyrical digressions 🙂

However, this test does have one drawback. It takes quite a long time to prepare. No, you personally do not need to pore over it for a long time. But! Since the dough is yeast, it will need to stand for at least an hour. And then it bakes for a long time - also up to an hour, despite the fact that it is thin.

How to cook gluten free pizza?

The most observant may notice that the recipe is very similar to 🙂 So it is. This is the same recipe, or rather half of it. I don’t want to repeat in detail how the dough is prepared - please. Yes, yes, I know that I'm lazy ... but copy-paste is not sports 🙂

So, the dough is ready. As we remember, it is not liquid, but soft and sticky. Rolling it out won't work. Therefore, simply put it on a greased baking sheet and spread it. Like this:

What size pizza is enough for this amount of dough? The size of my baking sheet is 32x32cm. It's minimum. You can take more.
Lightly grease the baking sheet with vegetable oil. The cake does not stick to the baking sheet, except perhaps quite a bit. I have a baking sheet without sides, so if necessary, it is easy to lift it with a flat spatula.

! Important note: Do not cover the baking sheet with parchment! Otherwise, you will eat pizza along with parchment. I already tried it, I didn't like it 🙂

Leave the dough in a warm place for an hour and a half. The dough should puff up a little. But not much, you won't see much difference. Unless the irregularities that remain during smearing will be slightly smoothed out.

We put in a preheated oven and bake at 160-170C for about 50 minutes. Only dough! We will lay down the filling on the finished cake. The dough should be covered with a uniform beautiful brown crust. If it cracks somewhere - it doesn’t matter, we’ll hide it under the filling 🙂 It turns out like this:

We take out the cake, do not turn off the oven. If you touch the crust now, it may seem to you that it is easier to kill someone with this crust than to chew on “it”. The crust looks dry and hard. No big deal, that's how it should be. With the filling, the crust will steam a little and become exactly the way it should be - not too hard, but not too soft.
Now we smear with tomato paste, three cheese, lay out the filling - whichever you like.

And another 15 minutes in the oven, so that it's all fried and the cheese melts.

How to cook:

- mix warm water with sugar, add yeast, leave for a few minutes;

- mix flour with egg and salt, add foamed yeast;

- add 100 g of water and stir until completely homogeneous;

- The consistency of the dough should resemble thick sour cream.

The dough is ready - you can bake bread!


Rice flour biscuits

Ingredients: vegetable oil, sugar, rice flour, banana, raisins, apple, nuts, cinnamon, soda, salt, nutmeg, ground cloves.

How to cook:

- mix 2 cups of flour, half a teaspoon of salt and nutmeg, a quarter teaspoon of cloves, one and a half teaspoons of cinnamon and soda quenched with vinegar;

- Separately, in a blender, mix banana, sugar and vegetable oil;

- add half of the flour mixture with spices to the resulting mass, mix, add chopped nuts, an apple and raisins;

- Add the rest of the flour mixture and mix thoroughly.

Shape into cookies and bake in the oven for about 15 minutes.

Rice flour pancakes

Rice flour pancakes easy to bake. We share the recipe.

Ingredients: 1 cup flour, half a cup of milk, a quarter cup of water, half a teaspoon of sugar, half a teaspoon of salt, two tablespoons of starch.

How to cook: using a sieve, sift the starch and rice flour, add sugar, salt. Pour milk with water gradually, stirring. Thoroughly mix the dough and let it brew. Then you can bake pancakes in a hot pan.


Rice flour dumplings

Ingredients for the dough: 400 g rice flour, half a glass of water, egg, salt to taste.

Advice! Tomatoes and zucchini secrete juice, so for the first time in the oven it is better to turn on the ventilation mode so that excess liquid evaporates faster. The main thing is to make sure that the pizza does not burn.

After half an hour, the pizza is removed from the oven, sprinkled with grated cheese and returned to the oven for another 5 minutes.

Plus, it's very easy and quick to prepare.

Put in a bowl 300 gr. whole grain flour, 1 tsp. olive oil, 1 tsp. salt and gently mixing, gradually add warm water until you get a smooth, dense, elastic dough. We roll it into a ball, wrap it with cling film and forget it in the refrigerator for the night. Such an adze is baked for 20-30 minutes at a temperature of 180 ° C, depending on the products used.

So, healthy pizza on rice flour dough - a recipe with a photo. Who knows a lot about rice, if not the Japanese? They even have a special pizza called okonomi-yaki. Making it is very simple, we take any filling, it cooks in a pan in 5 minutes, the main condition is rice flour and cabbage leaves.


Ingredients

  • Egg - 1 piece.
  • Oat flakes or bran - 20 gr.
  • Milk 0.5% fat - 50 milliliters /
  • Any lean meat - 50 gr.

  • Salt and pepper to taste.

Cooking method:


Mix all ingredients together using a blender. Lubricate the pan with sunflower oil and put on a small fire. Pour the resulting dough onto it and roll it all over the pan. After 30 seconds, turn the pancake over to the other side. Boil the meat, salt to taste and cut into small cubes. Spread over freshly prepared pancake.
