Tartlets with melted cheese, egg and caviar. Hearty tartlets with cod caviar

A rich assortment of snacks on the New Year's table is always good. And if these snacks are also simple to prepare, then you can cook a lot of them. Caviar tartlets prepared according to our recipe with a photo are a festive snack that even a child can make. Such tartlets look expensive and elegant. Therefore, do not miss the opportunity to diversify your New Year's meal with delicious, but simple snacks.

Ingredients for tartlets:

  • tartlets - 10 pcs.;
  • processed cheese - 150 g;
  • red caviar -100 g;
  • chicken egg - 3 pcs.;
  • garlic - 1 clove;
  • pitted olives - 10 pcs.;
  • mayonnaise - to taste.

How to make caviar tartlets

Boil eggs in salt water. It is necessary to add salt to the water so that the eggshell does not crack and the protein does not spill out. We clean the garlic from the husk and pass through the press.

We cool the finished eggs in water, peel them from the shell and grind them on a grater into egg chips.

It is better to put processed cheese in the freezer before cooking, so that it is more convenient to grind it on a grater. Grate frozen cheese.

Mix eggs, melted cheese and garlic, season with mayonnaise and mix thoroughly.

Ready-made tartlets, made of tender dough, are removed from the package. They can be purchased at almost any store or supermarket in the bakery section, and they are inexpensive. We fill our tartlets with this appetizer.

Put red caviar on top and decorate with olives. Additionally, you can decorate with greens.

We spread all the appetizing tartlets on a beautiful plate or dish. A truly festive appetizer is ready. Now it remains to serve it on the table and please your guests with it.

Festive long feasts with bowls of salads and their long eating are becoming less and less popular. A buffet table with snacks now seems much more attractive to many people - and much less dishes are needed, and it is more convenient for guests to eat all sorts of dishes, and they can try a much larger number of dishes without overeating. Yes, and the same tartlets are very diverse: with caviar, with ham, with mushrooms, with meat, sweet ... In addition, cook them (if you buy blanks in the store or bake them in advance) very quickly: spread out the filling, decorate on top - and carry on the table.

DIY molds

Any tartlets begin with baskets. If you are not a categorical opponent of self-baking, make them at home. So you will definitely be sure of the quality of your molds and will be able to choose the size and appearance you need. In principle, the baskets are made from the usual unsweetened shortcrust pastry - if you are planning, of course, not a dessert, but, for example, tartlets with caviar. Sweet dough should be prepared for the children's table: 200 grams of margarine (and if it's not a pity, then low-fat butter), taken out of the refrigerator in advance, are combined with 3 cups of flour and chopped into small pieces with a knife. A glass of 20% sour cream is also added there, and the dough is well kneaded, after which it is placed in the refrigerator for an hour. After this time, the dough is rolled out into a not very thin sheet, and circles are cut out of it with a stack or a glass (depending on the size of the baking dishes). The molds are lubricated with vegetable oil, mugs are put into them and put in the oven for 15 minutes. It is necessary to take out the baskets until they have cooled down.

What to choose in the store?

If you are not a fan of messing with the oven, pay attention to the range of supermarkets. Most often they contain waffle baskets. It is far from suitable for any filling - the same tartlets with caviar are too wet for them. The waffles will soften quickly, even the bottoms may fall off. Cracker baskets, on the other hand, are too dry. They may not be saturated with the juices of the filling and crunch on the teeth, which again, not everyone likes. So you need to look for sand molds and make sure that you do not come across sweet ones.

Caviar fillings

The most versatile in the use of tartlets with caviar. Depending on which one was used, they can serve as an appetizer for any drink or just for pleasure. For example, tartlets with capelin caviar are very simple to make: fill the baskets from a jar, decorate with olives and dill slices - and you're done. And as a snack with vodka, they are simply irreplaceable!

It will be more expensive, but also more tasty, beautiful and tempting to make tartlets with red caviar. In principle, it is quite self-sufficient, so you can just put a spoonful of the precious mass in a basket, and add a small slice of lemon, an olive or, again, greens on top for beauty. But there are also more appetizing recipes.

Exquisite combination

Fillings for caviar tartlets can be enriched with a variety of additional ingredients. The taste of the dish will be completely unique if you introduce salmon and avocado. Such tartlets with fish and caviar will conquer the heart and stomach of your guests. To do this, avocado, salmon fillet (200 g), cucumber and 2 hard-boiled eggs are finely cut and mixed. The mass is laid out in baskets, and red caviar from a 40-gram jar is evenly distributed on top.

You can build other tartlets with red caviar - without fish, but with dill and eggs. For 100 g of caviar, 2 eggs, 40 grams of hard cheese, the same amount of butter and a little dill will go. In theory, this amount of products should be enough for 18 small tartlets. Boiled eggs and cheese are very finely rubbed and mixed with chopped dill and butter. You need to salt, pepper and fill the baskets. Put a little red caviar on top of this delicate filling - and you will get an amazing snack for wine or champagne.

Very expensive and very tasty

Even more saturated and tasty will be tartlets with caviar and butter, if red caviar is supplemented with black. The same 2 boiled eggs are taken and separated into yolk and protein. Only the last one will go into tartlets; if it’s a pity to throw out the yolk, use it in another dish. 100 g of butter is grated, like protein. A tablespoon of lemon juice is introduced into the mass. Baskets are filled with such a mixture, and in no case should it be “trampled down”, it should remain airy. Both varieties of caviar are laid out on top. It turns out especially beautifully if they are adjacent in semicircles. You can decorate with small greens, or you can leave it like that - it's still tasty and beautiful.

Cheese, butter and fish

We have already considered options for fillings with cheese. However, we note that tartlets with cheese and caviar can also be supplemented with fish slices. It is better to take red fish, for example salmon. She, butter and soft cheese are taken in equal amounts. The butter is pre-frozen - so it is easier to grate it. Cheese also needs to be rubbed, only more finely than butter. The fish is cut into very small pieces; dill is also crushed. Everything is folded into one bowl and rubbed into foam in a blender. In its absence, you can scroll through the meat grinder several times, but you will not get the desired airiness with it. In principle, you can limit yourself to such a filling, but it will be even tastier if you put at least a few eggs on top. In any case, a piece of bell pepper (preferably a contrasting one - green or yellow) and a small dill sprig are required on top.

Tartlets with air filling

Smoked salmon filling is no less weightless and tender. To make truly unforgettable tartlets with fish and caviar according to this recipe, fish (100 g), cheese (2 times more), a few sprigs of parsley and ground pepper are again whipped with a blender. In the process of whipping, you need to gradually add lemon juice to the bowl until the sourness reaches the ideal degree for you. Baskets are filled with such a mass, caviar and a sprig of greens are laid out on top.

Tasty and juicy

For those who do not like caviar too much or cannot afford to buy it in normal quality, there are many other recipes that can be used to prepare a delicious dish. It is enough to take sliced salmon, sour cream, cream cheese and butter. The latter for this recipe does not need to be rubbed, just cut into small thin slices and put on the bottom of the basket. The same piece of salmon is laid out on top. The cheese is rubbed with sour cream to a thick, but not dense state, and squeezed into the middle of the tartlet with a syringe. Relish!

Marine filling options

If you ignore the fish and caviar, you can take a closer look at seafood. Shrimp are now widely available. Buy a pound of them (naturally, the weight is already indicated without shells), melt 200 grams of dorblu in a frying pan (you can afford it for a holiday) and sweat sea animals a little in it. Then add a spoon or two of lemon juice to the filling and put 2 crushed garlic cloves. After about five minutes, pour in an incomplete stack of white wine, sweat for a couple more minutes, cover with a lid and let it brew. When thickened, you can fill the baskets.

Alternatively, you can mix 300 g of cooked and chopped shrimp with 4 finely chopped eggs, 100 grams of canned green peas and the same amount of grated cheese. This filling is seasoned with mayonnaise and is very popular at the holiday.

A good "filler" for tartlets is also obtained from crab sticks. To them you need to add half a can of corn, a cucumber, about five hard-boiled eggs and a green onion - all this is designed for 200 g of sticks. Eggs, cucumber and sticks are finely chopped, mixed with corn and finely chopped green onions. Salt and pepper - at your discretion. This salad is dressed with mayonnaise. Take it enough so that all the ingredients are generously lubricated, but there is no excess liquid, as the baskets will get wet from it. You can decorate with both traditional herbs and olives or olives.

Naturally, the listed toppings are only a small fraction of everything that was invented by mankind to be placed in tartlets. And what has not yet been invented, you can compose yourself when you get carried away with the process of preparing festive dishes. So do not be shy, combine seemingly incompatible products - and make sure that the results of your experiments will amaze even the most capricious guests, and you will be known as an inventive and generous hostess.

Planning a holiday menu is a lot of fun, but cold cuts are always a hot topic for discussion with my girlfriends. Indeed, unlike the main course, snacks on the festive table should not only be tasty, but also beautifully decorated. And if we are talking about such a delicacy as red caviar, then there can be no compromises here - an appetizer with red caviar in tartlets is perhaps one of the best ready-made solutions.

Small and neat baskets with caviar look very elegant and festive, and thanks to the variety of fillings for tartlets with red caviar, you can surprise the most demanding gourmets. Today, dear friends, we will prepare baskets with red caviar and cream cheese.

I can assure you that the filling for tartlets with caviar and cream cheese is a very successful combination of ingredients, and it seemed to me much more interesting than the classic combination. In addition, if you are planning an office buffet, then the filling for tartlets with caviar and cream cheese is an ideal snack option, because all the ingredients in the recipe are without pre-cooking.

Ingredients:

  • 50 gr. red caviar
  • 100 gr. cream cheese
  • 10-12 pcs. small sand tartlets

For decoration:

  • lemon
  • cucumber
  • parsley

How to cook tartlets with red caviar and cream cheese:

Before proceeding with filling the tartlets, let's prepare the ingredients for decorating the appetizer: cut the lemon into rings as thin as possible, and cut each circle into four parts. Cucumber cut into very thin rings.

Now it's the turn of the main character of our recipe - red caviar. With a teaspoon, fill the remaining space in the tartlets with caviar. Each basket takes about half a teaspoon of red caviar.

Our appetizer with red caviar in tartlets is almost ready, and we just have to decorate it beautifully. Place a slice of lemon in each basket. Then we cut the cucumber circle to the middle, turn the ends in different directions and put it on a tartlet.

In order for the caviar baskets to have a finished look, it is best to decorate them with a sprig of parsley. An appetizer with red caviar in tartlets should be served immediately, otherwise the caviar may become weathered and the dish will lose all its original charm.

Snacks for the New Year's table are prepared by the housewives with special diligence, because it is these dishes that create the feeling of a holiday, the most magical day of the year. A variety of caviar tartlets are a classic of winter festive feasts. They look incredibly impressive, have an excellent taste, and are easy to prepare. Even in the photo, small edible "baskets" with filling look extremely appetizing!

Habitual sandwich or gourmet tartlet

The original name of this dish comes from the English word "tart" (tart), which means an open pie with a filling. The basis for it is crumbly dough, and inside there can be almost any filling. In our culture, tarts are not very popular on the festive table, but their mini-versions, on the contrary, are found almost everywhere. They are small (about 5-7 cm in diameter) "baskets" made of dough, filled with delicious contents: salad, mousse with red fish, butter cream. The base is always baked separately, the fillings can be very different, salty or sweet. Caviar is one option loved by many, perfect for special occasions.

Why are caviar tartlets so popular?

Small elegant baskets with stuffing are an amazing dish that has a lot of advantages:

  1. They are incredibly tasty and look beautiful on the table.
  2. They are easy to prepare ahead of time.
  3. A minimum of products is consumed, because even a caviar delicacy can only be slightly decorated on top.
  4. Portion dish, it is convenient to serve and serve.
  5. There are various recipes for their preparation, you can take one of them or come up with your own.

Test options for tartlets

The main thing in tartlets with caviar is, of course, the filling, but the dough should also be given attention. Today you can buy ready-made edible molds for red caviar, salads, pates. If it is important for you to save time and effort, then the easiest way is to buy tartlets in the store. Of course, homemade ones will be fresher and, most likely, tastier, but you will have to work hard on them. But the dough can be prepared the one that you and your family like more.

crumbly

The classic version is savory shortbread. Like cakes "Basket", but without sugar. It has a pleasant taste, but not too strong. If you make tartlets with caviar from it, then it is important to bake them small, literally “one bite”. So it will be more convenient for guests to eat them, and festive outfits will definitely not spoil the oil crumbs.

For 20 tartlets you need to take:

  • 2.5 cups flour;
  • 200 gr. butter (softened);
  • 1 large or 2 small eggs;
  • a pinch of salt

All ingredients must be mixed quickly - shortbread dough should not be kneaded for a long time. Then form a ball, wrap in plastic wrap, put in the cold (for 30-60 minutes). Then roll out, cut out 20 blanks and arrange them into shapes. Shortbread dough does not swell during baking, you do not need to put a load on it, but it will not be superfluous to lightly prick the bottom of future tartlets with caviar with a fork.

crispy

Another option for the basis for snack "cups" can be made from puff pastry. It can also be prepared independently, but this process is complex and time-consuming. If so far you have not practiced this, then it is better not to take risks and buy ready-made. In the store, it is easy to find in the department of frozen convenience foods. Ready layers should be slowly thawed at room temperature, then carefully rolled out. With a small recess (for cookies or a regular glass), cut out mugs, which are then placed in portioned baking molds. The basis of puff pastry appetizers, as well as shortbread, must be baked in the form. It is best to take a special one, specifically for tartlets, but if it could not be found, then you can use similar ones. For example, for muffins. If you are looking for something original, then use "shells" for classic madeleine cookies.

Air

In cooking, there is another simple option for making caviar tartlets, which can be baked without a form at all. Choux pastry is perfect for this.

For 30 tartlets you will need:

  • 200-250 gr. flour;
  • 2-3 medium eggs;
  • a pinch of salt;
  • glass of water;
  • 100 gr. butter.

Boil water using a small saucepan or ladle. Then put oil and salt in boiling water, stir. Pour all the flour in small portions, each time carefully kneading the mass. Let the mixture cool slightly, then beat in the eggs (one at a time). Put the finished custard dough into a pastry bag and use it to make 30 small identical balls (about the size of a walnut). Ready-made future tartlets should be completely judged, and then carefully cut into a “basket” (2/3 height) and a “lid” (1/3). It is convenient to fill deep halves with stuffing, since pastries from custard text always have a rather large cavity inside. The cut off top can be beautifully positioned on top by placing it at a slight angle.

Toppings - a field for culinary experiments

Even on the main table itself, caviar tartlets are rarely served without any additives. This seafood greatly benefits if its specific taste is slightly shaded with something soft, tender, “delicate”. Butter or cottage cheese is ideal for this purpose. Also, caviar goes well with a hard-boiled egg, avocado, cucumber. All these delicious products can be placed at the bottom of caviar tartlets, leaving a little for decoration.

Ready-made tartlets with caviar, no matter what recipe you decide to cook them, you definitely need to beautifully serve them on the festive table - this is important. Use fresh herbs for garnish. An appetizer in baskets can be placed on lettuce leaves (necessarily washed and perfectly dried) or among sprigs of parsley, dill or any other aromatic herbs. The main thing is that the greenery is absolutely fresh - then it will be the perfect decor. Before serving, the served dish must be kept in the cold.

You can arrange a holiday for your loved ones without a long standing at the stove. Even a novice hostess will be able to cook tartlets with caviar, it will not require special skills and a lot of time. Agree that a special snack and a glass of champagne is already enough for a chic festive feast.

Microwave, teaspoon, knife, cutting board, beautiful plate.

How to choose the right ingredients

To prepare such dishes, we need fresh and high-quality caviar, so it is important to know the criteria for choosing such a product.

  • It is better to give preference to transparent glass packaging, thanks to which you can visually see the product, evaluate its color and fullness.
  • The eggs must be whole, of the same size and transparent.
  • Such delicacy food is stored for no more than 10 days, so it is important to pay attention to the shelf life. If it is much more, then it contains various preservatives.
  • It is important not to forget that such a delicacy is quite expensive, so if you see such food at a low price, something is clearly wrong with it and you should not buy it.

Step by step recipe

  1. Preheat the tartlets (10 pcs.) to make them a little softer.

  2. Put in them 1 tsp. with a slide of red caviar and level it.

  3. Next, put 1 boiled and peeled shrimp on each side (you will need 20 pieces in total).

  4. Peel half of the avocado, cut into thin slices and put on each future snack.

  5. Dill sprigs (4 pcs.) Wash well, chop finely and sprinkle on top.

  6. We will need lemon juice to give the dish a rich taste, so each appetizer needs to be sprinkled with a small amount of juice (5-6 g for the whole dish will be enough).

Recipe for tartlets with caviar and cream cheese

  • Cooking time: 25 min.
  • Calories per 100 g: 319 kcal.
  • Quantity: 4-5 servings.
  • Kitchen appliances and accessories: oven, baking sheet, baking paper, rolling pin, knife, cutting board, teaspoon, serving utensils.

Ingredients

Step by step cooking

  1. Roll out a sheet of puff pastry (1 pc.) slightly to make it thinner, and use a glass or a small glass to make small circles of dough.

    For such work, you may need a small amount of flour (about 1 tablespoon) so that the rolling process is as comfortable as possible and the dough does not stick to the rolling pin and hands.

  2. From the second sheet it is necessary to cut rings of the same size as the circles. In order to cut holes inside, you can use improvised means, such as a bottle cap or special baking tins.

  3. Cover a baking sheet with baking paper, put circles on it, rings on top of them and send to the oven, heated to 200 °, for 8-9 minutes.

  4. Rinse dill greens (2-3 sprigs) in water, finely chop and mix with cottage cheese or cream cheese (100-150 g). In the resulting baskets, first put 1/3 of a teaspoon of cream or curd cheese with herbs.

  5. Put a small amount of red caviar on top (in general, 80-90 g will be enough).

  6. Put the finished dish on a beautiful plate and you can serve it to the table.
