Technology: step by step

Put salt, ground black pepper into the prepared minced meat and mix thoroughly.

We clean the onion from the husk, wash and cut into very thin half rings.

We rub the cheese on a coarse grater.

Cut the tomatoes into thin slices.

Peel and wash potatoes. We rub the potatoes on a coarse grater.

From minced meat we form small, with a diameter of 8 - 10 cm, cakes.

We put onions on each cake, a little short of the edges of the cake. Place a circle of tomato on top of the onion.

How to bake in the oven

I made minced meat from a piece of lean pork, scrolling the meat once through a meat grinder along with a small onion and a piece of bread soaked in water. Onions can be finely chopped or grated if you use ready-made minced meat and do not want to dirty the meat grinder. I don't add bread to save money. It will absorb the juice released during baking, the minced meat cakes will remain soft and will not lose their juiciness.

Of the spices in this recipe for stacks of minced meat, I added only ground black pepper and salted to taste.

Stir, then beat well, so that the particles of the products stick together better.

Advice.Stuffing for stacks must be made dense, but not steep, otherwise you will not be able to form even cakes.

I will show two options for fillings: from an egg with onions and from mushrooms with onions. Looking ahead, I’ll say that I liked it more with an egg, although when I cooked it, I thought that it would be tastier with mushrooms. Boiled a large egg in advance, cooled, finely chopped. Chopped one onion into small cubes.

Sauteed the onion in a little oil. I did not fry, but only brought it to softness and let the edges turn a little pink.

Large potato tuber peeled, rubbed through a fine grater. The potato darkens quickly to keep the light color, washed under cold water and squeezed. At the same time, the excess starch was removed. Salted, mixed.

Rolled up a round shape. Slightly flattened to make a plump cake. I made a hole in the middle and put a little chopped egg in it.

Advice.Form stacks immediately on the baking sheet so that they do not deform during transfer.

I put a teaspoon of fried onion on top, pressed down a little for better fixation. Salted, peppered (this is best done when all the blanks are on the baking sheet).

I will not describe the preparation of minced meat - it is prepared in exactly the same way as in the recipe above. For the filling, I took fresh champignons, cut them into pieces. Chopped a large onion into small cubes.

Put the onion in a pan with well-heated oil, fry over low heat until soft. Added mushrooms, mixed. Salted, threw a couple of pinches of pepper.

He made the fire stronger, evaporated the liquid. Then reduced, fried for five minutes, until cooked. Cooled down a bit.

I made meat balls the size of a large plum. Gently flattened to make round cakes about 3 cm thick. I made a recess in the middle of each. Put about a teaspoon of mushrooms fried with onions.

I grated the potatoes on a fine grater (I wrote in detail how to prepare them in the recipe above), put them in a slide on the mushroom filling.

He shifted the stacks of minced meat onto a baking sheet to the already formed blanks. Grated cheese on a coarse grater, sprinkled abundantly to form a fluffy hat.

I put it in the oven with a temperature of 180 degrees on an average level. I baked stacks of minced meat in the oven until fully cooked, 30-35 minutes. During this time, the meat cakes will be baked, the potatoes will become soft, the cheese will melt and form a golden crust.

Of course, you need to serve stacks of minced meat under a fur coat hot, while the cheese is soft and the meat is juicy. My opinion is that you don’t need a side dish for this dish, there are already vegetables there. But a juicy salad or sauce, adjika will come in handy. Let's start with the preparation of minced meat. You can buy pork, beef, chicken or mixed, as long as it is of good quality. Add salt, ground black pepper, dry adjika, curry to the minced meat. You can experiment with spices. Mix well so that the spices are evenly distributed throughout the mass and beat off, lifting the minced meat with your hand and throwing it back onto the cutting board. This way, the stuffing will become more dense and will stick together. Send it to the refrigerator for now.




Peel the onion, cut into small pieces. Fry in hot vegetable oil until lightly browned. Cool the fried onion a little.




Use good quality hard cheese. Grate it on a medium or coarse grater, to your taste.






Boil the eggs for 10 minutes. Cool in cold water. Dry with a towel and remove the shell. Grate on a coarse grater.




Peel the potato tubers. Grate on a medium grater. Squeeze out excess juice with your hands. Prepare the potatoes at the very last moment, so that it does not have time to darken.

  • 500 grams of any minced meat;
  • 4 chicken eggs;
  • 2 heads of onions;

  • 0.5 teaspoon of basil;
  • 1 tablespoon of sour cream;

  1. Add chopped garlic to the prepared minced meat (you can finely chop, pass through a press or grate on a fine grater).

  3. Salt minced meat, add dried basil and a tablespoon of sour cream (it will give the meat juiciness). Mix with your hands so that all the meat is evenly soaked with salt and spices. Let's put it aside for a while.

  • Chicken egg (small) - 1 pc.;
  • Breadcrumbs - 4 tbsp. l.;
  • Vegetable oil - 2 tbsp. l.;
  • Seasoning for minced meat - 1 tsp;
  • Ground pepper;
  • Salt.

Cooking time: 50 min.

How to cook stacks of minced meat with grated potatoes and cheese in the oven

1. Wash the chicken fillet, cut into large pieces. Coarsely chop half of the peeled onion.

2. We pass the prepared pieces with onions through a meat grinder.

3. Mix the finished minced chicken in a bowl.

4. Add breadcrumbs, seasoning for minced meat, salt (2 pinches), ground pepper and break the egg. If you use a large egg, then the mixture may turn out to be watery, so take a small egg or add more crackers to the mixture.

5. We mix the workpiece for stacks well, beating it off. We take the blank in the palm of our hand and hit the bottom of the bowl with force 3-4 times. So moisture is absorbed into the fibers of the meat, and the dish will turn out juicy. Set the oven temperature to 180 degrees.

6. Cut the rest of the onion not very finely and send it to the oil. Cook over medium heat, stirring occasionally, until lightly browned. We put it on a plate.

7. Roll up a ball from half of the prepared minced meat and put it in the middle of a piece of foil.

8. We form from it a not very thin cake with sides (basket).

9. We turn the edges of the foil to the basket. So we make the second blank and put the fried onion on the bottom (in parts).

10. Coarsely rub the peeled potatoes, salt and mix. We spread the chopped potatoes on the onion in parts and sprinkle with ground pepper. We transfer the baskets with potatoes to a baking sheet (you can immediately form them on a baking sheet), put in the oven for 25-30 minutes, until the grated potatoes become soft.

11. Coarsely rub the cheese. We take out almost ready baskets, sprinkle with prepared cheese on top and bake for another 4-5 minutes until the cheese is melted.

12. Transfer the most delicious fragrant stacks in foil to plates and immediately serve with a light salad of fresh vegetables. The foil can be removed and the dish simply served on plates.

Cooking tips:

  • Hard cheese can be used any to taste or replaced with Mozzarella or Suluguni cheese. Suluguni melts perfectly and adds a special flavor to the dish.
  • To diversify the dish, complement the chopped potatoes with fried mushrooms and finely chopped tomatoes.
  • In this way, you can cook a dish of beef, turkey, pork or mixed minced meat.
  • To make a brown cap on the stacks, grate the cheese on a fine grater, mix with mayonnaise (1 tbsp.), Spread on the finished potatoes and bake until brown.
