Cake "Log" enjoys well-deserved popularity among lovers of homemade desserts. One of its advantages is an uncomplicated cooking process that even those who are just starting to comprehend the culinary art will be able to do.
Classic cake "Poleno" from puff pastry with condensed milk
"Log", cooked according to the classic recipe, tastes like "Napoleon". It is made from puff pastry - homemade or purchased in a store. If the dough was stored in the freezer, it is thawed in advance.
For the cake prepare the following ingredients:
- 450 g puff pastry (preferably yeast-free);
- 300 g of condensed milk;
- 300 g butter.
Step-by-step instruction:
- Roll out the dough so that you get a rectangle no more than 5 mm thick.
- It is cut into strips about 1.5 cm wide.
- The baking sheet is covered with baking paper, the strips are placed at a small distance from each other and sent to the oven (200-220 ° C). After 10-15 min. puff pastry sticks are ready.
- The baking sheet is taken out of the oven to cool the strips.
- Go to the preparation of the cream. Butter is whipped, condensed milk is added to it and again everything is well mixed until a homogeneous consistency.
- Place cling film on the table in 2 layers. A small layer of cream is distributed over it so that several puff sticks fit on it. There should be a small gap between the sticks.
- The cream is again laid out on the strips. And so several more layers are formed.
- The result should be a cake in the form of a log, completely covered with cream on all sides.
- It is tightly wrapped in a film and placed in the refrigerator for 10-12 hours.
The easiest way to decorate a cake is to chop up a few puff pastry sticks and sprinkle the crumbs over the dessert after it's taken out of the fridge.
You can decorate a sweet dish in a more original way:
- grated chocolate;
- chopped nuts;
- shavings of coconut;
- berries, pieces of fruit.
Simplified cookie recipe
If you don’t want to bake, you can simplify the task by making a log cake from cookies according to an easy recipe.
For cooking you need:
- 400 g of ordinary shortbread cookies ("Sugar", "Strawberry", "Jubilee");
- 100 g butter;
- 1 can of condensed milk;
- 2 tbsp. l. cocoa powder;
- 100 g walnuts.
For decoration:
- 1 egg white;
- 1/3 cup powdered sugar (in the absence of an ingredient, take sugar).
Step-by-step instruction:
- Cookies are crushed into crumbs or into larger pieces, as you like.
- Chopped nuts are added to the liver.
- Cocoa is added to the resulting mixture.
- Then put softened butter (it is taken out of the refrigerator in advance).
- Lastly, condensed milk is poured into the mixture.
- All components are thoroughly mixed until a homogeneous mass.
- The resulting dense mixture is laid out on a dish, giving it the shape of a log.
- Beat egg white with powdered sugar until thick.
- Cover the cake with the prepared icing.
- Clean "Log" in the refrigerator for 1 hour.
From biscuit dough
Also, the log cake can be made from a biscuit base.
For the test take:
- 125 g sugar;
- 100 g flour;
- 4 eggs;
- 1 tsp baking powder;
- 60 g butter;
- a pinch of salt;
- 1 st. l. warm water.
For layering and decoration you need:
- 200 g of powdered sugar;
- 150 g soft butter;
- 100 g of dark chocolate.
First prepare the dough:
- Proteins are separated from yolks.
- Pour sugar into a container with yolks, beat this mixture with a mixer. The mass should brighten and become lush.
- Softened butter is added to the yolks and sugar, mixed.
- Pour flour, baking powder and warm water into the mixture - and again beat everything thoroughly.
- Go to the proteins: add a pinch of salt to them and beat until fluffy (the mass should turn white).
- Whipped proteins are transferred to a bowl with dough, mix well.
- The baking sheet is covered with baking paper, the dough is laid out on it, distributing it evenly.
- The biscuit is kept in the oven at 180°C for 10-12 minutes.
- After removing from the oven, the dough is allowed to cool for 3 minutes, after which they begin to carefully roll it into a roll (together with baking paper).
The biscuit is left rolled up and the cream begins to be prepared:
- Bitter chocolate is melted in a water bath.
- Beat the butter, adding powdered sugar to it in small portions.
- Pour the melted chocolate into the butter-sugar mixture and continue beating until smooth.
Divide the cream so that there is enough for the layer and for the top coat.
The biscuit is unrolled, evenly covered with a layer of chocolate cream. Again roll up into a roll (already without paper). A thick layer of cream is applied on top of the cake, decorated if desired, allowed to stand for a while.
Creamy Log Cake
"Cream log" is a delicious delicacy that is prepared without baking. Its only drawback is that not all ingredients may be at hand.
For the cake you will need:
- 400 g of whole milk;
- 70 g butter;
- 100 g hazelnuts;
- 400 g of sugar;
- 1 st. l. molasses;
- 70 g of powdered sugar.
Step-by-step instruction:
- The nuts are dried a little in the oven, after which they are crushed into crumbs, having previously cleaned them.
- Mix milk and sugar in a saucepan.
- The mixture is put to boil, from time to time it is stirred. The color of the mass should become darker.
- After about 20-25 min. add molasses to the pot. Cook for about 10 more minutes.
- The resulting fudge is removed from the fire, cooled slightly. Add butter to it and start beating. The result should be a light brown mass. A small amount (about 100 g) can be set aside to decorate the cake.
- Add nuts and powdered sugar to the fondant, mix well.
- You can form a cake on a film or place it in a form previously covered with parchment. Keep in the refrigerator for 4 hours.
For decoration you should take:
- 100 g of fudge;
- 40 g soft butter.
The butter is whipped with fudge, the cake is decorated with the finished cream. You can use nuts for decoration.
Dessert with coffee flavor
The usual taste of "Log" can be slightly diversified by adding coffee to the cream. Puff pastry sticks are baked in the same way as indicated in the classic recipe.
For coffee cream you will need:
- 180 g soft butter;
- 2 tsp ground coffee;
- 200-250 ml of condensed milk.
All components are whipped, after which a cake is formed from sticks and cream. Puff "Log" with coffee flavor is wrapped in cling film and sent to a cold place for 10 hours.
How to cook "Birch Log"
Cake "Birch log" - the original variation of the dessert, which is considered relatively easy to prepare.
The following components are taken for the test:
- 3 eggs;
- 2/3 cup sugar;
- 3 cups flour;
- 1 tsp soda;
- 2 tbsp. l. honey.
For cream you need to take:
- 2/3 cup sugar;
- 300 g curd mass;
- 3-3.5 cups of sour cream.
For decoration: small chocolate strips or grated chocolate.
Cooking steps:
- Add sugar and honey to the eggs, mix well.
- Then add soda and flour, knead the elastic dough.
- The dough is divided into 3 equal parts, rolled into a rectangle, cut into strips no more than 2 cm wide (you can do this right on the baking sheet).
- Place baking paper on a baking sheet. The dough is laid out on it: they try not to move the strips close to each other so that they do not stick together.
- Keep in the oven for about 6 minutes. at 220°C. The dough should be browned.
- The tray is taken out of the oven. If necessary, finished sticks can be shortened by cutting off their edges.
- Then prepare the cream by whipping sour cream with sugar. The curd mass is added to the mixture, mixed until thick. The cream should have such a consistency that it can be poured.
- The cake can be formed on cling film or foil (or use 2 types of wrapper at once). A little cream is poured onto the film, sticks are placed on top, cream is again on them - and so on until all the ingredients are used. The sticks should be completely covered with cream.
- The delicacy is shaped like a log, wrapped in foil or film. Put in a cold place for 8 hours. Once removed from the refrigerator, decorate with long pieces of chocolate or apply stripes with chocolate chips.
The Puff Log Cake is so popular that, like its older brother, it has become a classic. If you cook it with custard or butter cream with condensed milk, it will really taste like a Napoleon, but in a more original presentation - in the form of a rotten log sprinkled with puff crumbs.

Cooking a log cake from puff pastry
Puff pastry, thawed in advance, I roll out to a thickness of about 3-4 mm and cut into thin and long strips. The thinner the ribbons, the better the cake will soak. I spread the blanks on a sheet of parchment paper (dry) and send it to a preheated oven.
I bake at 200 degrees for 20 minutes. The result is a whole slide of puff sticks.
I spread them on a large piece of cling film. I trim the edges - the resulting trimmings will go to sprinkle the cake.
I am preparing a cream of condensed milk, butter and cream. To do this, I beat well-chilled 33% cream with a mixer until stable peaks so that they keep their shape. In a separate container, I combine butter softened at room temperature and condensed milk - here the goal is not to beat the products, you just need to mix them until smooth. Add whipped cream to them and again gently mix with a spatula. Lubricate puff sticks with the resulting cream.
I spread the next portion of baking on top and again smear with cream. Then I lift the edges of the film, thus forming a roll.
I press the product tightly with my hands so that it holds its shape better. Top with the remaining cream and sprinkle with crumbs from scraps.
I leave it for 1 hour at room temperature for impregnation, after which I put it in the refrigerator for 6 hours (or even better at night) so that the cream cools and hardens. Cake "Log" from puff pastry left to cut into portions and you can make tea. Bon appetit!
On a note
- The recipe uses cream with the addition of whipped cream. It soaks puff pastry better than classic buttercream. If you still decide to remove the cream, then first beat the softened butter, and then gradually add the condensed milk into it, without stopping the mixer. For flavor, you can add a spoonful of cognac to the resulting butter cream, it will give a pleasant nutty flavor to the cake.
- If the puff pastry is too hard, then the sticks baked from it can be soaked in sweet syrup or tea, then the cream will better soak the layers.
- If you want to achieve even greater similarity with Napoleon, then cook for the cake.

How to make chocolate loaf dough
- We start with the chocolate cake dough. Beat the eggs, adding sugar and vanilla sugar. We work with a mixer for at least 10 minutes, we achieve a noticeable increase in the volume of the egg mass and whitening.
- In a separate bowl, mix flour with cocoa powder and baking powder. After sifting, add the mixture of dry ingredients to the eggs in parts. Gently mix from bottom to top, bringing the dough to the most homogeneous consistency and uniform coloring in chocolate color.
- Pour the viscous mixture onto a baking sheet lined with parchment. We send the workpiece to a hot oven and bake for about 10-15 minutes. The optimum temperature is 200 degrees. It is important not to overdry the cake, otherwise it may break when folding!
How to make chocolate loaf cream
- In the meantime, let's get on with the cream. We rub the zest of a lemon and one orange on a coarse grater (we do not touch the white bitter layer). Next, we squeeze juice from citrus fruits, for example, using a manual juicer. We need to get 250 ml of freshly squeezed juice. If two oranges and one lemon were not enough for this, the serving of citrus fruits should be increased.
- Mix the resulting juice with zest, add eggs. Thoroughly mix the mixture, and then leave for 10-15 minutes, allowing the juice to be saturated with the aroma of the zest.
- We filter the liquid into the pan through a fine sieve (the zest is no longer useful to us - we used it only for flavoring). Add sugar, starch to the pan, mix vigorously, and then place the juice over moderate heat.
- Bring the cream almost to a boil, and then reduce the heat to a minimum. Cook, stirring, until the mass thickens considerably. Active boiling of the mass must not be allowed, otherwise you can get an unpleasant “surprise” in the form of curdled eggs! Ready cream, removing from heat, cool.
- Beat the softened butter with a mixer. Gradually add the orange cream, continuing to beat the mass. As a result, we get a homogeneous cream, which we will use for the filling.
How to make a Christmas roll cake
- Spread the freshly baked chocolate cake on a kitchen towel, removing the parchment. While the biscuit has not had time to cool, carefully roll it into a roll with a towel and leave to cool completely. For impregnation, pour sugar with boiling water, mix and cool. We unfold the cooled roll, soak it abundantly with sweet syrup.
- We coat the cake with citrus cream. Roll up again (this time without a towel). Small cracks may appear on the surface of the biscuit, but there is nothing to worry about, because in the end everything will be hidden under the glaze! We remove the roll in the refrigerator for 2-3 hours to fix the shape. After the specified time, we get our almost finished culinary product. To imitate branches, cut off two small pieces from the roll, apply them on the sides.
- Ready for frosting. Break the chocolate bar into small pieces, add butter.
- Melt the mixture until smooth in a "water bath".
- We cover the biscuit roll with chocolate mass, leveling the icing with a culinary spatula. We “draw” a pattern with a fork, trying to make it look like a tree bark.
- We make out the "log" in any way. You can use cranberries, nuts, waffle decorations, powdered sugar, and more. The main thing here is compliance with the Christmas theme. We put the finished roll cake in the refrigerator overnight. Serve at the festive table with tea / coffee.
