Cake pops are small chocolate-coated cakes on a stick that are very similar in shape to lollipops. More recently, cake pops originated in America and have become very popular around the world. The basis for making cake pops is biscuit crumbs, you can also take any other types of pastries.

To make Cake Pops you will need:
- ready-made biscuit cakes - 2 pcs.;
- butter - 100 gr.;
- condensed milk - 2-3 tablespoons;
- white chocolate - 2 bars;
- red food coloring or beetroot juice;
- sweets for decoration;
- sticks or wooden skewers;
- a piece of foam.

The new year is coming soon and in general you have already thought of everything, only sweets are left, what New Year's desserts to choose? After all, there will be children! Aren't adults children on such a magical night? And if so, then everyone is waiting for sweet and surprise.

What do you need to prepare New Year's desserts?

Firstly, to prepare New Year's desserts, you will need food coloring - it is simply impossible to do without them in decorating New Year's desserts. If you have a prejudice against food coloring, which can be purchased at the grocery store, use a set of natural: natural juices: beetroot, raspberry juice - scarlet, carrot and orange - orange, spinach juice - green and so on. The “Christmas Log” cake fits perfectly into the New Year theme and already with its appearance will remind you of a hot fire in a clearing from the fairy tale “12 months”, and preparing this festive dessert is simple, fast with a full guarantee that everyone will like it with a bang!

Dough Ingredients:

  • chicken egg - 3 pieces;
  • butter - 50 grams;
  • granulated sugar - 2/3 cup;
  • wheat flour - about 3 cups;
  • natural honey - 3 tablespoons;
  • baking soda slaked with natural lemon juice.

Cream Ingredients:

  • fat sour cream - 700 milliliters;
  • granulated sugar - 1 glass;
  • chocolate - 50 grams.

Dessert "Christmas log" according to the original New Year's recipe is prepared as follows:

  1. Dissolve the butter and add it to the eggs, honey, sugar, salt and slaked soda mixed in a separate suitable container. Gradually mixing in the sifted flour, knead the elastic dough.
  2. Roll out the finished dough over a baking sheet area 0.5 cm thick and cut into strips 1.0-1.5 cm wide. The baking sheet is covered with baking paper and all the strips are laid out on it so that they do not stick together.
  3. The strips are baked in an oven preheated to 200 C for 1-12 minutes. You should not leave baking - it will quickly burn out outside the specified time.
  4. While the strips are baking, prepare the cream by whipping sour cream with sugar until fluffy foam. If there was no fatty sour cream on the farm, you can get by with cream with the addition of powder to strengthen the sour cream cream.
  5. The strips are ready, removed from the oven and cooled. Lay several of them in parallel on a sheet of foil, pour over the cream, pour the next ones on top and pour over the cream, spread everything in the same way, spreading the cream layer by layer. Leave a small amount of it - 2-3 tablespoons to improve the shape of the cake after cooling.
  6. At the end of the storage of the “poles”, pick up the edges of the foil and, giving the strips a rounded shape of an oblong log, place in the refrigerator, eliminating the freezing of the product, for 7-10 hours.
  7. After the specified time has passed, free the formed “Christmas Log” from the foil, transfer to a serving dish of a suitable shape. With the remaining cream, “pat up” the irregularities of the “log” and apply longitudinal strips and “knots” with melted chocolate, imitating the look of a natural log.

2. The original recipe for New Year's "snowmen" from white truffles with coconut cream

Of course, according to this recipe, it is easier to prepare delicious and snowball-like candies in the form of balls, but what a joyful decor for a festively served table will be funny snowmen made of them, with the help of characteristic details turned into New Year's toys that will appeal to both children and adults.

If it will be troublesome for you to build such snowmen, then you can make a couple or three of them, and the rest of the truffle balls, which are very tasty and picturesque, if you roll them in coconut flakes, in almond petals or in non-melting powdered sugar, spread them around on them on a colorful elegant napkin or on a dish with a New Year's print.

Ingredients:

  • white chocolate premium -250 grams;
  • cream 33% - 50 milliliters;
  • cognac or liquor - 1 tablespoon;
  • coconut flakes, powdered sugar, non-melting powdered sugar balls, almond flour;
  • jelly candies, mastic and sugar decorating material - for decoration.

New Year's "snowmen" from white truffles with coconut cream according to the original recipe are prepared as follows:

  1. Melt white chocolate broken into pieces in a water bath. Add warmed cream, alcohol into it and stir until smooth with a shiny, even surface. Cover the container with the resulting creamy chocolate mass with cling film and place in the refrigerator, excluding freezing, for at least 5 hours - preferably at night.
  2. After the allotted time, pick up chocolate paste with a dessert spoon, quickly roll balls out of it so that a little more than a walnut does not melt in your hands and roll in powdered sugar. Balls from which snowmen will definitely be built, one - the top one can be made smaller, and the second - the bottom one - a little more.
  3. Using wooden toothpicks, pick up truffle balls and fold them in the form of snowmen, but simply connect the balls with them for stability.

You can arrange this sweet composition on a flat dish covered with a paper napkin in blue snowflakes.

3. New Year's dessert according to the homemade recipe "Fortune Cookies"

You can’t call such an original idea, but in each individual case everything happens as if for the first time, with its own invention and zest. For those who don’t know, we remind you: before the cookies are formed, funny notes-assignments or a win-win lottery number for a concert number are prepared, which are printed on a small strip of paper, folded in half and laid in a still hot cookie. As an option, give such cookies to each guest at parting with a wish note. Ingredients:

  • table salt - 1/3 teaspoon.

Prepare fortune cookies according to a homemade New Year's recipe as follows:

All further actions are swift and require caution in working with very hot cookies, which must be quickly removed, quickly put in the middle, like in a dumpling, a note folded in half, connect the edges of the cookie and place it hot in a narrow glass so that this "varenichka" in this form and froze. Cooled cookies will not be plastic, although they will remain edible. If this happens, then they can be placed one on top of the other with a creamy smear.

4. Homemade New Year's Dessert Recipe - French Macaroons

The recipe for New Year's cakes with the unusual name of macaroons is not an easy task for those who undertake it for the first time. For this reason, you should not start them right before the holiday, but take a trial step so that the almond bases with the “skirt” turn out to be properly even. But, if everything goes well, red cakes with bright green cream and white decoration on top will flaunt on the festive table. These cakes have an advantageous property that will allow them to be prepared in advance - they are well stored in tightly closed containers in the freezer. Just take it out, let the temperature even out - and these are beautiful New Year's desserts on the table!

Dough Ingredients:

  • almond flour - 150 grams;
  • powdered sugar - 150 grams;
  • granulated sugar - 150 grams;
  • egg whites - 110 grams;
  • drinking water - 37 grams;
  • food coloring red - on the tip of the knife.

Filling Ingredients:

  • pistachio paste - 30 grams;
  • fat cream - 70 milliliters;
  • white chocolate - 150 grams;
  • balls of non-melting powdered sugar;
  • green food coloring - minimally.

According to a homemade recipe, New Year's macaroons are prepared as follows:

  1. You should start with a creamy ganache filling, the ripening period of which is 12 hours.
  2. Break the chocolate into pieces and dip them into the cream, brought to a boil and removed from the heat. Stir the mass until smooth and uniform. After that, add pistachio paste, mix and beat until emulsified.
  3. The resulting ganache (cream paste) will already have a greenish grassy tint to stop at, but if you still want a richer green, add a little green food coloring.
  4. Cover the cup with ganache with cling film until surface contact with it, in order to avoid the formation of a film and place in the refrigerator for 8-12 hours without freezing. Beat the ganache with a mixer before using.
  5. The whites of chicken eggs separated from the yolks for the test should stand in the refrigerator for at least 1 day, and to be added to the dough, heat to room temperature.
  6. Mix almond flour with powdered sugar and sift.
  7. In a bowl with sifted flour, add half the proteins - 55 grams and mix with a spoon.
  8. Having dissolved sugar in water, boil the syrup: after boiling, boil it for 5 minutes until it reaches 118 degrees. In the absence of a special thermometer, check its caramelism with your fingers: drop it on the skin of your finger, press it with the second and gradually open it - it stretches with a long thread - it's ready; torn - cook more; breaks - overcooked.
  9. Whip the remaining egg whites while the syrup is boiling.
  10. Pour the hot syrup in a thin stream while beating with a mixer into whipped proteins, add red dye and continue to beat until the whole mass becomes uniform, smooth and shiny.
  11. Add the red whipped squirrels to the bowl with the dough and with a plastic spatula carefully knead the dough until the mass is homogeneous, which should become even, glossy, but not runny.
  12. Line a baking sheet with parchment paper. Put the finished dough into a pastry bag, from which release even portions of the dough onto a sheet of paper covering the baking sheet to make the same circles.
  13. Once all the dough has been used, holding the baking sheet evenly with both hands, tap it well on the table several times to release excess air from the dough and trim the circles.
  14. Leave the baking sheet with the blanks to dry for 20-30 minutes at room temperature. After the specified time has elapsed, put a baking sheet in the oven preheated to 160 C and bake the macaroons for 15-18 minutes.
  15. Ready-made cookies are easily removed from the paper while hot. Transfer to a dry and level surface until completely cool.
  16. While the workpieces are cooling, beat the chilled ganache for the last time, put it in a pastry bag. Place ganache in even portions on the cooled macaroon circles, a circle of cookies on it, slightly pressing down on it from above. Ganache again - and the last layer of cookies. You will get 3 cookies and 2 layers of ganache. Ideally - macaroons of the same height.
  17. Pour the balls of powdered sugar into a separate plate and roll each macaroon sideways on it so that the white balls of powdered sugar stick to the cream.

Put the finished cakes in a suitable closed container and put them in the refrigerator for 1 day, excluding freezing, and take them out of it completely formed to taste half an hour before serving. You can decorate French macaroons with ready-made New Year's decors, in the assortment presented in the country's supermarkets.
