Sometimes rice or buckwheat flour is used, and other ingredients are added to the dough, such as tomato paste, spinach, eggs. The key word here is flour. That is, the properties of pasta depend on the quality of the flour from which they are made. And we already know that flour is different.

In accordance with domestic GOST, pasta is divided into three groups:

  • group A - pasta made from durum wheat flour of the highest, first and second grades;
  • group B - pasta made from soft vitreous wheat flour of the highest and first grades;
  • group B - pasta made from wheat flour of the highest and first grades.

Durum wheat contains more gluten and less starch than soft wheat. Therefore, group A pasta has a lower glycemic index. In a number of countries, for example in Italy, it is allowed to produce pasta exclusively from durum wheat (and you can’t say that Italians are full).

As part of the right pasta, there is practically no fat. According to Russian standards, 100 g of dry pasta should contain 10.4–12.3 g of protein, 1.1–2.1 g of fat, 64.5–71.5 g of carbohydrates, and their energy value is 327–351 kcal . Don't be afraid of these numbers. In fact, pasta is boiled soft, and the daily norm is an average of 50–60 g of dry pasta (150–180 g of finished pasta). Thus, we eat a portion of a rather impressive volume, but we get no more than 175 kcal.

Durum pasta has the least calories. They are rich in healthy sugars that help maintain a constant level of glucose in the blood. Thanks to this, we are able, without suffering from bouts of hunger, to increase the intervals between meals. Pasta contains B vitamins, necessary for brain function, as well as for the beauty of skin and hair. Let's not forget about fiber, which helps the digestive system process food and get rid of all the excess.

There are very few healthy carbohydrates and fiber in soft wheat products - almost empty calories. However, you should not blame flour for everything.

A 100-gram portion of any ready-made pasta usually contains not 175 kcal, but much more. Where does the surplus come from? From all kinds of additives, gravy, sauces. We sometimes do not take them into account, but butter, cheese, mayonnaise, with which we willingly flavor pasta, can turn out to be more nutritious than the main dish.

We eat pasta without harming the figure:

  1. Choose group A pasta (made from durum wheat). When in doubt, take Italian-made products.
  2. Avoid instant noodles. Choose varieties of pasta that cook for at least eight minutes.
  3. Cook the pasta so that it remains slightly undercooked. In Russia, this option is not very common: one gets the feeling that the dish is half-baked. But in Italy, cooking is considered standard to the degree of al dente, when the middle of the pasta remains firm.
  4. Give preference to long products (spaghetti).
  5. Replace butter, mayonnaise, cream sauce with light gravy. Suitable sauces are bolognese, tomato with seafood, vegetable.

How many calories are in boiled pasta?

One of the most common methods of heat treatment and cooking of pasta is their boiling.

The calorie content of boiled pasta, however, like all flour products, is quite high and amounts to:

Pasta baked with vegetables and tofu:

Products:

  • pasta "bows" - 250 g.
  • eggplant - 1 pc.
  • zucchini - 2 pcs.
  • tofu cheese - 200 g
  • sweet pepper - 1 pc.
  • onion - 1 pc.
  • garlic - 1 clove
  • vegetable broth - 2/3 cup
  • tomatoes - 3 pcs.
  • spicy herbs - 1 tbsp. spoon
  • salt, pepper to taste
  • dark soy sauce - 3 tbsp. spoons

Cooking method:

Wash the eggplant and cut into cubes 2.5 × 2.5 cm. Put together with coarsely chopped zucchini in a colander, sprinkle with salt and let it brew for 30 minutes.

Tofu cut into cubes, mix with soy sauce and half a clove of minced garlic. Cover and marinate for 30 minutes. Peel the peppers and cut into rings, mix with finely chopped onions and the remaining garlic, put everything in a saucepan and pour over the broth. Bring to a boil, cover and simmer for 5 minutes until vegetables soften.

Remove the lid and cook again until all the broth has boiled away. Remove the skin, seeds from the tomatoes and cut into four parts, mix with herbs and simmer for 3 minutes, then add the chopped eggplant and zucchini and cook until the vegetables are soft. Salt, pepper to taste.

Boil pasta until done according to package instructions, mix with vegetables and tofu. Put the mixture on a refractory dish and bake under the grill until a crispy crust forms.

Tip: instead of tofu, you can use low-fat Adyghe type cheese.

Italian pasta:

Ingredients:

3-4 tomatoes, 200 g pasta, 200 g fresh green peas, 150 ml cream, 50 g cheese, 1 egg, 2 garlic cloves, 1 tbsp. l. vegetable oil, ½ bunch of basil greens, pepper, salt.

Cooking method:

Boil pasta in salted water, drain in a colander.

Wash the tomatoes, pour over boiling water, remove the skin and chop.

Wash the basil greens, finely chop. Blanch green peas in salted water for 2-4 minutes, drain on a sieve.

Cheese grate on a coarse grater. Peel the garlic, wash, finely chop. Mix pasta with tomatoes and green peas, put in a baking dish, greased with vegetable oil.

Pour the egg, beaten with cream, salt and pepper, sprinkle with cheese and put in the oven preheated to 20 ° C for 15 minutes.

Sprinkle the finished casserole with garlic and basil.
