The other day I had the opportunity to purchase the back part of a duck. I sat, thought and wondered how to make something like this out of it. Without hesitation, I remembered what its meat goes well with and decided to stew it with cabbage. This recipe is very simple and at the same time very tasty - I recommend everyone to try it.

Wash the duck thoroughly and remove any remaining feathers, if any.

Cut the duck into small pieces. At the same time, obviously eliminate excess fat, but without fanaticism, since it will still be useful to us.

I like stewing duck best in a cauldron, although a duck pan or even a stainless steel pan will do. So, pour a little vegetable oil into the bottom of the cauldron and lay out the duck pieces. Fry over medium heat for 7-8 minutes, then turn/stir and cook for another 5 minutes. Turn off the heat and drain almost all the fat that has formed in the cauldron.

Meanwhile, grate the carrots on a medium grater and cut the onion into quarter rings.

Add carrots and onions to the meat. Stir and continue frying over medium heat for about 5-7 minutes.

Add 0.5 cups of water. And also black peppercorns, a teaspoon of basil, bay leaf and barberry. Stir, cover and simmer for about 10 minutes.

Shred the white cabbage and lightly knead it with your hands. Add it to a common cauldron, season with 1.5 teaspoons of salt and pour in 300 ml of water. Cover with a lid and leave to simmer for 20 minutes. When the cabbage becomes more or less soft, mix it with the remaining ingredients.

Add a tablespoon of tomato paste to the prepared stewed cabbage with duck. Stir and cook for literally another 3-5 minutes.

You can serve this dish on its own, or prepare a side dish for it: mashed potatoes or boiled buckwheat. Very tasty and healthy for adults and children!

I got a multicooker, so most often I cook in it.

So I decided to stew the cabbage in a slow cooker too. Moreover, I chose the right meat - duck fillet. When stewed, it turns out soft and juicy, and the fat, which is rendered during cooking, perfectly saturates the stewed cabbage, giving it an extraordinary taste.

Wash the duck fillet. To make it easier to cut, do not defrost it completely. Cut into slices: let each piece have both pulp and skin with fat.

Cut the onion into half rings or strips.


Chop the cabbage thinly.


Cut the peeled carrots into large strips.


Set the multicooker to the “Frying” mode. If this is not the case, select the “Baking” mode. Plug in and let the bowl heat up.

Place the pieces of meat into a heated dry bowl.

Wait until the fat begins to render. Stir occasionally.


When the duck is slightly fried, add the onion.

Stir. Do not let the duck brown or it will be dry. Sauté the onion until soft.


Add carrots and stir.


Fry for 5 minutes.


Pour hot water. It should just cover the contents of the bowl.


Close the multicooker, switch to the “Stew” mode, simmer until the duck is tender – about 30 minutes. Salt the broth.

Put in the cabbage.

Its volume should not exceed the maximum mark. Switch back to the “Roast” program. This must be done so that, firstly, the contents of the pan are brought to a boil faster, and secondly, lightly fried cabbage turns out much tastier than simply boiled cabbage.

Cook with the lid closed for 2-3 minutes. During this time, the cabbage will soften and you can easily stir it.


Add paprika, coriander, sugar, vinegar and mix again.

Now you can switch back to the “Stew” mode and bring the cabbage to readiness.


Of course, you don’t have to worry about switching programs and cook only in the stewing mode. But believe me, as I suggest, it turns out much tastier!

Cabbage stewed with meat is ready!

Duck stewed with onions.

Duck - 500 g, pork fat - 100 g, white table wine - 2 tbsp. spoons, onions (small) - 20 pcs., flour - 2 teaspoons. spoons, sugar - 0.5 teaspoon. spoons, ground black pepper, salt.

Sprinkle the processed carcass with salt and pepper, fry until golden brown, add hot water, wine and simmer, turning occasionally. During stewing, add peeled onions, a mixture of sautéed flour and sugar, diluted with water. Place the finished duck on a plate. Garnish with onions and pour over the sauce.

Duck stewed with onion seedlings.

Duck - 1 kg, fat - 100 g, water - 3 cups, wine - 0.5 cups, onion seedlings - 30-40 pcs., flour - 1 tbsp. spoon, oil - 2 tbsp. spoons, sugar - 1 teaspoon. spoon, salt, pepper.

Rinse the prepared duck well, add salt, sprinkle with black pepper, fry in fat until golden brown, then add hot water and wine and simmer for 30 minutes. After this, put the onion in the pan. Place the duck on a platter, place the onions around it and pour the sauce over it.

Goose meat - 500 g, fat - 5 tbsp. spoons, new potatoes - 750 g, water - 0.5 cups, fresh tomatoes - 2 pcs., peppercorns - 10 - 15 pcs., bay leaf, salt, ground pepper.

Salt the goose meat, sprinkle with black pepper, fry in fat, and then simmer over low heat, adding water from time to time, until the meat is soft. Peeled small young potatoes with salt and lightly simmer in fat. Pour in 0.5 cups of hot water, add peeled and grated tomatoes, peppercorns, bay leaves and simmer over low heat until tender, being careful not to overcook the potatoes.

Duck stewed with cabbage (pressure cooker recipe).

Duck - 1 kg, cabbage - 1 kg, rendered lard or margarine - 100 g, tomato paste - 2 tbsp. spoons, salt, black pepper.

Cut the processed duck into portions, fry in a frying pan until golden brown, transfer to a pressure cooker. Wash the cabbage, chop it, fry it, put it in a pressure cooker, add fat, tomato paste diluted in 1/4 cup of water, salt, add 10-15 black peppercorns. Bring to a boil in a covered pressure cooker over high heat, reduce heat and simmer for another 30 minutes. Instead of fresh cabbage, you can use soaked and well-fried sauerkraut.
