If you haven’t lost weight yet, then my recipe today is for you. Since the weather doesn’t allow me to show you the best diet ice cream recipes of this year, let’s bake for now. But we will bake something special: shortcrust pastry with cottage cheese without a gram of butter! So, there is still hope for those who have not lost weight.

You are unlikely to find a recipe for shortcrust pastry anywhere else, consisting of 100% cottage cheese. That is, besides cottage cheese, there are, of course, other ingredients, but this recipe is one of the rare cases when butter is not added at all. The only fat here is cottage cheese 9% fat. Well, if we’re really being picky, there are also a few grams of fat in the egg yolk. Oh God!

In any case, I advise you to make sure that your cottage cheese is thicker. At least don’t take the completely low-fat one.

I made individual tarts from this dough, blind baked them empty, then sprinkled them with chopped nuts (to prevent the dough from getting soggy), lined them with fruit, sprinkled them with brown sugar and baked them again. It turned out very summery, and the taste was just super good. The presence of cottage cheese here, of course, is completely unnoticed.

Since the curd dough is prepared absolutely without adding oil, of course, after baking it will not be as crumbly and crispy as with oil. The finished cottage cheese base turns out to be quite soft, but elastic, and it holds its shape perfectly. I think this is a great lighter alternative to the classic and an ideal base for fruit tarts in the summer.

The cottage cheese dough turns out to be very light and delicate, just what you need for summer open-air fruit pies.

This recipe is suitable for a mold with a diameter of 28 cm.

  • flour - 300 gr.
  • salt - 2 gr.
  • sugar - 150 gr.
  • cottage cheese, at least 9% - 150 gr.
  • egg yolks - 60 gr. (≈3 pcs.)
  • egg whites - 25 gr. (≈1 pcs.)

In this case, the cottage cheese should be dry. If yours is not dry, filter it under pressure in the refrigerator for several hours, or better yet overnight.

Cooking method:


Before baking, the finished cottage cheese shortcrust pastry can be stored in the refrigerator, wrapped in cling film, for no more than 2 days.
