  • Don't cut the meat. It will dry out when baked. Medium-sized pieces or 1.5 cm thick fillet strips are ideal.
  • Cut the meat against the fibers. This way they retain more juice.
  • String the pieces tightly, without gaps. Otherwise, they will turn out dry. Also pack the skewers tightly in the oven.
  • Bake the dish on the rack above the baking sheet. The meat will be evenly fried, and the juice will collect in the form and will not stain the oven. You can line a baking sheet with parchment paper so you don't have to wash it later.
  • Use 2 baking modes. How much time to cook? If grilling, the skewers should stay in the oven for 10-12 minutes. At the same time, the pieces need to be fried for 5-6 minutes on one side, turn the skewers over and fry on the other side. In the normal baking mode, the temperature should be up to 200 °, and the meat comes to readiness within 20-30 minutes.
  • Thread the chicken onto wooden skewers. The usual skewers in the oven simply do not fit. But they are not needed for cooking at home. It is ideal to use large skewers made of birch wood or bamboo stalks.

The skewers must first be soaked in water so that they do not burn during baking. It is enough to put them in water for 30 minutes, but it should cover the "skewers" completely. It is convenient to use a large tray for this or soak them in the sink, closing the drain with a stopper.

  • Include acidic ingredients in your sauce. It is the acid that breaks down the fibers, which allows them to be saturated with taste and acquire softness. For chicken, you can choose not only traditional sour ingredients, such as kefir or balsamic vinegar. But also more refined products, such as oranges or kiwi. These fruits contain enough fruit acids to provide rich flavor to the kebab.
  • Use vegetable oil with an acidic component in a ratio of 1:1. For example, you can take a bite of rice and mix it with an equal amount of olive oil.
  • Marinate briefly. So the optimal time for pickling wings is 1 hour, 1-2 hours can be kept in fillet sauce, 2 hours - thighs. If the chicken is left in the marinade longer, the fibers can break down badly and the meat will become friable.
  • Marinate at room temperature for up to 1 hour. If more time is needed, place the bowl in the refrigerator.
