Charlotte with grapes

Ingredients:

Butter - 50 g
Eggs - 2 pcs.
Grape seed oil or olive oil - 50 ml
Brown sugar - 130 g
Vanilla sugar - 1 tsp
Flour - 200 g
Baking powder - 1 tsp
Salt - ½ tsp
Zest of one lemon
Zest of one orange
Milk - 60 ml
Seedless red grapes - 300 g

Cooking:

Charlotte with pear

Ingredients:

Pears - 400 g
Eggs - 2 pcs.
Sugar - 200 g
Natural unsweetened yogurt - 200 g
Flour - 250 g
Baking powder - 1 tsp
Salt - ½ tsp
Dried cherries (optional) - 40 g

Cooking:

1. Preheat the oven to 180°C.
2. While the oven is warming up, you can start processing the pears: we wash them thoroughly, peel them with a knife and remove the seeds. It is best to cut the pear not into slices, but into small cubes.
3. Beat two eggs thoroughly with granulated sugar until airy. Now natural yogurt can be added to the mixture, then sifted flour comes. Baking powder for the dough and a pinch of salt are first added to the flour.
4. After the mass is ready, you can add fruit to it. We add a pear necessarily, and a cherry - if desired.

Heat up the oven to 180 degrees. Grease the bottom of a charlotte springform pan with oil and line with parchment paper. Grease the top of the paper and the sides of the mold with oil. Wash the apples, peel them and chop them into medium pieces. Cut each half into four strips, then cut them crosswise.

Place the cut charlotte apples directly into the prepared pan. Meanwhile, in a large bowl, using a stand mixer or whisk, beat the eggs and sugar until thick and hold their shape on top of the beaten eggs. Pour in vanilla sugar, then add flour and mix with a spoon until you get a homogeneous mass, but the movements should be smooth. The dough for apple charlotte will be very dense.

Pour the batter over the apples using a spoon or spatula until it covers all open apples. Wait a bit for the dough to flow into the bottom layers of the apples.

Bake apple pie in preheated oven for an hour, or until tester comes out dry. Take the pie out of the oven. Cool in the pan for ten minutes on a rack, then flip onto another rack, peel off the parchment paper, and invert it back onto a serving platter. Sprinkle with lightly ground cinnamon.

According to one version, the name "Charlotte" comes from the female name Charlotte. According to another, based on the opinion of culinary scientists operating with recipes of the 15th century, it originates from the English word charlyt, which means "made from beaten eggs, milk and sugar."
