Flour balls fried in oil. Balls "Suns" from cottage cheese with mango

If, passing by a stall with fried pies or donuts, the stories of nutritionists about the dangers of fried dough do not seem so scary to you, then it's time to move away from strict rules, and treat yourself to something forbidden. But even such a "crime" can be useful, if we recall the deep-fried curd balls. They contain a little flour, absolutely no yeast, but there is a lot of healthy cottage cheese.

Necessary equipment: bowl, mixer, deep plate, saucepan with a diameter of 15-20 cm, 2 tablespoons, fork, slotted spoon, paper towel, dish.

Ingredients

Cottage cheese should be chosen fresh, dry, not too sour, so as not to add more sugar, with minimal fat content.

Step by step cooking

  1. Break 5 eggs into a deep bowl.
  2. Pour 120-130 g of sugar and beat with a mixer until it is completely dissolved.
  3. We spread 500 g of cottage cheese in a sweet egg mass and mix with a mixer until smooth.
  4. In a small container, extinguish 7-8 g of soda, 5 ml of vinegar, mix and add to the bulk.
  5. We mix the mass and leave it alone for 5 minutes, so that the soda quenching process is completed in an acidic environment. Filled with bubbles of carbon dioxide, it will become airy and increase in volume.
  6. Add 260-280 g of flour in parts, mixing thoroughly with a spoon after the introduction of each portion. The dough should be sticky, but not too dense.
  7. Pour 500-600 ml of vegetable oil into a saucepan (its layer should be about 5 cm) and heat over medium heat.
  8. Pour 100-120 g of flour into a deep plate. We take 2 tablespoons. With one we collect the dough, with the other we shift it into a plate with flour. We put a few such lumps in the flour.
  9. We slightly reduce the fire under the hot oil. Roll one of the pieces of dough carefully in flour and roll it into a ball with your hands. Shake off excess flour and dip into hot oil.
  10. We form and dip a few more balls into the deep-fryer. Their number should not be large, because, frying, they will increase in volume.
  11. Turn the cheese balls over with a fork so that they brown evenly on all sides.
  12. We take out the finished balls with a slotted spoon, holding it a little over the stewpan so that the excess oil drains, and put it on a paper towel.
  13. Fry other curd balls in the same way. From a towel that has absorbed excess oil, transfer them to an elegant dish, let cool and serve.

In addition, no tricky kitchen appliances are needed to get them - only a bowl for mixing food, a cast iron for frying in oil, and a spoon for turning over and catching finished products.

Flour should be of the highest grade, and it is better to take coarse-grained sugar - it is sweeter. Since our balls of condensed milk are supposed to be fried in oil, it is best to take purified, that is, refined.

Let's start with the simplest recipe for cookies with condensed milk balls. We don’t have to mess around with the dough for a long time, you can buy a ready-made non-yeast “puff”.

Recipe for beginners: puff balls with condensed milk

Ingredients

  • Store-bought puff pastry- 0.5 kg + -
  • Condensed milk1 can or 250 g homemade condensed milk + -
  • - 5-6 tablespoons + -

How to make puff pastry balls

The dough, which can always be found in the supermarket, is rolled out in layers and packaged in the same way. But you have to "reformat" it to get the balls.

We cut it into identical squares of arbitrary size, fill it with boiled condensed milk and roll it to get balls. You need to do this carefully so that there are no holes left through which the filling can leak during cooking.

Two cooking methods - deep-frying and oven

There are two ways to condition a sweet treat - it can be fried in oil or baked.

In the first case, pour deep fat into the cauldron so that the lumps of dough drown in it by half, heat it up and start frying. The balls are cooked very quickly - just have time to turn them over! To remove excess fat, dry the balls on a paper towel, put on a dish. Before serving it with tea, you need to sprinkle them with powdered sugar.

You can also use an electric fryer for frying - quickly and conveniently.

If you don’t really want to fry, you can talk about how to bake condensed milk balls in the oven. We prepare a sweet semi-finished product in the same way as in the first case, only we send them not to a cauldron, but to the oven, after carefully placing them on a baking sheet at a distance of 3-4 cm. You don’t need to grease the sheet with anything - just the fat that contains the dough.

After a while, when the lumps begin to brown from above and below, they will need to be turned over onto an unbaked barrel, so that as a result the dough products are baked evenly. Ready-made hot balls are also sprinkled with sweet powder.

  • How to make curd balls

    1. Break the egg into a deep cup (do not forget to wash the shell beforehand). Pour in sugar.

    2.
    Mix until smooth.

    3
    . Add cottage cheese.

    4 . Mix, trying to knead the curd lumps as small as possible.

    5 . Then add flour, vanilla sugar and soda.

    6
    . Knead the dough, it should turn out soft and not stick to your hands. You can add a little flour, it is difficult to indicate the exact amount in the recipe, since it all depends on the fat content of the cottage cheese. Once it stops sticking, stop adding flour. The softer the dough, the softer the balls will be.

    7
    . Roll out the sausage, about 2 cm in diameter and cut into identical sticks. For clarity in the photo, so that you can see the approximate size, I will put a teaspoon next to it.

    8.

    9
    . In a small saucepan or ducklings, as in our case, pour vegetable oil, fill about 5-7 cm from the bottom. Try to choose such dishes so that the bottom is not wide, so that the donuts are completely submerged, and less oil is used up. We warm it up well over high heat, then reduce the heat to medium, and we will cook on it. Drop the cheese balls into the hot fryer.

    10. You can drown a couple of times - turn the koloboks so that they brown evenly.

    11
    . Using a slotted spoon, remove the koloboks from deep-frying and put them in a colander (iron sieve) to allow excess oil to drain. You can spread it on a paper towel, it will also absorb excess fat.

    Delicious curd balls are ready

    Bon appetit!

    General principles of preparation

    Classic curd balls are made in the same way as cheesecakes. Cottage cheese, flour, sugar and eggs are kneaded into a dough from which balls are molded. But then the processes are slightly different.
    Roll the balls in flour, semolina or breadcrumbs and fry in a large amount of vegetable oil, heated as much as possible. Roasting time 7-10 minutes. During this period, the curd dish will not only reach readiness, but will also acquire a pleasant golden color. Remove the balls from the dishes where they were fried with a slotted spoon and spread on a dish covered with napkins or paper towels. This must be done in order to remove excess fat.
    You can cook cottage cheese balls in the oven. This will slightly affect the taste of the finished dish, but you will not have to be afraid to flood the body with extra calories. It is better to preheat the oven for this dish to 180 degrees in advance, and wait for readiness for about half an hour.
    Unlike cheesecakes, curd balls can not only be fried and baked, but also boiled in boiling water with the addition of a small amount of table salt. This cooking option will make the taste of the dish more like dumplings. By the way, in this case, the balls should also be rolled, but best of all in ordinary flour. Unfortunately, this cooking method is not suitable for all recipes. For example: it is better to cook options with filling according to the classical canons.
    There are also recipes for curd balls that do not provide for heat treatment at all. Below we will talk about this, so go ahead!

    Curd balls with fillings

    Say what you like, but cooking cottage cheese balls as well as cheesecakes is boring and uninteresting. Such a breakfast will not be much different from the standard one. Therefore, it is worth starting with an equally simple, but more attractive option - curd balls with filling. For this you need to take:

    • cottage cheese - 350-400 g;
    • semolina - 100 g;
    • chicken eggs - 2 pcs.;
    • sugar and salt - to taste;
    • stuffing -...

    The action begins with whipping the cottage cheese with a mixer / blender until a homogeneous, creamy state. After that, egg yolks, semolina, salt, sugar are introduced into it and everything is thoroughly kneaded into a kind of dough. The prepared mass should be left alone for 15-20 minutes so that the semolina swells a little. During this time, you need to beat the egg whites waiting in the wings until you get stable white peaks.
    After the specified time, the protein mass is gently mixed with the curd. The dough is ready. Now you need to stick balls with a diameter of 4-6 cm from it. Then flatten each ball into a cake, put the filling in the middle and turn the edges into a ball again.
    It takes about 10 minutes to fry the curd dessert with the filling in a large volume of hot oil. If desired, the balls can also be baked in the oven (180 ° C - 30 minutes). They won't get any worse than that. The finished product can be poured with jam or melted chocolate.

    A few words about the filling. As such, you can use a variety of goodies:

    • dried apricots;
    • prunes;
    • fresh strawberries;
    • boiled condensed milk;
    • chocolate pieces, etc.

    If dried fruits are used as a filling, then they should first be poured with boiling water and, covered with a lid, let stand for about 15 minutes. Thanks to the water procedure, dried apricots or prunes will become much softer.

    Curd balls, recipe with cheese

    Additional taste qualities can be added to curd balls by ordinary cheese. Households will certainly appreciate such a culinary innovation. To prepare such a breakfast, you need to get from the bins:

    • cottage cheese - 200 g;
    • flour - 2.5-3 cups (maybe a little more);
    • hard cheese - 200 g;
    • sugar - 150-200 g;
    • sour cream - 2 tablespoons;
    • eggs - 3 pcs.;
    • soda or baking powder - 1 teaspoon or sachet, respectively;
    • vinegar - in case of using soda.

    Beat eggs well, add sugar, add sour cream and beat again. Pour the resulting mass into a bowl, where grated cheese and cottage cheese are already mixed with each other. Continue whisking all the ingredients until the mass becomes homogeneous. After that, pour flour into a bowl, add soda slaked with vinegar (baking powder) and knead the dough. Then everything is according to the standard: stick balls and fry.
    This dish is best served with sour cream. Although, there are no restrictions. Who likes more.

    Curd snack balls

    Who said that cottage cheese balls have to be sweet? By no means! They can be turned into a great snack. You just need to prepare:

    • cottage cheese - 250 g;
    • hard cheese - 100 g (it is best to take parmesan, but any other will do);
    • flour - 150-200 g;
    • eggs - 2 pcs.;
    • garlic - 2-3 cloves;
    • dill - 1/2 bunch;
    • soda - 1/2 teaspoon;
    • vinegar - to extinguish soda;
    • salt - to taste.

    Grate the cheese, crush the garlic with a press, and finely chop the greens. Combine all ingredients except flour in a deep bowl and beat with a blender until smooth. Then add flour to the mixture and knead the dough. Divide the finished mass into balls, roll each of which in breadcrumbs and fry in oil. You can serve this appetizer with anything and anything.

    Curd balls without roasting

    Of course, such a dessert is not at all like cheesecakes. Rather, it resembles glazed chocolate curd cheeses. Children really like this dish. So, you can try. What’s more, all you need to do is:

    • cottage cheese - 400 g;
    • sugar - 4 tablespoons;
    • cocoa powder - 1 tablespoon;
    • milk - 3 + 4 tablespoons for glaze;
    • chocolate - 100 g.

    In a bowl, mix cocoa, sugar and 3 tablespoons of milk. Bring the mixture to a boil and let it cool for about 10-15 minutes. During this time, beat the cottage cheese with a mixer and add the mass from the ladle to it. Mix everything thoroughly until smooth. Using a spoon dipped in cold water, form curd balls. If desired, they can be rolled in powdered sugar or coconut flakes.
    In the same bowl where the cocoa was cooked, break the chocolate, add 2 tablespoons of milk and put the bowl on the fire, constantly stirring the mass. When the chocolate is melted, use a spoon to dip the balls into the resulting icing and roll there to cover the entire surface. Put the finished dessert on a dish and put it in the refrigerator for a while so that the icing freezes.

    The combination of flavors of curd dough, apricot jam and prune filling is just wonderful!

    • butter
    • apricot jam (jam) or liquid honey
    • chopped nuts

    Transfer the cottage cheese to a deep plate, use a blender to bring to a pasty state (or grind through a sieve). If the cottage cheese contains a lot of liquid, it must first be thrown into a sieve, since excess liquid can adversely affect the shape of the balls during cooking.

    Divide the eggs into whites and yolks. Put the yolks to the cottage cheese, add salt, mix.

    Pour semolina, mix, leave the dough for 30 minutes.

    Add a pinch of salt to the proteins, beat until stable peaks.

    Gently fold the whipped egg whites into the batter.

    Form cakes from 1 tablespoon of cottage cheese dough, put prunes in the middle, mold balls from cakes with hands moistened in water.

    Prunes should be soft, so it must be soaked in warm water in advance and given time to absorb moisture (1-2 hours).

    Boil salted water and boil the curd balls for 5-7 minutes (after surfacing and boiling).

    You can try to boil one test ball for a start: if it disintegrates during cooking, add a little more semolina to the curd mass, if it turns out too hard, add cottage cheese, well, if the ball holds its shape, then the proportions of the dough are observed, and you can proceed to main brew.

    While the balls are cooking, heat the sour cream and melt the butter, pour into a gravy boat or immediately onto portioned plates into which the balls are laid out after cooking. Top with liquid honey or apricot jam (jam), sprinkle with chopped nuts.

    Curd balls with prunes are ready! Bon appetit!
