Roll recipe:

  1. Grate the frozen butter and then mix it into the flour.
  2. Add 100 g of sugar, salt, 2 eggs, vanilla and sour cream to the products.
  3. Knead the dough and roll out a layer 0.5 cm wide.
  4. Dry the nuts in a well-heated frying pan without oil for 3-4 minutes. After that, grind them with a blender and mix with the remaining sugar.
  5. Spread the filling on the base in an even layer.
  6. Roll up the workpiece and brush the surface with a beaten egg.
  7. Cook the treat for 30 minutes at 180 degrees.

Cool slightly before serving and decorate with powdered sugar. After that, cut it into pieces and bring it to the table.

A delicious dessert with a crispy crust and original filling can be prepared on a fast day.

Baking Recipe:

  1. Sift 180 g of wheat and 250 g of any whole grain flour into a deep bowl. Add 60 g sugar and 10 g lemon zest.
  2. Pour 120 g of olive oil and 80 g of boiled water into the dry mixture.
  3. Knead the dough, wrap it with cling film and refrigerate for 30 minutes.
  4. Pour boiling water over 30 g of almonds, then pour over the nuts with cold water and peel them.
  5. Dry the blanks in the oven or in a pan along with 30 g of walnuts and 30 g of hazelnuts.
  6. Rinse 30 g of raisins, 30 g of dried cherries and 3 dried figs under running water, and then steam the food in boiling water. Squeeze and dry them.
  7. Finely chop the figs and chop the nuts with a knife.
  8. Peel 1 apple and grate on a coarse grater. Mix it with nuts, dried fruits and 30 g of sugar.
  9. Roll out the dough to a thickness of 0.5 mm on a silicone mat or towel. Lay out the filling, sprinkle it with ground cardamom, cinnamon and lemon zest. Add all spices to taste.
  10. Roll up the workpiece with a rug or towel. Transfer the workpiece to a baking sheet and send it to the oven preheated to 180 g. Bake the treat for 30-35 minutes.

Cool the finished roll on a wire rack and serve.

To prepare roll with nut filling it is necessary to prepare shortbread dough for the roll and make a nut filling. Then place this filling in the dough, from which roll the roll.

First, I prepare shortbread dough for a roll with nut filling. The photo and recipe on how to make shortcrust pastry for a roll with nuts are described in great detail and shown in my article "".

Therefore, I will not repeat myself, but will immediately proceed to the preparation of the nut filling for the roll, since the shortbread dough I prepared for this roll is already in the refrigerator.

To prepare the nut filling, I pour the peeled walnuts into a frying pan and fry for 10 minutes in a hot oven at a temperature of approximately 160 - 180 degrees. Then I pass them through a meat grinder.

I grind sugar in a coffee grinder and get powdered sugar. This is much more practical than buying the same powdered sugar in the store. I break the eggs, separate the proteins from the yolks and put them in a bowl, add powdered sugar and vanillin there.

All this is whipped with a mixer until a thick fluffy mass is obtained.

I mix the resulting protein mass with nuts, passed through a meat grinder, and mix.

Then I take the shortcrust pastry out of the fridge.

I roll out the dough with a rolling pin into a rectangular layer, 0.5 cm thick.

I spread the protein-nut filling on the rolled dough and distribute it over the entire surface of the dough. I don’t spread the whole filling, but leave 3 tablespoons of the filling for lubricating the roll after it is baked.

Those who think that walnut roll is just a sweet dessert are mistaken. Far not only in the dough you can wrap these tasty and satisfying nuts. Appetizing snacks that are not ashamed to put on the festive table - that's all it is, walnut roll!

Whether it's a sweet dessert roll or a savory snack roll, nuts need to be fresh and of good quality. It is better to buy them in a shell and chop them yourself.

Roll with walnuts: a recipe for tea

Preparing a roll with walnuts from yeast dough is very simple. The dough takes the most time. Therefore, it is worth starting with it, taking:

  • flour - 4 (or a little more) cups;
  • 2 raw eggs;
  • a glass of milk (you can make dough on kefir);
  • margarine ½ standard pack (100 g);
  • one package of fast-acting yeast (you can also “live” - 50 g);
  • salt - a pinch;
  • granulated sugar 3 tbsp. spoons.
  1. Yeast is bred in warm sweetened milk (we dissolve sugar in it beforehand). When they come up, send them to the sifted flour, add eggs and melted margarine, add some salt and make a stiff dough. Let the dough rest in a warm place until it rises.
  2. In the meantime, let's take care of the filling: grind the walnut kernels. They will need about 3 cups. If you want sweet pastries, you can sweeten the nuts with sugar.
  3. Divide the risen dough into 2 parts. Roll out from each layer. We evenly spread the filling on each layer - half the nut mass, and wrap it with a roll. You will get 2 rolls.
  4. We transfer them to a greased baking sheet at a distance from each other and from the sides of the baking sheet and bake for about 30 minutes in a preheated oven (the optimum temperature is 180 degrees).

Roll with prunes and walnuts

Meatloaf lovers will love this recipe. It is best to wrap the filling in pork pulp: the roll will come out tender and juicy.

You will need:

  • pork pulp - a piece of grams for 650-700;
  • tomato paste - a tablespoon;
  • fat sour cream - a tablespoon;
  • garlic, pepper, salt to taste;
  • walnuts (core) - 120-150 g;
  • seedless prunes - 120-150 g.
  1. It is better to choose a low-fat fillet. It must be cleaned of excess fat and veins. Then increase the “useful area” by cutting a piece like a book, without cutting it to the end, so that you get a long layer. It should then be slightly beaten off with a hammer, giving uniformity to the thickness. Then rub the meat with spices (salt, pepper and chopped garlic). Let it soak a little.
  2. Let's do the stuffing. Rinse the prunes, steam them with boiling water for a few minutes, let the liquid drain through a sieve and grind with a blender. And crush the nuts into medium crumbs, it is better if larger pieces remain.
  3. Grease the meat on one side evenly with prunes, sprinkle generously with nuts on top, roll up the roll. We fasten it with twine so that it does not lose shape.
  4. Heat up some oil in a frying pan. Dry the roll with a napkin, removing excess moisture, and fry on both sides until browned. This will give the effect of sealing the juices inside, and during baking, the tenderness and softness of the meat will remain.
  5. After cooling slightly, wrap the roll in parchment or foil. Then we send it to a baking sheet - and into the oven (we do not forget to warm it up to 185-190 degrees beforehand). Let it bake for about half an hour.
  6. From sour cream and tomato paste we make a coating for a golden crust: mix the ingredients in a bowl. After half an hour, we take out the baking sheet, unfold the roll, carefully remove the twine and coat with the mixture. Put in the oven for another 15 minutes. Serve hot or cold - equally delicious!

Eggplant rolls with walnuts

Another "roll" snack. You will need:

  • 3-4 larger eggplants;
  • walnut kernels - 120-150 g;
  • bulb;
  • a pair of garlic cloves;
  • lemon for juice;
  • salt, pepper to taste;
  • greens - parsley or dill;
  • vegetable oil.
  1. We prepare the filling in a blender, chopping greens, nuts, onions and garlic together. We leave the finished mass for a short time so that the ingredients are saturated with the aroma of each other.
  2. Wash the eggplant and cut it into long slices along the length, utilizing the extreme slices, which are completely covered on one side with a peel. Salt and pepper the eggplant strips and leave for a while so that the salt is absorbed. After drying with a napkin and frying slices on both sides in very hot oil.
  3. After frying, we dry it on a paper towel and proceed to stuffing: we put a nut filling, carefully roll each slice with a roll and fasten it with a toothpick. You can eat both warm and cold - a very tasty snack!

Chicken roll with prunes and walnuts

Chicken roll is prepared by analogy with pork. However, it is better not to fry it, but to steam it - you get a healthy diet dish. To do this, you need a large leg, which we first carefully free from the bones, cutting the flesh so that it resembles a layer in the end, without damaging the skin. Beat the meat with a hammer, add salt and pepper on both sides.

  • For one leg for the filling we take:
  • chicken meat white and red grams 70;
  • kernels 5-6 nuts;
  • garlic is a large clove.
  1. We cut the meat into small pieces, chop the nuts and crush the garlic. After mixing the ingredients of the filling, put them on the meat and roll up the roll, tightening it with twine. Wrapped in foil, cook in a slow cooker or double boiler for 1 hour.
  2. We cool the finished dish and send it to the refrigerator for a couple of hours. After that, remove the twine and cut the roll into portioned slices.

Cheese roll with walnuts

Delicate filling under the cheese crust - delicious! Making this roll is easy. You will need:

  • hard cheese (for example, Gouda) - 350-400g;
  • granular cottage cheese - 100 g;
  • boiled chicken fillet - 100 g;
  • walnuts (nucleoli) - 100 g;
  • greens favorite to taste;
  • clove of garlic.
  • We make the filling by chopping the fillet with a knife, crush the garlic on the garlic press, chop the greens finely and mix everything with the cottage cheese. You can add a little mayonnaise or sour cream for a better bunch of ingredients.
  • We cut the cheese into pieces, tightly wrap it in plastic wrap and send it to a pot with boiling water for 15 minutes - you need to melt the product. You are also allowed to use the microwave.
  • Let the melted cheese cool slightly and roll out with a layer. We fill the layer with nut-curd cream and form a roll. An hour in the refrigerator - and you can cut into portions.
  • yolks of boiled eggs - a couple of pieces;
  • walnut kernels - a glass;
  • mayonnaise to taste.
  1. We grind the eggs, three cheese on a grater, and crush the nuts. Mix the ingredients, add mayonnaise and crushed garlic. After kneading until smooth, spread the mass on pita bread and roll up the roll.
  2. By the way: cheese is easily replaced with cottage cheese, and mayonnaise, if necessary, with processed cheese for sandwiches. Such a roll with walnuts is cut into slices and sprinkled with herbs. Simple, fast and delicious!

In the East, they are very fond of sweet desserts, such as marshmallow, churchkhela and others. Well, this is understandable, since many types of nuts grow there, as well as poppies, dates and much more. Our yeast dough roll can be made incredibly tasty. For the filling, nuts are taken, and the roll itself turns out to taste somewhat similar to baklava, only not so sugary sweet.

  • - 130 g of margarine (choose quality);
  • - 100 ml. boiled water;
  • - 50 ml. cow's milk;
  • - Yeast 10 g (dry);
  • - 3.5 tbsp. flour;
  • - One chicken egg;
  • - 1-in liter. a jar of peeled walnuts;
  • - vanillin pack;
  • - 5 g of salt;
  • - 15 table. spoons of sugar.

The filling is made from roasted nuts. They are crushed in a meat grinder, mixed with 8 tbsp. spoons of sugar.

The dough is kneaded in a bread machine. You can do it with your hands too. Wheat flour is taken for the dough, 1 pack of yeast is added to it. In a microwave oven, margarine is heated until melted with 100 ml of water. Milk is then added to this water-margarine mixture. Dry ingredients are mixed with liquid, then egg, salt, sugar are driven in. The consistency of the dough should be very pleasant. Flour is added if necessary so that the dough does not stick.

The dough is divided into three equal pieces. Each piece rolls out.

The filling is laid out on the layer,

the dough is wrapped, and the edges are linked.

The seam of the roll should be at the bottom. Placed in a preheated oven. It is baked until done. Three minutes before pulling out of the oven, grease the surface with yolk. This will give the surface of the roll a nice sheen. After taking out the roll should cool down.

Very easy to prepare roll and very tasty! The only thing you have to spend money on is walnuts, but the amount of filling can be halved. This is a great dessert for a cup of tea and a cup of coffee. But as for me, it is best to eat it with warm milk :)

I got 3 rolls of a decent size. But you can roll out the dough thicker, make the rolls shorter, etc. Everything is up to you. First, it is better to make the filling and only then do the dough.

I cooked the dough according to my favorite recipe, for a step-by-step recipe and explanations, you are welcome. Here, too, I will leave the recipe, but it will be short.

For test:

  • 1 tbsp instant dry yeast
  • 2 tbsp Sahara
  • 3 tbsp flour
  • 300 ml warm water or milk
  • 1 tsp salt
  • 1/3 cup vegetable oil
  • 2-2.5 cups flour

For filling:

  • 150 ml milk
  • 500 gr shelled walnuts
  • 200 gr sugar
  • 80 ml honey
  • zest of half a lemon
  • 1 tsp vanilla sugar or 1/2 tsp. vanilla extract

For lubrication: 1 egg

In a bowl, mix water (or milk), sugar and flour. Dissolve yeast in this mixture. Cover with a clean towel and leave in a warm place for 15 minutes. Add salt and oil. Gradually add flour and knead the dough so that it does not stick to your hands. Leave for another 15 minutes, the dough should increase by 1.5-2 times.

For the filling, heat milk with sugar and honey over low heat. Do not bring to a boil, you just need to dissolve the sugar and honey.

Chop nuts. You can use a blender, meat grinder or knife. Without fanaticism, nuts should not turn into flour.

Pour the hot milk mixture into the nuts. Mix well to get a homogeneous mass. Cool down a bit.

Divide the dough into 3-4 parts (also mentally divide the filling). Roll out each into a rectangular layer (if possible) with a thickness of 0.5 cm. Put the filling on the dough, smooth it out, not reaching a couple of centimeters to the edges. Wrap the short edges over the filling (these will be the ends of the roll)

Roll along the long side.

Place the rolls on a baking sheet greased with parchment paper or oiled, seam side down. Cover them with a towel and leave for 15-20 minutes in a warm place to rise slightly. Then prick them lengthwise with a toothpick or wooden splinter so that they do not crack during baking. Whisk the egg in a cup or bowl and grease the rolls with it.

Send the rolls to the oven, preheated to 200 degrees, for about 20 minutes. They should be browned, as in the photo. If this happens before the indicated time, feel free to pull them out so that they do not burn. Do the same if the time is up, and the rolls have not yet become golden and ruddy, i.e. wait until they get a nice color.

Remove the rolls from the oven, cover with a towel and let cool. And then you can cut and serve.
