Eleven Madison Park is located in the financial center of New York, on the first floor of the New York's Credit Suisse building. Chef Daniel Humm and co-owner Will Gidara have created an Art Deco interior with hardwood floors and oversized display windows that takes guests back to the 1920s and gives classic American cuisine a whole new twist. This restaurant is the best remedy for banality, everything here is interesting, not banal and a little bit different. For example, lunch begins with the fact that from a deck of cards laid out on a tray of a waiter, with the names of ingredients written on them, the composition from which your menu will be built is selected. Here you should try shrimp roll, rustic eggs with parmesan foam, gnocchi with ricotta and goat milk, lobster and be sure to order carrot tartare - a simple, in fact, dish, the serving of which turns into a whole spectacle. First, the waiter sets up a meat grinder right on the table, into which he dips two fresh carrots. As they scroll, the guest is invited to choose from a dozen seasonings, including quail egg yolks, peeled horseradish, smoked bluefin tuna or mustard oil, thus creating their own tartare.

Innovator, experimenter and avant-garde, Heston Blumenthal, owner of The Fat Duck, a rustic molecular restaurant, opened his second restaurant, Dinner, at London's Mandarin Oriental Hotel in 2011.

Led by Blumenthal's loyal assistant chef Ashley Palmer-Watts, Dinner is a gastronomic reenactment of British history. "Alinea is not a restaurant... at least not in the conventional sense" - such a statement greets visitors to the website of the Alinea restaurant, located in Lincoln Park in Chicago. Since opening in 2005, owner Grant Akatz and chef Mike Bagail have been experimenting with food. In fact, the dishes in Alinea are works of modern art that you can eat, paintings, installations and performances with products made up beyond recognition in the lead role. Steaming green scallop with a citrus aroma on a plate, consisting of 14 different textures. Or a living picture of crab, pumpkin flower, saffron and cardamom. Veal cheeks, lapsang souchong, pine needles and blueberries, gracefully scattered on the table - and it is not immediately clear where what is; destroying the completeness of this composition with a banal fork would be necessary (after all, a restaurant), but blasphemy. A green apple for a snack is served here in the form of a balloon filled with helium (you gnaw a hole, draw in the helium and speak in a funny voice), and small tourist fires are made from dried parsnips for a cozy burning right in the middle of the table.

In his youth, the Japanese chef of his signature restaurant Narisawa, Yoshiro Narisawa, often traveled to France, Switzerland and Italy, which, of course, affected his style. But Narisawa didn't just bring European recipes to Japan, he was able to find a way to combine classic French techniques with the finest Japanese ingredients. They say that to truly understand the art of Chef Narisawa, you need to come to a restaurant with a Japanese who can explain what exactly has changed in the traditional recipe.

The restaurant is small, only 18 guests fit in the dining room. There is only one meat dish on the menu, most of the dishes are prepared from fish. The only dish that uses rice is black rice bread.

Special attention is paid to bread here - many visitors to Narisawa recall with pleasure the process of making “forest bread”, which is baked right on the dining table. The bread is served as a sourdough with citrus flavor and Japanese pepper, which is placed in a warm container, rises and baked in a small stone bowl at 300 degrees. Butter with powdered dried olives is served with the finished bread with a pronounced tangerine flavor.
