Spicy and very unusual salad with spicy eggplant and sprats for any occasion. Salad goes well with croutons and bruschetta.

Ingredients:

  • Garlic - 1 head
  • Greens - for decoration
  • Sprats - 200 g
  • Mayonnaise - 2-3 tbsp. spoons
  • Walnuts - 50 g
  • Eggs - 3 pcs.
  • Eggplant - 2 pcs.
  • Tomato - 1 pc.

Cooking:

Chop eggplant into slices and pour over water. Sprinkle the vegetable with salt and leave for a couple of hours.

Fry the prepared fruit in a pan.

Combine fried eggplant with garlic, passed through a press.

Grate the boiled eggs and mash the sprats well with a fork.

Chop greens and tomatoes. Combine all the ingredients with mayonnaise and sprinkle the salad with nuts.

Grate the cheese. Mix all salad ingredients with chopped herbs and mayonnaise.

So that onions do not give bitterness, they certainly need to be marinated (after removing the husk and finely chopping). The easiest way is to pour boiling water over it. Or you can mix it with sugar and table vinegar, crush it well with your hands and leave it for 15 minutes. Before adding to the salad, the onion must be washed and squeezed.

Grate hard cheese on a fine grater - the type of cheese does not really matter.

Boil chicken eggs "hard boiled", then cool in cold water and peel, grate the yolks and whites on a fine grater, without separating them.

In a dish suitable for puff salad, put the sprats at the very bottom. It is best to pre-mash them with a fork or finely chop with a knife. A layer of sprats with mayonnaise does not need to be lubricated.

Put the pickled onion on top of the sprats, smooth. It also does not need a mayonnaise net.

Grate chicken eggs on a fine grater, put an even layer on top of the onion and spread with mayonnaise. You can also combine eggs with mayonnaise separately in a bowl, mix and put the resulting paste on the onion.

Grate hard cheese on a fine grater, spread and level it, grease with mayonnaise.

Lay croutons on top of the salad. The easiest way to make them yourself is to cut a few pieces of white bread and dry them until golden in the oven. You can also buy ready-made crackers with any taste or without it. Garnish the salad with fresh herbs.

Let it brew for 30 minutes and you are ready to serve. Salad with sprats and crackers has an original appetizing appearance, so it is quite useful for the festive table.
