Now this is my favorite meeting place with girlfriends, and no matter what we order, they always bring us a dish from the chef - his signature tongue salad with cucumber in Chinese style with sauce. It's so delicious, I'll tell you that I asked for the recipe and I'm trying to cook it at home. Of course, despite observing all the proportions of such a dish, as the chef prepares it, I can’t do it, but I try!
It is important to cook the tongue properly, for this I boil it with the addition of spices and soy sauce, and when it is peeled and chopped, I mix it with chopped onions and also pour over the sauce.
The vegetable base of the dish is fresh cucumbers and lettuce peppers, which I mix with a bunch of greens and chopped garlic. And after I mix the tongue with vegetables, I also add the original sauce and let it stand for at least 15 minutes to marinate.

Ingredients:

- pig tongue - 1 pc.,
- fresh cucumber - 1 pc.,
- salad pepper - 1 pc.,
- turnip onion - 1 pc.,
- parsley or cilantro - 0.5 bunch,
- sesame seed - 1 tbsp. - optional,
- soy sauce - 3 tbsp. (in the broth) and 2 tbsp. (in salad)
- sesame oil - 1 tsp,
- Chinese seasoning - 0.5 tsp

Let's start with the language. To do this, we clean the fresh tongue from mucus, pour it with hot water and add soy sauce, as well as spices and spices, to the pan. Cook the tongue until it becomes soft, about an hour.

Let's start preparing our meal.

Thoroughly wash the beef tongue, lower it into a large pot of boiling water and cook for about 2 hours until tender. We immediately transfer the cooked tongue to a bowl of cold water. After cooling, it is necessary to peel it from the skin.

Remove excess moisture with a paper towel. We cut the pulp into thin strips.

Fresh cucumber is also cut into thin strips about 5-6 cm long, put in a colander, slightly salted and left for about half an hour so that the excess liquid is glass.

In the meantime, we clean the green apple from seeds and peel, also cut it into beautiful strips and be sure to sprinkle with lemon juice. This is necessary so that the pulp of the apple does not darken, as well as for spicy sourness in the salad.
