Finely chop the fillet and put the first layer on the dish on which the salad will be served. A hedgehog-shaped layer is laid out, that is, a torso and a slightly elongated muzzle. Lubricate the layer with mayonnaise, it is better to apply it in the form of a mesh so that all products are saturated. All subsequent layers will also need to be lubricated with mayonnaise. Next, finely chop the mushrooms, and leave 2-3 things whole for decoration. Mushrooms are placed on top of the chicken. Next come the olives, which are cut into thin slices. Grated eggs on a coarse grater are laid out on a layer of olives. Then comes a layer of cheese grated on a coarse grater, again mayonnaise and carrots - the final layer. The final layer does not need to be greased with mayonnaise.

Lay out the carrot in such a way that it covers the body of the hedgehog and resembles thorns. The elongated part of the salad, which serves as a muzzle, should be left in the cheese. Make a spout from a round olive and eyes and one olive cut into two parts. Put a few whole mushrooms on the carrot, and decorate the plate around with herbs.

If desired, you can make a Hedgehog salad with Korean carrots and chicken, without mushrooms. In principle, the principle of preparation will be similar, but we will describe it in more detail below. Therefore, every housewife wants such an original dish to be on her table. Hedgehog salad is a prominent representative of this category of dishes. It is performed in layers and combines tender chicken meat, fragrant mushrooms and spicy Korean carrots. Ingredients:

for salad:

  • chicken breast - 1 pc. (250 gr.).
  • Korean carrot - 200 gr.
  • potatoes - 1 large tuber (or 2 small ones).
  • marinated champignons - 1 can (200 gr.).
  • chicken egg - 2 pcs.
  • cheese - 150 gr.
  • onion - 1-2 pcs.
  • mayonnaise - 200 gr.
  • vegetable oil - 2 tbsp. l.
  • salt - to taste.

For decoration:

  • prunes - 2 pcs.
  • hazelnuts - 1 pc.
  • parsley - a small bunch.

How to cook a salad in the form of a Hedgehog:

Preparation of ingredients

Boil the chicken breast in 1 liter of water with the addition of 1 teaspoon of salt (without a slide) for 30 minutes after boiling over medium heat under a closed lid. Then drain the broth, let the chicken cool. Separate the bones and cut the fillet into small pieces.

Boil the potatoes "in uniform" until fully cooked, cool, peel and three into a fine grater.

Pour the eggs with water and boil for 10 minutes. Then immediately cool under cold water, clean and three into a fine grater.

We pass the onion for 3 minutes in a pan with vegetable oil.
We throw the pickled champignons into a colander, let the liquid drain completely, cut them randomly into smaller pieces with a knife, leave 4-5 mushrooms for decoration. By the way, any other pickled mushrooms are also perfect for this salad.

Grind the cheese on a fine grater.

Salad "Hedgehog" will be laid out in layers on a flat oval dish.

There are two options:

1st - lay out the layers in a certain order and grease each layer with a small amount of mayonnaise;

2nd - add a portion of mayonnaise to each component in a plate, mix and already, then form a salad.

I chose the second option, since my "hedgehog" had no time to lie in the refrigerator and soak. So that the salad does not turn out fresh, add a pinch of salt to the potatoes and eggs.

When choosing the first option, keep in mind that before eating the salad, you need to stand for at least 3 hours.

So let's get started

We spread the potatoes on a dish and evenly distribute them, giving the shape of a “hedgehog body”.

Spread the champignons mixed with onions and mayonnaise in the second layer.

We lay out the chicken breast in a slide so that our “animal” turns out to be voluminous and looks like a real one, on the contrary, we make the “muzzle” flattened.

We spread the egg layer only on the “hedgehog body”.

The next layer is cheese. It covers the entire surface, but for the muzzle, I left a little cheese, not mixed with mayonnaise.

Lay out the final layer, only on the back of the "hedgehog". If you think that the carrot fibers are too long, you can first chop them a little with a knife, but not too much. You don’t need to try to lay this layer evenly and press it, on the contrary, the more “needles” stick out, the more interesting it will look.

So that our “hedgehog” is on the grass that is familiar to him, we lay parsley leaves around him. It remains to cut out “eyes” from prunes, put hazelnuts in place of the “nose”, make “cilia” from dill or parsley. Well, what kind of hedgehog does not carry mushrooms on its back.

Salad "Hedgehog" with Korean carrots attracted me first of all with its appearance. By the way, the ingredients for the "stuffing" can be taken different each time, the main thing is that they harmoniously combine with each other. In this recipe, the combination of products is downright classic: cheese, chicken, mushrooms, eggs. Carrots in Korean add their spicy "zest" and just give the salad an original and appetizing look.

When I was preparing the Hedgehog salad with Korean carrots for children, I used only sour cream, and I made Korean carrots on my own without garlic and pepper, with apple cider vinegar. Another time I used mayonnaise and it was also very tasty.

Prepare everything you need. And although there are a lot of ingredients, it will be difficult to forget something.

Boil the chicken fillet (or any other part of the chicken carcass) in salted water with spices. Then cool and cut the meat into small cubes. It can also be disassembled by hand into fibers. Put on a dish in the shape of a hedgehog's body, make a sour cream layer.

Wash oyster mushrooms, finely chop. Peel the onion and finely chop as well. The smaller the cut, the more tender the structure of the salad itself will be. Fry mushrooms together with onions in vegetable oil for 5-6 minutes, then make the next layer on the chicken.

You can take any hard cheese - whichever you like best. I take it with a more salty taste - so the taste of the salad itself turns out to be brighter, it feels like it has cheese in it. Grate it on a fine grater and lay out the next layer, lightly spread with sour cream.

Chicken eggs need to be grated on a fine grater and also put on a layer of cheese. On top, make a grid of sour cream, carefully spread it, giving the salad its final shape.

Long strips of carrots need to be cut into shorter pieces and put on top of a layer of cheese, leaving part of the salad "free" - this will be the muzzle.

Finish the salad with fresh herbs. Eyes and a nose can be made using peppercorns or olives.
