Salad "Birch" with prunes - recipe

To prepare the salad "Birch" according to the classic recipe, you need chicken. It can be either a chicken breast or a leg. Rinse the chicken breast or leg before cooking with cold water. Drop into boiling water. Add the onion, a pinch of black pepper, bay leaf and some salt. Boil the chicken, avoiding a strong boil until tender.

Boil the eggs separately. After cooling, cut the chicken breast into cubes. If you are using a leg, then remove the skin from it before slicing. Separate the meat from the bones. Cut the resulting chicken fillet into small pieces.

Peel off the shells of the eggs. Divide the yolks and whites on separate plates. Break the yolks into crumbs with a fork.

Grate the whites.

Dice the onion.

Cut washed into small pieces.

  7. I cut the chicken fillet into neat strips - so that they do not fall apart, I cut the meat across the fibers.
  8. Next, I cut the prunes into cubes. I put a few pieces aside - they will be needed for decoration.
  9. I rub the egg white separately.
  10. And a separate yolk.
  11. I cut the cucumber into cubes.
  12. For convenience, I lay out everything in containers. I'm going to start making salad. Since I don’t have a rectangular shape, but I want the puff salad to look like a log. I took a square shape to lay out the layers in it twice, and then combine.
  13. So, the first layer is prunes.
  14. The second is fried mushrooms. These layers I do not salt and do not soak with sauce.
