Lavash roll with cheese, chicken and cucumber

I really like chicken fillet as a filling for pita rolls. Thanks to him, the snack turns out to be hearty, but quite light. You always want to put smoked chicken in festive rolls, and boiled fillet goes in those that are prepared for everyday lunches and dinners. Although it is not so spicy in taste, it is much more in line with the criteria for a healthy diet.

And I also like to wrap chicken stuffing in pita rolls because you can combine anything with it: eggs, cheese, any fresh or salted vegetables, canned fruits. It is important that the "minced meat" is juicy, but at the same time does not suffer from an excess of moisture. Lavash, as you know, is made from unleavened dough, and in itself it is still a bit dry. He just needs to get the right portion of “moisturizing” from the filling. Therefore, mayonnaise or some other sauce or vegetable oil is usually added to it.

Ingredients:

  • unleavened Armenian lavash - 1 pack (for 2 sheets);
  • chicken breasts - 2 pcs.;
  • eggs - 4 pcs.;
  • hard cheese - 150 g;
  • cucumber - 1-2 pcs. (depending on size);
  • dill or parsley - 20 g;
  • mayonnaise - 4-5 tbsp. spoons;
  • salt - to taste;
  • ground black pepper - to taste.

Cooking method:

  1. Boil chicken breasts until done. Leave the broth for cooking some other dishes - for example, soups, sauces, aspic, etc., and take out the breasts, let them cool and separate the meat from the bone. You do not need chicken skin - therefore, remove it without regret along with the bones. Grind the boiled fillet - you can simply tear it into small fibers with your hands.
  2. Peel hard-boiled eggs and chop into cubes, as for salad or okroshka. Grind fresh cucumbers in the same way. Combine all ingredients in a bowl, add grated cheese and finely chopped parsley or dill. Salt, pepper, mix, season with mayonnaise. Ideally, of course, home-made, since a course has been taken on a healthy diet. Instead of mayonnaise, the filling is sometimes seasoned with olive oil. It’s also delicious, and no one will reproach for “harmfulness”.
  3. Spread sheets of pita bread on a table or on a cutting board. Lay out and level the filling on their surface so that the indents along the edges are about 2-3 cm. Only from one edge can the indent be left wider - up to 6-7 cm. Roll the roll towards this edge. In the same way, you make an analogue from the second sheet of pita bread. Pack both rolls in cling film - each separately, of course. Refrigerate for at least three hours. Before serving, cut into oblique transverse slices.

Lavash rolls with cheese and cucumber

Lavash rolls are a snack that has many variations. Here is one of the many types of rolls that my loved ones and I really like.

Ingredients:

  • thin lavash
  • cheese (any kind) - 100-150 gr.
  • fresh cucumber - 1 pc.
  • egg - 2 pcs.
  • mayonnaise
  • some fresh herbs (dill works best)

Cooking:

  1. We put the eggs to boil, while they are preparing, we rub the cheese and cucumber on a grater (I prefer on a coarse grater, this is how you like it).
  2. Mix cheese with a little mayonnaise. And slightly squeeze the cucumber.
  3. Allow the boiled eggs to cool, after which they should be finely chopped.
  4. Now we lay out the lavash on cling film (Armenian lavash is usually large, so I cut it into two parts). We spread all our ingredients on pita bread: cheese, cucumber, eggs, sprinkle with finely chopped herbs.
  5. Then we carefully roll it into a roll and then wrap it in a film in the opposite direction, so the roll has less opportunity to immediately crumble.
  6. And after lying down for some time (10-15 minutes) in cling film, it will go limp and it will be more convenient to cut it.

Lavash rolls with ham and cucumber

Ingredients:

  • lavash 1 piece
  • ham 200 grams
  • cheese 150 grams
  • cucumber 1 piece
  • lettuce green
  • dill
  • mayonnaise

  1. Grate cheese on a fine grater. Add mayonnaise.
  2. Mix well. Thinly slice the ham and cucumber. We chop the dill.
  3. Wash and dry lettuce leaves.
  4. Spread pita bread with cheese and mayonnaise. We spread the lettuce leaves all over the pita bread. We spread the ham on top, then the cucumber. Sprinkle with dill. We roll the pita bread into a tight roll. Wrap in foil.
  5. Let soak at room temperature for 15-20 minutes. Put in the refrigerator for 20-30 minutes.
  6. Cut the chilled roll into portions. Lay out on a platter.

Favorite lavash roll with ham and pickles

Passionate lovers of spicy snacks will appreciate this version of pita "rolls". The combination of smoked pork fillet and light sourness of lightly salted cucumber is the best appetite stimulant before the start of the feast. Ham, if desired, can be replaced with sausage (it is better to take a variety without lard), and salted cucumbers can be replaced with fresh greens.

Ingredients:

  • Lavash thin - 1 large sheet;
  • Low-fat ham - 250 g;
  • Hard cheese - 150 g;
  • Lightly salted cucumber - 2 pcs.;
  • Mayonnaise - 2-3 tbsp.

Cooking method:

  1. First, prepare the products for the filling: cut a piece of ham into thin, not wide slices, and turn the cheese into shavings on a grater with large holes. Cucumbers need to be divided into thin plates.
  2. We flavor the pita base with mayonnaise, evenly applying it to the inside. Sprinkle it with cheese crumbs on top, on which we then put ham slices, and cucumber slices on it.
  3. The most crucial moment is the careful folding of the roll. This should be done without haste, so that the thin, mayonnaise-soaked bread does not burst.

We wrap the finished “sausage” in a film or foil so that the seam is at the bottom, and send it to the refrigerator for half an hour to cool. Before serving, we cut the “sausage” into neat, even rolls, about 2 cm thick, and put them on a sandwich dish, sprinkled with herbs on top if desired.

  2. Unfold pita bread on the table and spread its entire area with a mixture of mayonnaise and garlic.
  3. Cover with lettuce leaves in a single layer. Read more:
  4. Defrost the sticks completely, remove the protective shell from them and finely rub them.
  5. Spread the crushed product over lettuce leaves. Make a mayonnaise net on top.
  6. Cover everything with a second pita bread. Spread it with the mayonnaise-garlic mixture as well. Finely grate the boiled eggs and sprinkle the leaf with them, distributing the eggs over the entire surface.
  7. Peel the cucumbers and chop them into strips, trying to make it as thin as possible. Arrange the cucumbers on top of the egg layer.
  8. Finely chop the greens and sprinkle it on top. Now roll everything into a roll, trying to make it as tight as possible. Keep it in the refrigerator for a couple of hours.

If someone dares to say that you can put anything in a snack roll and it will still be delicious - do not believe it! "Anything" can't be delicious! In the article: recipes for toppings for pita bread snack rolls, time-tested and culinary traditions.

Snacks have become the type of culinary art that makes it possible to combine the skill of the cook and the imagination of the artist. The main purpose of the snack table is to excite the appetite and prepare the body for the main meal. That is why there are certain requirements for snacks:

  1. The snack table should be varied and combine dishes
  • meat
  • fish
  • vegetable
  1. Preference is given to portion serving
  2. Portions should be small, in fact "one bite"
  3. Some snacks should be quite filling, as they can be served with alcoholic beverages.
  4. Dishes should be bright, beautifully decorated and attract attention.

Taking into account all the requirements of modern cooking, the thin Armenian lavash appetizer roll is an ideal cold appetizer for both festive and everyday tables.

#1 Lavash roll with cucumber

Let's start with the classics. The taste of cucumber pita roll is very reminiscent of an English cucumber sandwich. Great appetizer for summer holidays

  • cream cheese for sandwiches. The amount of cheese depends on the size of the pita leaf
  • fresh cucumber

How to cook:

  1. Wash and dry fresh cucumber. Cut it into very thin slices
  2. Expand the sheet of pita bread and grease well with cream cheese, remembering to step back a few centimeters from the edge

  1. Lay the cucumber slices tightly over the cheese. Lightly salt the cucumber with finely ground salt

  1. Roll up a tight roll. Be careful: the free edge of the pita should be on the outside of the future roll

  1. Before serving, fix each of the portioned rolls with a sandwich skewer.

A few notes on how to cut a pita roll

  • Initially, try to roll the roll tightly enough, avoiding air pockets.
  • Do not remove cling film before slicing
  • Use a very sharp knife dipped in acidified water (per 100 ml of water 1 tablespoon of lemon juice). Moisten the knife along the cutting edge
  • Remove the film after cutting portioned pieces

#2 Lavash roll with cottage cheese

  • thin Armenian lavash - 1 sheet
  • cottage cheese of any fat content - 100-150 g
  • fresh herbs (dill, basil, parsley, a few green onion feathers, etc.) - to taste
  • bell pepper (green and red) - 100-150 g
  • salt and spices - to taste
  • garlic - 1 clove

How to cook:

  1. Thoroughly mix the cottage cheese and garlic, previously passed through the press. If cottage cheese is dry, add 1 tablespoon of sour cream or natural yogurt without fillers
  2. Finely chop the washed and dried herbs

  1. Add the greens to the curd mass and mix thoroughly

  1. Wash the pepper, dry it, free from the stalks and seeds, cut into small cubes

  1. Unfold the pita leaf and carefully spread with curd-garlic dressing with herbs. Sprinkle colorful diced peppers on top.

  1. Pack the pita roll in cling film and place in the refrigerator for 30-40 minutes

  1. Cut the roll into equal portions. The minimum thickness of each is from 2 cm

#3 Lavash with greens

This appetizer is very reminiscent of the Greek spanakopita - triangle pies with a variety of fillings. In our case, pickled cheese and spinach are used as a filling - a tasty and healthy combination.

  • thin Armenian lavash - 4 sheets
  • fresh spinach - 500 g or frozen spinach - 250 g
  • pickled cheese - 150 g. The authentic filling recipe uses feta, but it can be replaced with cheese
  • onion - 100 g
  • fresh chicken egg - 2
  • salt and spices - to taste
  • wheat flour - 3-4 tbsp. l.

How to cook:

  1. Cut the onion into small cubes and saute in a small amount of vegetable oil until transparent.
  2. If using fresh spinach, wash and dry thoroughly. Cut not very finely, add to the onion. Spinach under the influence of temperature should “sit down” and this will be enough. Frozen spinach needs to be defrosted, squeezed out excess moisture and simply warmed up with onions for 5 minutes
  3. Grind pickled cheese in any convenient way: using a grater, fork, blender
  4. Add spinach and eggs to cheese and mix well.
  5. Gently fold a few tablespoons of flour into the mixture to hold the filling together and remove excess moisture. Stir in the flour gradually, the filling should not turn into a dough. In the classic spanakopita recipe, uncooked rice absorbs moisture.
  6. Lavash sheets cut into several identical strips. If pita bread has lost its elasticity, sprinkle it with water using a spray bottle

The unleavened wheaten flatbread gives a lot of options for preparing snacks: one of them is pita bread with melted cheese and cucumber. High-quality freshly baked pita bread is very plastic and durable at the same time.

White sauce is made from sour cream with crushed garlic, it can be applied and smoothed over the surface of the cake with a large tablespoon. Other spices are added to taste.

A tightly rolled roll is kept in the refrigerator for several hours. Cut into pieces, it does not get your hands dirty and becomes a great cold appetizer and just a godsend for a picnic or buffet table.

Ingredients

  • 3 sticks of melted cheese
  • 70 ml sour cream (mayonnaise)
  • 3 cloves of garlic
  • 2 cucumbers
  • 1 sheet of lavash
  • spices

Cooking

1. Processed cheese must be grated. So that it does not stick to your hands and a grater, it is recommended to freeze it in the freezer, but do not overdo it - for 20-25 minutes. You can also use processed cheese in boxes, but in this case it will have to be spread on a sheet of pita bread with a knife or spoon.

2. Prepare the sauce for pita bread. To do this, transfer sour cream into a deep bowl, add the garlic passed through the press. You can also add spices and spices, but in moderation, otherwise the taste of spices will prevail in the appetizer. Stir the sauce.

3. Spread a sheet of pita bread on the table, it should be even, without creases. It is important that the pita bread is fresh, otherwise it may break during folding. Using a cooking brush, apply sour cream sauce over the entire surface of the pita bread.

4. Spread the grated processed cheese evenly. By the way, its taste can be classic, creamy or with different additives - bacon, mushrooms, herbs, spices. From this, the taste of the roll will only benefit.

5. Wash fresh cucumbers and cut off the tails, if necessary, cut off the thin top layer of the peel if it is tough. Then grate the cucumbers on a coarse grater, the juice that is released in the process can be drained so that the roll does not get wet. Spread the grated cucumbers evenly over the entire surface of the pita bread.

Greek salad in pita bread: recipe with photo

A refreshing vegetable salad, which is very convenient to eat outdoors, wrapped in the thinnest layer of ruddy appetizing dough. For the Greek salad, prepare:

  • 0.5 kg of tomato (if you find cherry tomatoes, use them, they will not drain so much, and they taste sweeter);
  • 0.7 kg of cucumbers;
  • 2 sweet bell peppers;
  • 100 g medium sized olives
  • red lettuce onion - a couple of small heads;
  • 250 g of soft feta cheese (if not found, lightly salted cheese will do);
  • lettuce leaves - a few pieces, depending on servings.

Chop all the products for the salad into medium-sized cubes, and chop the onion and pepper into strips. Olives in the original version of the salad are added whole, but we have a salad in pita bread and for ease of use, you can cut each olive in half.

As for the salad dressing:

  • classic version - lemon juice + olive oil + salt, pepper in the proportion you like;
  • more original - mustard + honey + lemon juice + oil + garlic + spices.

Dress the salad, let it brew a little. Then form pita envelopes like pancakes. Put a lettuce leaf on each envelope, put a tablespoon of Greek salad and wrap it in a tube or in a pancake.

Eat immediately after wrapping, so that the envelope does not have time to become sour, and the salad does not stack.
