Restaurant average check. How to calculate the average check in a cafe? Restaurant "Navarro "c" - your delicious and affordable holiday

Browsing the Internet or leafing through guidebooks, you can find the ambiguous and at the same time incomprehensible restaurant term “average check”. What is hidden behind this digital screen? Let's figure it out.

Let's start with a dictionary. The average check is a digital indicator used by cafes and restaurants to orient guests according to the price segment of the establishment. This is an approximate price range, which should be guided by when choosing.

There are many methods for calculating the average check. In Europe, there is an unspoken rule that the average check is the cost of a full meal of two appetizers, a main course and a dessert without drinks and alcohol. Russia in general and Tyumen in particular are going their own way in this direction, which can be proudly dubbed "who goes where, the main thing is movement." For an average check, we easily give out both the minimum bill for a banquet (although this is a different world), and a figure taken from the head with the words “probably, approximately, approximately, something about that ...”.

Where to begin

The first question that needs to be answered when determining the cherished indicator is how many dishes to take into account in the calculation. Experts talk about different values, but the universal number is 2.5 meals per person. If you specify, then 3 - for men, and 2 - for beautiful ladies.

And what are we going to drink?

The question of drinks is ambiguous. If in Europe it is not customary to add them to the average bill, since unbranded water is usually served there for free, then in Tyumen in most places it will not be possible to quench your thirst without paying. So in the Russian expanses, the cost of the cheapest tea position is added to the food in the average check, since we are a northern country with a high level of consumption of this particular drink.

How to calculate the average check in Tyumen

Here we already have a general idea. But how do you count?

You can follow the path of the bookkeeper, adding up the maximum price of a dish and the minimum, dividing it all by the number of dishes. This is an ideal option for a balanced menu and an establishment that knows its place in the market.

A difficult but clear option is to follow the path of food compatibility. That is, 3 dishes combined with each other are selected. In Russian conditions, it is almost unrealistic, as it requires a large number of professionals from the world of gastronomy with an objective view of the restaurant market.

The universal way is to add up the prices of all the dishes on the menu and then divide by their total number. So it turns out the price of an average dish. This is the simplest, but at the same time superficial way of assessing.

The separate arithmetic method involves the calculation of average prices for dishes by sections. And then the creation of an average meal, usually from 3 courses: salad / appetizer / soup / or the arithmetic average of all three previous sections + main + dessert. At the moment, this method is considered optimal, but also laborious, as it requires a correct assessment of the strong sections in the menu.

Someone manages to calculate the average check by weight. To do this, calculate the average value of a gram of produced dishes. And then they usually multiply by the average consumption rate. Usually it is 500 grams. The roots of this calculation come from the Soviet system and are peculiar to factories, not restaurants.
But few people still take into account additional services from the institution: musical accompaniment, bread, service, and somewhere the entrance also costs money, and they also need to be added to the average check.

But as long as there is no unified rating system in Tyumen and even a hint of an understanding of the need for its introduction, we will enjoy the fantasies of restaurateurs and figures, sometimes taken from the ceiling.

And here, for example, Tyumen restaurant "Potaskui" calculates the average check using a restaurant automation system. Thanks to it, you can get daily average check values. This is indicative, but not without drawbacks, as it is based on dividing the daily revenue by the total number of guests. But customers can only drink tea or just try a salad, and this will be reflected in the final average bill.

In 2017, the average bill in restaurants in Russian cities with a population of over one million grew, while a year earlier there was a slight decline of 1%, according to the city information service 2GIS. In addition, 2GIS analyzed the interest of users in this segment of catering for 12 months and found out how the number of establishments in the 15 largest cities of the country has changed.

Average check in restaurants
Restaurants in million-plus cities have raised prices by 2% over the year - the average bill is now 1,259 rubles. In 2016, this figure was at the level of 1232 rubles. The amount of the average check is made up of the prices for the main menu dishes - salad / appetizer, first and / or second, drink or dessert and does not take into account alcohol. 5714 establishments provided information on the average bill to 2GIS, which is 94% of the total number of restaurants in the largest cities of Russia.

In Moscow, the average check in restaurants increased by 4% - from 1,502 rubles in 2016 to 1,569 in 2017. This is still the highest figure among the 15 largest Russian cities.

The prices rose the most in Volgograd (by 11% - 775 rubles against 701 a year earlier) and Omsk (by 10% - 963 rubles against 873 a year earlier). At the same time, food prices in Volgograd restaurants remain the lowest among Russian million-plus cities.

In St. Petersburg and Chelyabinsk, the average check remained almost at the same level as a year earlier - 1,105 and 925 rubles, respectively.

In some cities, this figure has even declined. For example, in Yekaterinburg by 2% - from 1085 to 1059 rubles, and in Perm by 4% - from 951 to 913 rubles.

Interest in catering
The trend of 2016 - the growth of interest in fast food establishments - continued in 2017. Analysts studied the search statistics for different categories of public catering in 2GIS, taking the total number of views of establishments in all versions of the city information service as 100%. If in 2016 cafes and fast food restaurants accounted for 12.7%, then in 2017 it was already 14.7%. This is the most significant jump in user interest in a year in this area.

Interest in coffee houses and patisseries also increased (from 6.1% to 7.1%), as well as in the delivery of ready meals (from 6.4% to 6.8%).

At the same time, restaurants hold the second largest share of searches with a figure of 22.2%. They are second only to cafes, in which users show the greatest interest and search for them in 24.2% of cases.

Number of restaurants
As in the previous year, in 2017 the number of restaurants in general, according to 2GIS, increased. The growth was 3% - now there are 6101 such establishments in the 15 largest cities, while a year earlier there were 5919.

In Moscow, there were 3% fewer restaurants - 2330, while a year earlier there were 2393. Nevertheless, the capital of Russia is still the leader in the number of such establishments.

There were also fewer restaurants in Krasnoyarsk - by 2% - now there are 126 instead of 129. And also this indicator in Rostov-on-Don decreased by 1% - from 198 to 196 establishments.

In all other 12 million-plus cities, the number of restaurants has increased. The largest growth was in Nizhny Novgorod (17%: from 137 to 160), Volgograd (11%: from 92 to 102) and Voronezh (11%: from 87 to 97).

Note. The percentage of growth (or reduction) of establishments does not mean that exactly that many new restaurants opened (or closed), this is a multidirectional process. In addition, other factors influence the change in the number of organizations in 2GIS, for example, a change in the format of establishments, a temporary suspension of activities due to repairs (or opening after completion of work), etc.
