Spread cream cheese on top of the bananas.

If the cream is watery and the slide does not work out, you should put it in the refrigerator, and when it starts to harden put it on top of the cake. At the end, grind the remaining biscuit in a blender and cover the cake on top.

Step-by-step photo of making chocolate biscuit base for Mole cake

I saw this cake recipe from Elena Funk from Germany and decided to make it as close to the original as possible. Therefore, I will describe here this particular biscuit base for the Mole cake, although the base can be any, even an ordinary classic biscuit.

1. Separate the squirrels and yolks, put the squirrels in the refrigerator for a while. Beat 4 egg yolks with boiling water until fluffy

Continuing to beat, add sugar and vanillin (about half a pack weighing 1g). Beat the yolks with sugar for 3 minutes.

2. Next in line are the egg whites, we beat them into a dense foam, which easily remembers the shape and does not spread.

3. Put the yolks in a large container (to make it convenient to stir), put the foam from the proteins on top of them, do not mix!

4. Separately, mix the sifted flour, cocoa, baking powder and put this dry mixture on top of the beaten eggs.

5. Now with careful smooth movements with a spoon (not a mixer at all !!!) mix all the ingredients for the base of the Mole cake.

6. The oven should already be warmed up to 180 degrees, the form is greased and lined with oiled baking paper. Laying out our dough

and put the chocolate biscuit to bake in the oven at the specified temperature, baking time 30 minutes.

7. When the biscuit has cooled down, make a mink for a mole out of it:
Carefully remove the entire crumb with a spoon, leaving the bottom and sides intact, the thickness of the sides should be about 1-1.5 cm.

Grind the pulp into crumbs.

Step-by-step preparation of creamy curd cream soufflé for mink mole cake

1. Pour dry gelatin with cold water (half a glass will be enough).
2. Whip sour cream with sugar (or just whipping cream without sugar, their fat content should be at least 30%), beat into foam.

3. Grind one banana with a fork or blender, add to the cottage cheese (I rubbed them together with the cottage cheese with a blender), if you whipped some cream without sugar, then add sugar to the cottage cheese.

4. Grate a bar of cold chocolate on a coarse grater.
5. When the gelatin swells, it will need to be heated over low heat until the lumps dissolve.
6. Add chocolate to cottage cheese with bananas, mix.

7. Pour the gelatin into the curd-chocolate-banana mass in a thin stream, mix well and add whipped cream or sour cream to them. Put creamy - curd cream soufflé with chocolate chips to harden in the refrigerator.

Assembling Mink Mole Cake:

1. We put 4 whole peeled bananas in our base - a mink for a mole, in some places the banana will have to be cut.

2. Pour bananas and voids in the cake with a part of the cream that begins to harden (do not forget to put it in the refrigerator again, for the speed of solidification, I put it directly in the freezer).

3. Sprinkle a little bit of bananas on top of the biscuit crumbs.
4. Wait for the cream to set, as in my photo

and lay it out in a slide, the cake is already beginning to resemble a mole mink,

5. it remains only to cover it with brown crumbs from the biscuit.

6. Put the wormhole in the refrigerator for 4 hours until the cake hardens, it is better not to cut it. If desired, the mink itself can be sprinkled with cocoa on top and decorate the cake with bananas with a handful of chopped walnuts - you get pebbles.

Preparing the Ingredients

We place the eggs in a deep container and beat them with sugar until a white thick foam forms.

Continue beating the resulting egg-sugar mixture at high speed for 1-2 minutes.

Add soft margarine and vanilla sugar to the resulting dough - beat thoroughly with a mixer until a homogeneous consistency (there should be no lumps of margarine).

We lay out the finished dough in a pre-prepared baking dish (we generously grease the parchment with margarine). Then we send the form with the dough to the oven, preheated to 180 degrees.

To prepare the curd filling, you need to combine the cottage cheese with kefir and mix with a spoon.

In the meantime, pour gelatin into a small container and pour cold milk - leave for 20 minutes.

Then add condensed milk and vanillin to the curd-kefir mixture - mix with a spoon.

Beat the curd filling thoroughly with a blender at high speed.

We put the swollen gelatin in the microwave for 1-2 minutes or in a water bath for 5-10 minutes. Stir the mixture with a spoon until it becomes homogeneous.

Combine the resulting gelatin mixture with the finished curd cream and beat thoroughly with a mixer.

In the meantime, we take out the chocolate biscuit cake from the oven, pierce it with a fork in 3-4 places and leave it on the table until it cools completely.

In the cooled biscuit, carefully cut out a small depression 1-2 cm.

We apply the cream on the biscuit, filling the recess.

We put peeled bananas on the cream.

We spread the remaining cream over the bananas, creating a hill.

We transform the rest of the cake into crumbs and sprinkle them on top of the cake.

Tips for making the Mink Mole cake according to the recipe with a photo step by step at home:

  1. To prepare curd cream, you need fatty soft cottage cheese (fat-free granular will not work). Cottage cheese can be replaced with Philadelphia or Mascarone cheese.
  2. Baking soda can be substituted for baking powder.
  3. Bananas should be sweet and ripe, it is better to buy overripe ones.
  4. In order for the biscuit to turn out soft and not to settle after you take it out of the oven, you need to sift the flour through a sieve, and add the kefir last, gently stirring with a spoon.

Mole Mink is a tasty and juicy dessert, what it owes, first of all, to bananas, and where do they come from in a wormhole - who knows?

However, if such a treat may not appeal to an underground dweller, then sweet-sweetened gourmets will certainly ask for more.

Mole Mink Cake - General Cooking Principles

Only one biscuit cake is baked and always dark (chocolate) color. The dough is tinted with cocoa powder that does not contain granulated sugar. To make the cake tall, it is better to use round molds of small diameter (up to 23 cm) for baking. You can also take rectangular containers, but so that the biscuit baked in them does not come out too low, fill the form with dough at least two-thirds of the height.

Biscuit cake, after complete cooling, requires special preparation. From it you need to make a kind of blank. To do this, along the entire circumference of the cake, stepping back from the edge to one and a half centimeters, they make a deep, but non-through cut. Then carefully select the pulp with a spoon or hands. It turns out a kind of "pot", along the bottom of which bananas are laid out.

The cream is spread on top of the fruit and formed into a slide. So that it does not crawl, it is advisable to prepare dense creamy masses. It is recommended to add a thickener to sour cream or butter creams.

The cream slide is covered with small crumbs from the biscuit crumb. It is not easy to crumble a fresh biscuit, so it should be dried in the oven before grinding.

The cake does not require additional decoration, but if desired, it is poured over with melted chocolate or sprinkled with shavings from chocolate bars.

Mole Mink Cake - Cooking Tricks and Useful Tips

The sides of the cake are not covered with cream and, if the form is sprinkled with semolina, blotches will be noticeable on the sides. To make the cake look aesthetically pleasing, use cocoa powder to sprinkle the oil layer.

It is impossible to finely crumble the crumb of a fresh biscuit even with a blender. Lightly dry the pieces of the biscuit removed from the middle in the oven and chop them only after they have cooled completely.

Be sure to grind the cottage cheese used in the preparation of the cream through a sieve. This will help get rid of the grains and make the creamy mass more tender.
