Story

In pre-Columbian tropical America, cocoa beans were used to make cold, often unsweetened drinks that had little in common with modern cocoa. They were drunk only by men of noble birth, warriors, shamans and people intended for sacrifices. Because of its alcohol content, the drink was not given to women and children.

In those days, chocolate was sold pressed in large slabs, from which pieces were broken off and sold by weight. These slabs had no added sugar or milk and were not meant to be eaten. The drink was made with the addition of water and sugar according to the taste and desire of the client, as it was very expensive. It was prepared in a special vessel with a short spout, a long wooden handle and a lid with a hole for a beater to froth it well. The hot chocolate was thick and very greasy, with a film of oil floating on its surface that had to be skimmed off with a spoon. In the 18th century, people began to drink chocolate from cups on saucers so as not to spill an expensive drink.

Hot chocolate was strong enough, but subsequently milk was added to it (the British first did this in 1700), which gave the chocolate the necessary lightness. Since then, chocolate has become much cheaper and has become available even to children.

In the middle of the 18th century, the first confectioneries opened in France, where everyone could enjoy their favorite drink. By 1798, there were already about 500 such establishments in Paris. And in England, the famous chocolate clubhouses became so popular that they even eclipsed tea and coffee shops.

In 1765, chocolate was finally known in the United States thanks to John Hannon, the British ambassador, as well as Dr. James Baker, who, on a par with Hannon, built the first chocolate factory in America in Massachusetts.

In 1828, the Dutch chemist Konrad Johann van Houten made a revolutionary invention. His press made it possible to squeeze out excess oil from cocoa powder, it became looser and easily dissolved in water and milk. The quality of the hot drink has improved. But the most important thing was that the addition of the resulting cocoa butter to the old powdered chocolate made it possible to harden it. This is how modern solid chocolate was born.

Since 1848, almost simultaneously, all European countries switched to the chocolate recipe, which is still used today. 30-40% cocoa butter was added to grated cocoa with sugar and vanilla and real “hard” chocolate was produced.

The era of hot chocolate is over.
