Ingredients:

  • chilled crab sticks / crab meat (500 g);
  • boiled squid, fillet (400 g);
  • canned pineapple (200-300 g);
  • canned corn (200-300 g);
  • boiled chicken egg (3-4 pcs.);
  • fresh cucumber (2-3 pieces);
  • green onion (for decoration, 1 bunch);
  • dill / parsley (for decoration, 1 bunch);
  • mayonnaise (200 g);
  • salt, pepper and other seasonings (to taste).

Cooking:

  1. Squid fillet cut into cubes.
  2. Open the jar of pineapple and drain the syrup. We cut into cubes.
  3. Open the can of corn and drain the liquid.
  4. Eggs are peeled, passed through a vegetable cutter or cut into cubes.

  • fresh squid, fillet (400 g);
  • frozen shrimp (300 g);
  • fresh octopus (300 g);
  • green beans (250 g);
  • canned peas (100-200 g);

  • mango (1 pc.);
  • chicken egg (2 pcs.);
  • lemon (2 pcs.);
  • parsley (1 bunch);
  • mustard (1 tablespoon);
  • olive oil (for dressing, 50-70 ml);
  • dried parsley (1 tsp);
  • sugar (1 tsp);
  • salt and ground pepper (to taste);
  • bay leaf (to taste);
  • black peppercorns (to taste).

Cooking:

  1. My squid fillet and clean from the films. Dip in boiling salted water and cook for 1-2 minutes after boiling again. As soon as the meat turns white - take it out. Cool down.
  2. Wash the shrimp and put them in boiling salted water. Add bay leaf and peppercorns. Cook for 3-5 minutes after boiling again. We take out, cool and clean.
  3. We wash the octopus and lower it into boiling water. Add peppercorns and bay leaf. Cook until cooked (small carcasses - 5-10 minutes, medium - 20-25 minutes. Cook the tentacles for no more than 10 minutes). Salt the water 5 minutes before the octopus is ready. Leave the clam to cool in the broth.
  4. Crab sticks cut into cubes.
  5. Boil green beans in boiling salted water until tender (5-7 minutes after boiling again). We recline in a colander and cool.
  6. My lemons. Remove the zest from one lemon with a grater and squeeze the juice. Cut the second lemon into large slices.
  7. Wash and clean carrots. Cut into thin strips (you can use a knife for Korean carrots).
  8. My mango and remove the stone. Cut the pulp into cubes.
  9. Cut the cooled squid fillet into rings.

  • frozen peeled shrimp (400 g);
  • frozen sea scallops (400 g);
  • frozen octopus (400 g);
  • parmesan cheese (150 g);
  • grapefruit (1 pc.);
  • orange (1-2 pieces);
  • strawberries (200 g);
  • Frize lettuce / watercress / other (100 g);
  • arugula / other fresh herbs (1 bunch);
  • parsley (1 bunch);
  • onion (2-3 pieces);
  • lemon (1 pc.);
  • butter (200 g);
  • vegetable oil (50-70 ml);
  • olive oil (50-70 ml);
  • liquid honey (1 tsp);
  • dry white wine (100 ml);
  • garlic (6-8 cloves);
  • soy sauce (2 tablespoons);
  • capers (50 g);
  • pine nuts (50 g);
  • Provencal dry herbs (to taste);
  • salt and pepper (to taste).

Cooking:

  1. Defrost octopus, scallops and shrimp naturally at room temperature (if the seafood is covered with a thin layer of ice, you can take them out of the package, put them in a bowl of water and let them thaw. This will take about 30 minutes, depending on the size of the carcasses).
  2. Wash parsley, dry with a paper towel and finely chop.
  3. Peel and finely chop the onion. We divide into 2 parts. We will need one half for cooking octopuses, the second for scallops.

  5. In a small saucepan (stewpan) put 100 g of butter, half the onion and parsley. Pour in the wine, add salt, pepper and Provencal herbs to taste. Add sea scallops, stir. Bring the mixture to a boil, cover and simmer for about 3-5 minutes. Remove from fire and cool.
  6. Cut the octopus into large pieces. Drain the brine from the capers. Squeeze juice from lemon. We heat vegetable oil in a frying pan, put octopuses and onions. Stir and fry over low heat for about 2-3 minutes. Add half the garlic, capers, pine nuts, soy sauce and 2-3 tbsp. l. lemon juice. Season to taste and simmer for another 2-3 minutes, stirring constantly. Cool down.
  7. Put 100 g of butter in a preheated pan, add shrimp, garlic, salt, pepper and Provence herbs. We water 2-3 tbsp. l. lemon juice. Fry over medium heat for about 5 minutes, stirring constantly. Cool down.
  8. Peel and pit the orange and grapefruit. The pulp is cut into small slices.
  9. My strawberries, remove the tails and cut the berries into halves or quarters.
  10. Parmesan three on a fine grater.
  11. Lettuce Frize and wash my arugula, dry with a napkin and chop (not very finely).

Cooking:

  1. Preparing salad dressing. We clean the garlic and pass it through a press. Squeeze the juice from the lemon (pre-cut a few thin slices to decorate the dish). In a bowl, combine garlic, lemon juice, olive oil and soy sauce. Add salt and pepper to taste. Mix thoroughly.

  • slightly salted salmon, fillet (400 g);
  • boiled peeled shrimp (400 g);
  • red caviar (200 g);
  • avocado (3 pcs.);
  • grapefruit (2 pcs.);

  • lemon (0.5 pcs.);
  • leek / parsley / other fresh herbs (1 bunch);
  • Aioli sauce (for dressing, to taste);

Aioli sauce recipe (Mediterranean cuisine). This sauce can be easily prepared at home. Peel and press 2-3 cloves of garlic through a press. Squeeze the juice from half a lemon. Mix garlic and lemon juice with 1 raw egg yolk in a mortar and grind until smooth. Add 0.5 teaspoon of mustard, a pinch of salt and white ground pepper. Mix thoroughly.
