Hello my dear entertainer chefs! This spring I really liked zucchini. In the sense of dishes made from them 🙂 Today I picked up zucchini again in the store. Therefore, today we will cook them. I will tell you how to fry zucchini in a pan and share tried and tested recipes.

By the way, friends, did you know that zucchini is a bushy form of a pumpkin? To be honest, this was a real discovery for me. And I thought that they are closer to cucumbers 🙂 Zucchini sailed to us from Mexico. It was here that they were prepared 3000 years ago. But in Europe they appeared only in the XVI century. Here's a little excursion.

Zucchini has a low energy value: only 24 kcal per 100 g of product. There are 0.6 g of protein, 4.6 g of carbohydrates and only 0.3 g of fat.

That is why nutritionists recommend losing weight to enrich their diet with this food product. There is retinol, vitamins of group B, C, tocopherol. Zucchini is also rich in dietary fiber, which are useful in losing weight.

How to choose zucchini

This vegetable crop, perhaps, is the only one that is best consumed in an unripe form. Choose zucchini up to 20 cm long and weighing no more than 200 grams. Their skin should be smooth, thin, without dents or other defects.

Overripe vegetables have a thick skin and many seeds inside. And their pulp is fibrous (not very tasty). I advise you to store this product unwashed. At home, I take them out of the bag and put them in the refrigerator, because. in the package they give perspiration and deteriorate faster. The recommended shelf life is about a week.

How long to fry zucchini

Young zucchini, sliced ​​​​vegetables, fry on each side for 1-2 minutes over medium heat. Time of course also depends on the thickness of the circles. Do not cover the vessel with a lid. It is better to roll the circles in flour beforehand. And be sure to salt the vegetables before heat treatment.

How to fry zucchini with garlic in a pan

Love to spice vegetable dishes with garlic? Then this dish is perfect for you. It will give the vegetables a piquancy and, of course, an amazing aroma.

To prepare this dish, make sure you have:

  • 2 pcs. medium-sized zucchini;
  • 3-4 tablespoons of mayonnaise;
  • 5-6 cloves of garlic;
  • salt + spices (to taste);
  • wheat flour;
  • oil for frying;
  • dill greens.

We wash the vegetables, cut into circles, salt and leave for 10 minutes. In the meantime, prepare the sauce with garlic and mayonnaise. Chop the garlic cloves with a garlic crusher, mix with mayonnaise. Add chopped herbs and spices to your sauce to taste.

After 10 minutes, as the vegetable gives juice, drain the excess liquid. Then dip each circle into a container with flour and put it in the heated oil in a frying pan.

After frying, lay each circle first on a paper towel. Then transfer to a large plate and brush each slice with garlic-mayonnaise sauce. Keep in mind that this dish tastes better when it sits for a while and soaks in the sauce. It doesn't taste as good when hot as it does when chilled.

How to fry zucchini in a pan in batter

Ingredients:

  • ½ cup flour;
  • 4 egg whites;
  • salt;
  • vegetable oil;
  • garlic;
  • greenery;
  • ½ cup warm water.

Beat egg whites until foamy. Mix separately water with flour and ½ tbsp. vegetable oil. Then carefully connect all these components. That's all, your simple batter is ready.

We cut the zucchini into circles or thin sticks (well, as you like). Salt and leave for 7-10 minutes. Then drain the released liquid.

Dip each piece in the batter and place in the pan. First you need to pour a little vegetable oil and heat well. Fry on both sides until golden brown.

Let the excess oil drip off before putting the finished pieces on a plate. To do this, lay the zucchini on a paper towel. After that, crush the fried zucchini with chopped garlic and parsley or dill. It will turn out indescribably tasty and appetizing. With a slice of whole grain bread, it will be a real bliss. Only then, if you go on a date, then chew mint gum 🙂

Fried zucchini Venetian style

To prepare this exotic dish, stock up:

  • 1 zucchini;
  • a couple of tablespoons raisins (preferably pitted);
  • 3 sprigs of mint;
  • 3 tbsp vegetable oils;
  • 1 tbsp wine vinegar;
  • 2 cloves of garlic;
  • ½ tsp any sugar (brown or white);
  • 1 tbsp peeled pine nuts;
  • salt + freshly ground black pepper.

First we prepare the marinade. Set aside half of the mint leaves to garnish the finished dish. But the second half of the leaves chop with a knife and mix them with raisins.

Peel 1 garlic and finely chop the clove with a knife. Add it to the mint-raisin mixture. Pepper this mass lightly. Then add a spoonful of wine vinegar and sugar. Mix all the ingredients thoroughly and leave the mixture for half an hour to infuse.

Cut the vegetables into slices 5-6 mm thick. I don't recommend cutting it. In a skillet, sauté the remaining crushed garlic clove in hot oil. Then remove it. And in flavored oil, start frying the zucchini slices.

Put the finished circles on a paper towel. We don’t need extra fat, we have enough of our own 😉 After a little salt the vegetables. Then transfer the zucchini to a plate, pour over the marinade and mix. Do this very carefully, because the fried zucchini is tender and can fall apart.

After all this procedure, leave the zucchini for an hour. And then put them on a plate, sprinkle with pine nuts and garnish with the remaining leaves of fresh mint. Well, what can I say: it will turn out not just delicious, but divinely delicious. You should definitely try this, friends. And then describe your impressions of this culinary masterpiece.

How to fry zucchini with tomatoes and garlic

Need to prepare:

  • 0.5 kilos of zucchini;
  • 2 large tomatoes;
  • 2 cloves of garlic;
  • 1-2 eggs;
  • 1 tbsp mustard;
  • vegetable oil;
  • 10 gr green onions;
  • salt + freshly ground black pepper + sugar to taste.

My zucchini, you can peel and cut into circles. Then add a little salt and pepper, and then leave for 5-7 minutes.

This time you need to boil the hard-boiled egg, then remove the bowl with the egg from the heat and take up the zucchini again. We put a frying pan on the fire, pour oil into it, and then put the circles here. And fry vegetable rounds. Put the finished product on a plate, let it cool.

Now let's make the sauce with spices and tomatoes. We clean the tomatoes from the skin, scalding them with boiling water and finely chop them. Then add mustard here, 1 tbsp. vegetable oils, salt and sugar with pepper. Mix all ingredients well.

Pour the fried zucchini on top with sauce and sprinkle with chopped green onions. And next to this vegetable dish lay out a chopped egg. Summer dinner is ready. Bon appetit!

  • milk - 250 ml;
  • egg - 1 pc.;
  • flour - 80-90 g;
  • hard cheese - 150 g;
  • mayonnaise - 150 g;
  • garlic - 3 cloves;
  • refined vegetable oil - 100 ml;
  • salt;
  • dill and basil greens.

Cooking

We make a batter from milk, eggs, flour and salt, mixing all the ingredients until smooth.

Cut the zucchini into circles no more than one centimeter thick (less possible). Then dip in batter and fry in a pan with refined vegetable oil until light brown. Lay out on a paper towel to let the fat drain.

Grated on a fine grater, mix the cheese with mayonnaise and finely chopped garlic.

Recipe for fried zucchini with garlic:

  2. To prepare fried zucchini, I usually take young zucchini - they have a thin and tender crust and do not need to be peeled, and they also do not need to be freed from seeds, since they are not felt at all with their milky ripeness.
  3. So, we only have to wash the zucchini and cut into rings, 0.5 - 0.8 cm thick.
  4. Put them in a bowl, salt and mix.
  5. Prepare garlic - mince it.
  6. Pour vegetable oil into a frying pan, heat it up.
  7. Let's start frying the zucchini. Dip each ring on both sides in flour, spread on hot oil and fry on both sides until golden brown. Of course, if you have to cook a lot of zucchini (suddenly you have a large company gathered), then the frying oil needs to be changed at least once, as the flour usually starts to burn.
  8. Put the finished zucchini on a large flat plate or dish. Further, at your request. I do it this way and that. You can put a little chopped garlic on each zucchini and grease with mayonnaise. And you can make garlic sauce by adding chopped garlic to mayonnaise and grease the zucchini with this sauce. And so, we seasoned the fried zucchini with garlic and mayonnaise, put the next portion on them, season them and continue like this until our rings run out.
