    Melt and cool the butter. Beat eggs well with sugar. Combine warm kefir, butter and beaten eggs. Peel bananas, cut into cubes and mix with kefir-egg mixture. Separately sift flour, add salt and baking powder. Heat vegetable oil in a wide frying pan. Next, carefully but quickly (no more than 30 seconds, otherwise the pancakes will not rise), combine and mix the dry mixture with the liquid mass. Don't let the lumps in the dough bother you, don't mix the dough anymore. Spoon the batter into the skillet, cover with a lid and fry the pancakes for 2 minutes on each side. After turning the pan with pancakes, it is no longer necessary to cover with a lid.

    Fritters with cottage cheese

    Ingredients:
    300 ml of kefir,
    100 g cottage cheese,
    1 tbsp Sahara,
    1-2 eggs
    1 tsp soda,
    2-3 stack. flour,
    ¼ tsp salt.

    Cooking:
    Mix kefir with soda, add sugar and a pinch of salt, mix well and add eggs and cottage cheese. Beat with a mixer, add pre-sifted flour, knead a thick homogeneous dough, resembling fatty sour cream in consistency, and fry the pancakes in hot vegetable oil on both sides until golden brown.

    Fritters on kefir without soda with fruit

    Ingredients:
    1 stack kefir,
    2 stack flour,
    1 egg
    2 tbsp Sahara,
    1 small handful of walnut kernels,
    ½ apple
    30 g raisins,
    1 kiwi
    2-3 tbsp raspberry jam.

    Cooking:
    Pour kefir at room temperature into a deep bowl, add an egg. Ignite the walnut kernels in a dry frying pan, peel them by rubbing between the palms, and send them to the dough. Pour boiling water over the raisins, let stand, then drain the water, squeeze the raisins and add to the dough. Peel the fruit from the skin. Cut the kiwi into thin half rings, the apple into small cubes. Put the whole apple and half of the chopped kiwi into the dough and sprinkle with sugar. Stir the dough until smooth with a whisk. Then gradually add flour to the dough, bringing it to the consistency of thick sour cream. Heat the pan well and spread the dough in portions on it with a tablespoon, leaving a small space between them. Fry the pancakes over medium heat, covered with a lid so that they do not remain raw inside due to the juicy filling. When the pancakes are browned on one side, turn them over and fry them on the other side. Put the finished pancakes on portioned plates, pour over them with raspberry jam and decorate with kiwi slices.

    Fritters with carrots and orange

    Ingredients:
    1 liter of kefir,
    200 g cottage cheese,
    400 g flour
    3 eggs,
    100 g sugar
    1 tsp soda,
    1 tbsp honey,
    500 g carrots
    1 orange.

    Cooking:
    Grate the carrots on a coarse grater, remove the zest from the orange and put everything in a pan with vegetable oil. Literally in a minute, add to this mass the juice of ½ orange, 1 tbsp. honey and simmer for 15 minutes. To prepare the dough, beat eggs with sugar, add kefir, cottage cheese, soda and flour. Using a blender, make puree from carrots, add it to the dough and mix well. Spoon the batter into the preheated pan with vegetable oil and fry on one side covered, then turn over and fry on the other.

    Spicy pumpkin fritters with ginger and cinnamon

    Ingredients:
    150 ml of kefir,
    200 g pumpkin,
    1 apple
    100 g semolina,
    3 tbsp raisins,
    1 egg
    1 tsp ground ginger,
    1 tsp ground cinnamon,
    ¼ tsp salt.

    Cooking:
    Pour semolina, cinnamon, ginger, salt into kefir. Stir and set aside for about 10 minutes so that the semolina swells. Grate the pulp of pumpkin and apple on a fine grater. Combine the kefir dough with the fruit and vegetable mixture, add the egg, raisins scalded with boiling water and mix. Spoon the mass into a hot frying pan with vegetable oil and fry on both sides until golden brown.

    Buckwheat pancakes with cheese

    Ingredients:
    5 tbsp buckwheat flour
    3 tbsp wheat flour
    1 stack kefir,
    3 eggs,
    1 tbsp Sahara,
    1 tsp baking powder
    salt - to taste,
    fresh herbs, nuts, melted cheese - optional.

    Cooking:
    In a deep bowl, mix buckwheat and wheat flour, salt, sugar and baking powder. Separate the yolks from the proteins and mix with kefir. Whip the whites into a dense foam. Pour the egg-kefir mixture into the dry base and mix until the lumps disappear. Pour the whites into the dough and mix gently. Spread portions of the dough on a hot, oiled frying pan, slightly spreading them to a thickness of 0.5-0.7 cm. Place a piece of melted cheese on the spread dough (add greens and nuts to taste), pour dough on top and fry for 5 minutes with each side.

    Pancakes on kefir with apples

    Ingredients:
    1 stack flour,
    1 egg
    1 stack kefir,
    100 sour cream
    1 apple
    1 tbsp Sahara,
    soda on the tip of a knife
    salt - to taste.

    Cooking:
    Grate the peeled apple on a coarse grater. From flour, kefir, eggs, salt, soda and sugar, knead the dough. Add grated apple to it, mix and bake pancakes in a preheated pan with vegetable oil on both sides until golden brown.

    Fritters with meat sauce

    Ingredients:
    For test:
    350 ml of kefir,
    3 eggs,
    1.5 tsp soda,
    1 tsp salt,
    1 tsp Sahara,
    300 g flour.
    For filling:
    500 g of any minced meat,
    1 onion
    10 g greens
    ½ tsp salt,
    ¼ tsp spices for meat.

    Cooking:
    Add eggs to kefir, beat and add sugar and salt. Then add soda and stir. Then gradually add, stirring constantly, flour. Knead a homogeneous dough and leave for 10-15 minutes. In the meantime, peel the onion, chop and mix with minced meat, salt, pepper, add spices and herbs. Spread the dough with a tablespoon on a preheated pan with vegetable oil. Put 1 tsp on each pancake. with a pile of minced meat. Gently pour another ½ tbsp over the minced meat. dough and cover them with minced meat. Bake pancakes over medium heat under a lid, first on one side until golden brown, and then turn over and bake for another 2-3 minutes on the other.

    Pancakes with mushroom sauce

    Ingredients:
    1 liter of kefir,
    2 eggs,
    2 tbsp Sahara,
    1 tsp soda,
    1 pinch of salt
    4 tbsp vegetable oil,
    flour,
    mushrooms fresh or frozen.

    Cooking:
    Mix kefir, eggs, salt, sugar in a deep container. Add soda to kefir, whisk and add flour little by little, stirring constantly so that there are no lumps. The consistency of the dough should be similar to liquid sour cream. Finally, add vegetable oil to the dough. Boil the mushrooms and finely chop. The more mushrooms you take, the more mushroom flavor the fritters will have. For 500 ml of dough, feel free to take 500 g of mushrooms. Mix the mushrooms with the dough and fry the pancakes in a preheated pan with vegetable oil on both sides until cooked.

    Thick pancake pancakes in a slow cooker

    Ingredients:
    300 g ready-made crumbly buckwheat porridge,
    1 egg
    1 bunch of green onions
    200 g of kefir,
    100 g cottage cheese,
    100 g buckwheat flour,
    salt, pepper, soda - to taste,
    garlic - optional.

    Cooking:
    Add 1 egg, cottage cheese, a bunch of chopped onions to buckwheat, then add buckwheat flour, kefir, soda, salt and pepper to taste, add a little garlic passed through a press. Stir and let the dough stand for 30 minutes so that the flour swells. Put a little dough in a greased multicooker bowl, set the "Baking" program and fry the pancakes for 7-10 minutes on each side with the lid closed. Serve ready pancakes with sour cream, pickled cucumbers or salted fish.
