Any fruit is suitable for making drinks, but the most delicious liqueur is obtained from red sweet plums, the Hungarian, Renklod, and Canadian varieties. Of the yellow varieties, the mirabelle plum is best suited.

Plum preparation

Before you make slivyanka at home, you need to properly prepare the fruit. The quality of the drink will depend on this.

To prepare homemade liqueur or plum tincture, it is better to take slightly overripe fruits. But they should not be too ripe, otherwise the high content of pectin will turn everything into a jelly-like mass.

plum recipes

There are different recipes for liqueurs made on plums: sweet and not very, strong and light. Consider the best ways to make plums.

Classic slivyanka recipe without vodka

In this recipe, the seeds from the plums are best removed. Plum is recommended to take red varieties.

You will need:

  • Peeled plum fruits - 6 kg.
  • Granulated sugar - 2.8-3 kg.
  • Water - 3 glasses.

Cooking instructions:

  • Cut the plums into slices, cover them with sugar, fill with water and mix everything thoroughly. When the sugar has melted, pour the mass into a pre-prepared glass bottle.
  • Seal the neck of the vessel with a breathable material: bandage, gauze, light clean cloth.
  • Remove the container in a warm and dark place for 2-3 days.
  • After a specified period of time, the fermentation process should begin. This will be noticeable by the resulting foam and a sour smell. The fabric stopper must be removed, and a water seal should be put on the neck of the vessel. In home cooking, ordinary medical gloves are often used as a water seal. On one finger you need to make a small hole for air to escape. Wearing a glove, put the container back in a dark place.
  • After the fermentation process is over (the glove deflates), filter the liquid and separate the wort.
  • Pour the resulting transparent liquor into bottles and send it to ripen in a cellar or other dark and cool place for 2 months. After the expiration date, the plum is ready.

Plum liqueur prepared without vodka is not very strong (about 16 degrees). It has a pleasant sweetish taste with sourness and a pronounced plum aroma. If you cook homemade liquor without yeast with pits, then notes of bitterness will appear in the taste.

Such a drink can be served with white meat, cold appetizers and desserts. Closed bottles are stored up to 2 years. An open plum can be stored in the refrigerator for no more than 10 days.

Recipe for vodka

Slivyanka on vodka cooks faster. This method is suitable for those who like stronger alcoholic drinks. Plums can be used both peeled and with pits.

Ingredients:

  • Ripe plum - 1 kg.
  • Vodka - 400-500 ml.
  • Granulated sugar - 350-400 g.

Prepare in advance clean glass jars in which you will make the liqueur.

On a note! The entire process of making homemade plums should take place under sterile conditions.

Cooking instructions:

  • Rinse and dry plums. If they are large, you can cut them into 2-4 parts.
  • Lay the fruits in layers, filling each layer with sugar.
  • Cover the filled jars with gauze and put them in a dark, warm place for a day or two.
  • During this time, the plum should give juice. In order for the fruits to be completely saturated with it, the containers must be shaken every 4-5 hours.
  • After 2 days, pour vodka into the containers so as to fill them to the brim.
  • Close the jars with lids and put them in a dark, cool place for 1 month.
  • After that, uncork the containers, strain the tincture, separating the fruits, and pour the filtered liquid into bottles. Slivyanka is ready to use.

This homemade sugar and vodka plum recipe can be modified to your liking. To get a sweeter liquor, the amount of sugar is increased. You can also add some berries and spices to the plums for aroma and rich taste. If there is no vodka, it is quite acceptable to make a plum liqueur on moonshine. You can store the tincture for a year in well-corked bottles.

Bitter-sour plum

Not everyone likes sweet liquor. For those who appreciate tart liqueurs with bitterness and sourness, the following recipe is suitable. Unsweetened slivyanka is prepared at home also with vodka. You can replace vodka with diluted alcohol or moonshine. In this recipe, it is very important that the plums are ripe and not too sour, otherwise the drink will not be very pleasant.

You will need:

  • Plums - 1 kg.
  • Vodka - 400-500 ml.

Cooking process:

  • Rinse the plums, make cuts on them, you do not need to peel them from the stones.
  • Put the fruits in jars and fill with vodka.
  • Close the container with lids and put them in a cool dark place for 1.5 months.
  • After the expiration date, filter the contents of the jars. Pour the resulting liquor into bottles. Slivyanka is ready, it can be consumed immediately after the spill.

The drink is ideal for meat dishes, salads, vegetables. Unsweetened plum liqueur is stored at home for no more than 1 year in a hermetically sealed container.

Strong plum on alcohol

Those who like stronger drinks can make a plum with alcohol, diluting it to the desired degree. Alcohol must be pure, preferably medical. It is best to prepare this liqueur from yellow plums.

Ingredients:

  • Plum fruits - 2 kg.
  • Alcohol (96 or 70 degrees) - 1 glass.
  • Sugar - 500 g.
  • Fresh mint - 3-4 sprigs.

How to cook:

  • Peel the plums and grind into a puree using a blender or meat grinder.
  • Mix the puree with sugar, add mint leaves and pour everything with alcohol.
  • Spread the mass into jars, cork them with lids and put them in a cool dark place for 30-35 days.
  • After, strain the slivyanka through several layers of gauze or through cotton wool.

The liquor turns out to be thick, tart and very tasty, despite the high strength. It can be diluted when serving, and also added to tea and coffee in winter. This tincture is stored for a long time - 3-4 years.

Some families prefer home-made liqueurs on berries and fruits to alcoholic store-bought drinks. But for some reason, housewives often bypass such a beautiful and ripe berry as a plum. Therefore, for lovers of homemade tinctures, we offer to prepare alcoholic drinks from plums!

Sweet plums are suitable for the preparation of many alcoholic beverages of different strengths. This is a real find for independent experiments. Plum pouring is a low-alcohol dessert drink with a bright aroma and taste of berries. With minimal time and effort, following simple rules, an excellent result is guaranteed.

Pouring can be made on vodka, high-quality moonshine or alcohol diluted to 40%. Recipes for cooking at home vary slightly in different regions, but two methods are mainly used.

1. The fruits are poured with alcohol and infused for about 6 weeks. Then the workpiece is filtered and sugar, syrup or other sweetener is added. The drink matures for a few more weeks.

2. Fruit, alcohol and sugar are mixed and aged for 60 days, and then filtered and bottled.

For liqueur, strong, ripe, but not overripe berries are selected, without mold and signs of spoilage. Plums are self-sufficient fruits with a bright taste, color and smell. Classic recipes contain almost no additional ingredients other than alcohol and sugar.

The best varieties for homemade alcoholic preparations: Renklod, Hungarian, Mirabel, Egg. The yellow plum liqueur has a sunny amber hue that will remind you of summer. From the red-blue varieties, drinks of a rich ruby \u200b\u200bcolor are obtained.

Using plums with or without pits is a moot point. Opponents say that the bones give bitterness to the finished product. In addition, they contain cyanides and hydrocyanic acid. However, a small concentration does not cause poisoning.

Opposite reviews are also often found - the seeds give the cream an original almond flavor. Probably a lot depends on the type of fruit and other ingredients. For testing, you can make several options and choose the best one to your liking.

Plum tincture is universal. This recipe is one of the easiest. To get a delicious plum tincture, you only need 1 kg of plums and 2 liters of vodka or diluted alcohol. Even moonshine can be taken as an alcohol basis. First of all, you need to prepare the plums themselves - you do not need to get the seeds. It is only necessary to sort the fruits well, tear off the roots, select the ripest plums and rinse them under running water. Then the fruits should be poured into a three-liter jar, pour them with alcohol and close with a tight lid. A jar of tincture must be placed in a dark place. The air temperature in the place where the tincture will be stored must be at least 20 ° C. In a dark place, plum tincture should stand for about 45 days. After the expiration date, the drink must be filtered and it will be ready for use. The important thing here is that plums will also have an original taste, so they can be freely eaten or used as an unusual snack. The bottled drink can be stored in the refrigerator for 3 years. I would like to note that plum tincture has a wonderful aroma and pleasant taste, so even the most strict connoisseurs of elite alcohol will like it.

Recipe 2.

Amazing plum liqueur. This recipe is perfect for lovers of sweet alcoholic drinks. For a delicious plum liqueur, you will need 1 kg of plum fruits, 1 glass of sugar and half a liter of alcohol - vodka or alcohol. Plums need to sort out, rinse well, divide each in half and remove the bones. Then the plums should be laid out in a glass container and each layer should be sprinkled with sugar. When all the fruits are in the jar, you need to leave the container to stand for three to four days in a warm place. The jar needs to be shaken a little daily - then the drain will let the juice out faster and there will be many times more juice. When the juice has covered the fruits, it's time to add the alcohol itself. After pouring half a liter of vodka or alcohol, the tincture should be allowed to brew for at least one month, or more. Approximately once every ten days, the drink should be shaken so that the sugar dissolves faster. When the tincture from the plum has endured, it must be carefully strained and poured into two half-liter bottles. Plum liqueur will end up with approximately one liter. It is better to store in the refrigerator, or, in extreme cases, in a dark place with low air temperature.

Recipe 3.

To have something to treat friends and treat yourself, you will need one and a half kg of plums, one and a half glasses of sugar and one glass of alcohol. The fruits of the plums must be washed and sorted out, then divided into two parts and the seeds removed. Then a porridge-like mass should be made from the plums and left for a while. In order for the mass to be homogeneous and without skins, it should be rubbed through a sieve. In the resulting mass of plums, add the remaining ingredients - alcohol and sugar. This mixture should be left in a dark place for two months, and when it is infused, you need to pour it into a bottle. It is not difficult to make such a delicious tincture.

Delicious dried fruit tincture. The preparation of this plum tincture requires half a liter of vodka, 1 glass of prunes, a pinch of citric acid and 100 g of sugar. Prunes should be washed and poured into a liter jar. Pour sugar and citric acid into the same jar. Then add alcohol here and let it brew in a dark place for 10 days. Daily tincture of dry plums should be shaken. This will help the sugar dissolve. Such a tincture will have a pleasant taste and aroma. I would like to note that its color will also be unusual and saturated. When the mixture of dried fruits and vodka is infused, the liquid must be filtered. This can be done using a special very small strainer. If an ordinary sieve is used, then you can use cotton wool with it - in combination, this will make the tincture transparent and clean. Strained prune tincture is ready to use.

Unusual tincture of blackthorn. You can make a delicious alcoholic drink not only from ordinary plums, but also from thorns. This fruit, ripening on a thorny bush, has a tart, sour taste. From it you can make a very tasty tincture, which, in addition to everything else, also has healing properties. But first things first. It is better that the container is made of glass - the ideal option is a glass jar with a volume of 5 liters. If this is not available, you can use a regular enamel pan. The fruits in the container must be covered with sugar and covered with a dense cloth. The thorn plum should be allowed to brew in a warm place for 6 weeks. When the tincture has cooled, it must be bottled and allowed to brew for another three months, and then you can use it. This recipe has been tested by many consumers and is in no way inferior to liqueurs from ordinary plums. Plus, thorn plum tinctures also have healing properties. In folk medicine, such tinctures are used to treat disorders of the stomach, intestines, and oral cavity. Also, thorn tinctures have a calming effect.
