A simple recipe for making delicious shadberry jam for the winter. How to make shadberry jam: delicious berry jam recipes

Irga (yurga) refers to apple trees, although the size of its fruits is more reminiscent of chokeberry, or currant. Among the many varieties of irgi there are shrubs and undersized trees and their fruits are somewhat different from each other, but nevertheless, they are all very tasty, healthy and great for making jam.

Shargi jam is well suited for those who want to limit their sugar intake. After all, the berries are so sweet that for making jam, you can take half as much sugar as the berries themselves, or even less.

For 1 kg of yurgi (irgi):

  • 0.6 kg of sugar;
  • 250 gr. water:
  • 2 gr. citric acid.

Wash them by putting them in a colander or sieve. It is not necessary to dry them specially, it is enough that the water drains itself.

While the berries are resting, boil the syrup. Once the sugar has melted, pour the berries into the boiling syrup.

Wait until the syrup boils again and remove it from the stove. Cover the pan with a lid and leave the jam to rest for 6-10 hours.

Add citric acid to the jam, and put the pan back on the fire. From the moment of boiling, cook the jam for 5-10 minutes, after which the jam can be considered ready. Arrange the workpiece in jars, roll them up and wrap them until they cool completely.

You can store shadberry jam at room temperature for up to 8 months.

This delicious jam has many flavors and each variety has its own shades. Only its medicinal properties are unchanged, which will save your body from winter diseases.

It turns out even more useful if you make jam from irgi without cooking.

Irgi jam without cooking

It must be remembered that although outwardly the irga resembles a currant, it is still an apple and its pulp is quite dense. To make "raw" jam, apples need to be processed.

To soften them, irgu is blanched for 1-2 minutes in boiling water, then crushed with a blender, or through a meat grinder.

For 1 kg of berry berries you need:

  • 1 kg of sugar;
  • Citric acid to taste.

Mix berries with sugar and citric acid. The taste of fresh berries is sweet-sour-tart and it is ideal for both desserts and pies.

You can store this jam only in the refrigerator.

Yes, pies.

Therefore, my task is to give you a selection of the simplest jam recipes for the winter. Today we will cook it from irgi. This is a very useful berry. If you are interested in its beneficial effect on the human body, then there is a lot of information about this on the Internet.

For me, these are ordinary fruits that we collected every summer with my grandmother. Someone has it growing in a garden or garden, but we had to go for it to special plantings where these trees were planted.

Of course, collecting it is still a pleasure - the juice gets your hands dirty, and if the trees are tall, you have to climb branches or ladders to get this gourmet.

It doesn’t have a special smell, so my mother most often cooked it with vanilla sugar. But now many housewives add lemon, raspberries, oranges and other berries and vegetables to it. Today we will look at some interesting recipes.

All cooking methods today will be without sterilization, not a single microbe will survive in boiling jam and in sterile jars, so we will do without additional heat treatment.

I want to give a few tips before starting the blanks.

  1. We know that the berry often gives foam when boiled, it is not always easy to remove it. So, so that it does not form, you can add 1 tsp. butter. You will immediately notice the difference.
  2. If you do not like the presence of seeds in the jam, then grind the fruits through a sieve. With the right method of preparation, you will get an excellent jam.
  3. All jars need to be removed “under a fur coat”, where they will gradually cool down. And with their internal heat they will naturally sterilize the contents.
  4. Jam with whole berries is better not to interfere, but to shake, so the skin of the fruit does not burst. And the workpiece will turn out beautiful.

I'll start with the most common recipe for cooking a blank - "Five Minutes". It is very popular because the berries are not digested into porridge, and in such a short cooking time as five minutes, the vitamins do not have time to completely collapse. Accordingly, you get a more healthy treat in winter.

The recipe itself is very simple, but sometimes it can take up to 3 days to prepare. Because the brew must be completely cooled between boiling. And sometimes it takes more than 6 or even 10 hours.

Ingredients:

  • 1 kg of sugar
  • 1 kg of irgi,
  • 1 tsp butter,
  • 0.5 tsp citric acid.

Pour the jam with sugar, wait for the juice to stand out.

Add butter so that no foam forms.

Then cook it after boiling for 5 minutes.

And let it cool for 6-12 hours.

Cook again for 5 minutes and cool for 12 hours.

For the third cooking, add citric acid to the jam and cook again for 5 minutes. We immediately pour into banks.

Video recipe, how to make jam for the winter

The video describes a very simple recipe for making shadberry jam. First, a syrup is prepared into which the berries are poured. The whole process takes no more than 2 hours.

So what do you think? You noticed a small feature that in the video it is advised to pour a cold, cooled mass. This is necessary so that the berries do not burst and spread. When cooled, the skin of the fruit is more elastic.

How to cook a healthy treat without cooking

Of course, there is nothing more useful when there is no thermal effect on vitamins. This can be achieved by grinding the berries with sugar. And such a mixture is immediately removed in containers with lids. Stored usually in the refrigerator, but sometimes also frozen. You can add to, cakes or buns.

Ingredients:

  • 1 kg of berry berries,
  • 1.5 kg of sugar,
  • 2 tbsp vanilla sugar.

We wash the berries, sort them out. Then we pass through a meat grinder.

Sprinkle it with sugar and vanilla and mix. We are waiting for the juice to completely dissolve all the crystals.

Then we put this mass in sterile jars and pour a spoonful of sugar on top. This is necessary so that the berry juice does not directly come into contact with the lid. Then the jam will not have a metallic taste, and sugar, as a natural preservative, will not allow mold to appear for a long time.

You need to store such a healthy treat in the refrigerator.

How to cook shadberry jam with lemon or orange

Now let's move on to recipes with additives. As I wrote earlier, irga does not have a pronounced aroma and taste, therefore it is suitable for brighter berries and fruits. For example, it is great for citrus fruits. In the recipe we take lemon, but it can be replaced with orange.

Ingredients:

  • 1 kg of irgi,
  • 800 g sugar
  • 200 ml of water
  • 0.5 pieces of lemon.

We wash our berries.

We put it on the stove and boil constantly stirring. After that, reduce the heat and simmer the syrup for another 7 minutes.

My lemon, cut into pieces to remove the seeds. Then grind it in a meat grinder or blender immediately with a peel.

Put the irgu into the boiling syrup.

Bring to a boil. If foam appears, then it must be removed.

After 10 minutes from the moment of boiling, add lemon. Cook for another 5 minutes and turn off.

Boiling jam is immediately poured into sterile containers.

We twist boiled lids and leave to cool.

Delicious jam from shadberry and red currant without sterilization

Currant allows you to prepare jelly without additional jelly-forming additives. This is because it contains pectin, which, when interacting with acid and sugar, forms gels. And all this is contained in the berries themselves.

Just add a little sugar. It is important to leave only the first day of the jar alone so that the peptide bonds have time to get stronger.

Ingredients:

  • 1 kg of irgi,
  • 0.5 kg of red currant berries,
  • 1 kg of sugar.

Currant berries and irgi are twisted in a meat grinder or in a blender. There will be bones. Therefore, if you do not like them, then this mass must be passed through a sieve. You can skip this step.

We cook according to the “Five Minute” principle, so it turns out to be thicker, like jam. And the pectin contained in the currant will help the jam gel well.

You need to cook three times after boiling for five minutes. Allow the mixture to cool for at least 6 hours between boils.
Remove foam if it forms.

After the third boiling, pour the hot mass into sterile jars and close them with boiled lids.

There is no need to turn the container over, just immediately remove the cans under a fur coat for natural sterilization.

Day they can not touch, shake. Because during this time pectin forms jelly bonds. And in winter you will get a wonderful jelly without any additives.

Fragrant preparation of berries and raspberries

Even a glass of berries can greatly enhance the aroma of a kilogram of shadberry. Therefore, we shout “We will not spoil the raspberry jam!” and go to collect the fruits.

The cooking process itself is very simple and common. We can start cooking according to three recipes: the five-minute principle, the first boil of sugar syrup, or the one-time boil of all fruits and sugar. Here we will prepare according to the third option.

Ingredients:

  • 1 kg of irgi,
  • 1 kg raspberries,
  • 2 kg of sugar.

We wash the irgu and sprinkle it with sugar. We are waiting for her to highlight the juice.

Then put it on the stove to cook for 7 minutes.

Pour raspberries to it and let it boil again. After that, we reduce the fire and simmer our brew for another 40 minutes.

Pour the jam into containers and roll up the lids.

Turn over and let cool completely. This will check the tightness of the lids. And also steamed elastic bands on them will sit more tightly on the neck. This means that the jam will last longer.

Thick jam from shadberry with cherries for the winter

Any cherry is fine. Someone has it garden, and someone Chinese. The main thing is to get the bones out of it. But we will not pierce every berry, but simply grind the pulp. To get a berry gruel. The bones will remain in the strainer. And you can fill them with water and cook a delicious morsik.

Ingredients:

  • 2 kg irgi,
  • 1 kg cherries
  • 1.5 kg of sugar.

We sort out the Irgu, free it from the stalks and wash it.

Now the sorted and washed cherries need to be rubbed through a sieve to separate the seeds.

Pour 1 liter of the resulting cherry pulp to the irga. Pour sugar into a saucepan. Then we wait a few hours until the irga releases juice.

Then we begin to cook our jam. Stir so that all the sugar dissolves.

After boiling, reduce the fire and simmer until tender for 1 hour.

We check whether our jam keeps its shape. It should turn out like jam. We drip on a plate and see if it spreads. If not, then it's time to pour the jam into jars.

Pour hot into sterilized jars immediately.

That's just how we close the irga for the winter. This berry is very unpretentious in cooking and can easily withstand any neighborhood. The main thing is to use the right amount of sugar so that the mass does not turn sour and moldy.

  • Irgi contains a lot of sugars, so little sugar is required to make jam from it. Usually, no more than 1 cup of granulated sugar is taken per 1 kg of berries. Otherwise, the jam may turn out cloying.
  • There are a lot of organic acids in irga that can react with metal, so you can cook it only in enameled dishes or in stainless steel containers, stir it with a wooden or stainless steel spoon.
  • For cooking irgi, a basin, bowl or other container with a large evaporation area is used, otherwise the jam will turn out to be very liquid.
  • Before laying out the finished jam in jars, it can be cooled. In this case, the berries will be evenly distributed over the entire area. Otherwise, the syrup will be at the bottom when cooling, and the berries will be at the top of the jar. However, it is better to store jam, poured into jars hot.
  • Irgi jam turns out to be delicious without any additives, however, many people add citric acid to it during cooking, which not only adds sourness, but also increases the preservation of jam, since lemon is a preservative.
  • Fresh irga quickly deteriorates, therefore, preparations from it for the winter must be made on the same day when it was collected, or, in extreme cases, the next.
