I am pleased to share with you a classic jam recipe that resembles the taste of childhood. In Soviet times, there were other GOSTs. In our time, such a jam is not found. Luckily, you can make your own.

We need two ingredients:

  • 2.5 kg of sour apples;
  • 1.5 kg of granulated sugar.
  1. We take the fillings, wash them, peel and pit them, then cut them arbitrarily.
  2. We spread the slices on a baking dish and send it to the oven. Preheat it to 180 degrees.
  3. Bake for 20 minutes.
  4. Fruit pieces will reach a soft consistency.
  5. Cool and send apples to a blender.
  6. Then we wipe the resulting puree through a sieve. Why is it not advisable to immediately proceed to this step, without electrical appliances? A blender will make your job easier. After all, we want to prepare the workpiece quickly and simply.
  7. We spread the mass in a bowl with a thick bottom and non-stick coating.
  8. Pour sugar, mix the ingredients until smooth.
  9. Turn on medium heat and cook jam, not forgetting to stir.
  10. Gradually, the color of the puree will darken.
  11. When the mass begins to lag behind the walls and becomes transparent, check it for readiness.
  12. We take a tablespoon of jam and put it on a saucer. The thick consistency says it's time to turn off the stove and pour the sweet paste into jars.

It turns out jam, like in a USSR store. We store spins in a dark, cool and dry place.

Come in handy! You can cook soft apples not only in the oven. Use a double boiler or boil the fruits in a saucepan.

Jam from apples white filling with orange and lemon

The jam is super thick. I propose to see how it holds its shape clearly in the video. —

We need fruits:

  • apples - in a pan;
  • oranges - 2 pcs.;
  • lemon.

And additional components:

  • sugar - equivalent to the weight of the resulting apple puree;
  • water - 200 ml.

Cooking steps:

We free the apples from the core and cut them in an arbitrary way. The mass of apple slices is easier to cook.

We spread the slices in a saucepan, pour a glass of water and set to boil.

At this time, we will deal with the rest of the fruits.

First, remove the zest - rub it on a fine grater.

Grind orange pulp in a blender.

We pass the lemon through a juicer.

After 15 minutes, the fillings are already becoming soft - we will grind a little and grind through a sieve. You can skip all the fruits through a meat grinder.

For each kilogram of the resulting puree, pour 1000 grams of sugar. You can add spices at this stage. Orange goes well with cinnamon, for example.

Add citrus zest, lemon juice. Then the pulp from rolled oranges.

Turn on the stove - medium mode and cook the resulting pasta.

After boiling, boil the mass for another 25 minutes. We monitor the readiness and do not forget to stir.

Ready jam is poured into containers.

We turn the jars upside down and wrap them with a blanket. It is customary to cool blanks for the winter in this position. Do not forget to sterilize the containers and lids - otherwise the goodies will not survive even before the first snow.

Advice! To get a less thick consistency, reduce the cooking time by 5-10 minutes. Increasing the time will cause the jam to harden.

  1. Pour water into the multicooker bowl, then add citrus juice there. No sour fruit sour fruit? Dilute citric acid in liquid. Someone does with vinegar - at your discretion.
  2. We cut clean apples into arbitrary pieces, cut off the middle and throw them immediately into the water with lemon squeeze. Thus, the fruits will not darken - which means that the jam will turn out to be a beautiful color.
  3. Sprinkle sugar on top.
  4. Close the lid, set the "multi-cook" mode. Time - 1 hour. Periodically check the consistency - the apples will become soft before the end of the program.
  5. Beat the mass with an immersion blender. The paste is homogeneous, without lumps.
  6. Then we close the multicooker again and set the “quenching” program for 15 minutes.

Now you can start spinning.

How to cook jam from pears and apples at home

It is customary to cook jam from sour apples. The Antonovka variety is well suited. However, it is no less tasty from red fruits with the addition of honey fillings.

List of required products:

  • apples and pears - 3 kg in total;
  • granulated sugar - 1 kg.
  1. Cut the fruit into arbitrary pieces, remove the seeds.
  2. Cook the slices with sugar for half an hour. Then we leave them overnight. We do not add water. The fruits give their own juice, which is enough.
  3. The next morning, grind the mass in a blender and boil it again for 30 minutes.
  4. It turns out a thick paste - pour it into processed containers and twist.

Containers and lids must be dry - moisture will damage the treat.

For variety, try adding other ingredients instead of pears. For example, jam from pumpkin and apples turns out to be unusual and fragrant.

A simple recipe for jam from apples and plums without added sugar

Desserts without sugar are much healthier, especially for the figure. So write down the following recipe.

Components:

  • apples;
  • plums.

The number of components is taken depending on the volume of the dish for cooking.

Cooking:

  1. We rub the apples on a coarse grater. It is not necessary to cut the peel - it is removed by itself.
  2. We spread the grated pulp in a saucepan with a thick bottom.
  3. We remove the stones from the plums and send them to the same bowl.
  4. Turn on the fire and cook the fruit for about 10 minutes. During this time, the ingredients will release the juice and become soft.
  5. At this stage, grind the mass with a submersible blender.
  6. Then reduce the heat and continue the heat treatment for another 30 minutes.
  7. During the second cooking (middle of the process), grind the puree again.

We lay out the finished jam in jars, which we pre-sterilize. We turn the containers upside down and cover them with a warm blanket.

For those who do not know how to store apple jam, you need a dry, dark and cool place.

We take the following ingredients:

  • apples - 2 kg;

Cut out the cores of the apples with a special knife. The fruits were intact. We send the fruit to the oven, heated to 200 degrees. Bake them until soft.

Transfer the hot baked apples to a non-stick bowl. Then grind the fillings into a puree. Make it with an immersion blender. Sprinkle the paste with sugar.

Mix the ingredients and place the saucepan over medium heat. When the pasta boils, reduce the heat and cook for another 40 minutes. Do not forget to stir the jam throughout the process.

Did you get foam at the end of cooking? Take it off. Check jam for readiness.

Pour the delicacy into pre-treated containers. From the specified amount of products, 4 half-liter jars and a bowl for testing are obtained.

On a note! For jam, it is advisable to take sour or sweet and sour apples.

How to cook jam from apples?

The thick consistency of apple jam (even cut with a knife!) is the merit of pectin, the natural gelling component of the apple.

Apple jam is the most jam in the world. The most famous and most universal. It's thick, sweet applesauce and a treat in itself. But still, its mission is different - to be a filling for donuts, pies, bagels, croissants, brioches, pies and shortbread tarts.

Both tasty and convenient, because apple jam is not capricious: it does not spread under the influence of high temperatures, like other preserves and jams. It is no wonder that many families have a recipe for homemade apple jam, and ours is no exception.

The famous thick consistency of apple jam (even cut with a knife!) is the merit of pectin, the natural gelling component of the apple. But it's not just about pectin, and not all apple varieties have enough of it. To be absolutely sure, a lot of sugar is added to the jam, boiled for a long time until caramel color, and after that it becomes even thicker and denser.

“However, sugar is bad!” you say, and you will be right. We will try to go the other way: we will prepare apple jam for the winter according to a modern recipe, with a minimum amount of sugar, but using a gelling agent.

Cooking time: about one and a half hours. Yield: 0.5 l jar

Apple jam recipe ingredients

  • 1 kg apples with elastic hard pulp (for example, Gala variety)
  • 300 grams of sugar
  • 1 pack of gelling agent (Jelfix, Confiture or other similar)

How to cook apple jam with Gelfix

Mix sugar with gelling agent.

Mix dry ingredients thoroughly.

We prepare apples: we wash, remove wormholes, staleness and other imperfections. This remark is relevant, since apple jam is often made from cheap seasonal varieties, or even carrion.

We cut the fruit into 4 parts and clean it, discard the core.

Lay the quarters of apples close together on a flat surface.

We bake the apples in the microwave at full power for about 7 minutes, until they release the juice and become soft.

Using a spoon, separate the pulp from the skin. Discard the skin - you won't need it anymore.

Grind the pulp of apples in a blender in a puree. If there is no blender, you can rub the pulp through a sieve or scroll through a meat grinder.

Add sugar to applesauce.

We mix the mass and put it to boil on a small fire.

When the apple jam thickens and evaporates, and its color begins to resemble caramel, turn off the fire.

We lay out the jam in sterilized jars and cork with lids.

We wrap the jars in a blanket, turning them upside down. In this form, the jam should cool down, after which it can be considered ready.
Apple jam turns out to be very tender, slightly transparent, amber in color. And so homely, so dear.

Delicious apple fillings!

And so that the pieces are not felt at all, we grind everything with a blender and cook for about ten minutes. After that, all that remains for us is to spread the finished jam in jars.

    Jam from apples, video recipe

    If you are interested in whether it is possible to cook jam from apples at home, then you are here! The jam turns out to be thick, no worse than purchased, but, of course, without a set of any unpleasant thickeners and regulators. We will not add newfangled “jelly” or “confiture” to the jam, but we will cook it, so to speak, in the old fashioned way. Let's take the real recipe, grandmother's. Only two lines are written by hand on a piece of paper: apples - 1 kg, sugar - 1 kg. So here it is: strictly and impressively, without unnecessary lyrics and boring explanations. Just go try to make jam according to this recipe! :) Of course, our grandmothers remembered everything anyway. That apples must first be boiled, then mashed, mixed with sugar and boiled for a long time until the excess liquid evaporates, and the jam acquires a caramel color. When hot, it is more like syrup, but when it cools down, it thickens so much that you can spread it on bread or make pies out of it, which the grandchildren will then crush on both cheeks.

    Ingredients:

    • 1 kg apples
    • 1 kg of sugar.

    From this amount of products, approximately 600 g of jam comes out. When choosing a variety of apples, give preference to dense, not very juicy fruits - these will not give large losses in volume, and they will boil faster. In total, it will take you about an hour to prepare jam.

    How to make apple jam at home

    Wash apples and cut into quarters. Do not complicate your work and do not try to do it carefully and clean it from seeds - later the mass will still need to be rubbed through a sieve, and therefore nothing extra will get into the jam.

    Put the apples in a bowl for making jam and add a little water (0.5-0.7 cups).

    Put the apples on the fire and boil them until they start to break down (about 10 minutes depending on the variety). You can also bake apples in the microwave until tender.

    Rub the boiled apples through a sieve. The water in which they were boiled does not need to be drained.

    You will get a smooth, smooth puree.

    At this stage, the puree is still too liquid, and therefore it still needs to be boiled down. Pour the puree back into the bowl in which the apples were boiled. Add sugar to puree and stir.

    Bring the mass to a boil and reduce the heat. Boil jam for 30-35 minutes until it becomes caramel in color. Stir the jam from time to time so that it cooks evenly.

    Pour the hot mass into sterilized jars and tightly close the lids. Be careful: the jam is very hot.

    Cool the jam by turning the jars upside down and wrapping them tightly in a large towel or blanket.

    Bon appetit!
