Whisk the whites with sugar, a few drops of lemon juice and grated, finely grated, lemon zest. Take the apples out of the oven and put the protein foam on top of them. Sprinkle with chopped nuts and put in the oven at a temperature of 100-130 degrees so that the foam dries up, as if baking.
