6. Roll each ball into a thin layer and bake in a dry frying pan for 1-2 minutes on each side.
7. Immediately put the finished pita bread into a plastic bag for food storage and leave for 5-7 minutes, otherwise it will become dry and brittle.

To prepare Armenian thin lavash, you will need:

Flour - 2.5-3 tbsp.
dry yeast - 1 tsp
sunflower oil - 1 tbsp. l.
water - 1 tbsp.
sugar - 1 tsp
salt - 2/3 tsp

How to cook Armenian thin lavash:

1. Pour water into a small saucepan and heat to a temperature of 40-50 degrees.
2. Sift flour through a sieve.
3. Dissolve dry yeast in warm water, add sugar, salt, sunflower oil and sifted flour.
4. Knead elastic dough, knead for 2 minutes and place in a greased bowl. Then cover with a clean kitchen towel and leave the dough for 1 hour to rise.
5. After an hour, punch down the dough and cut into 8-10 pieces. Cover the dough pieces with cling film and leave for another 5 minutes.
6. Heat up a large frying pan well.
7. Roll out the pieces of dough into thin cakes (no more than 1-2 mm) and bake in a dry frying pan for 10-15 seconds on each side. As soon as the first ruddy dots appear on the surface of the dough, you must immediately remove it from the pan, otherwise the pita bread will dry out.
8. Ready-made pita bread should be stacked on a tray or large dish and covered with a kitchen towel.
9. When the pita bread has completely cooled down, you should transfer it to a clean plastic bag and store it in the refrigerator.

Even if your pita bread turned out to be slightly overdried or you didn’t have time to put it in a bag in time, it doesn’t matter! In Armenia, thin lavash is specially dried after baking, because it can be stored dry for up to a year. Well, then, when necessary, pita bread is sprayed with warm water, wrapped in towels and placed in polyethylene. After 20 minutes, pita bread becomes soft and as tasty as freshly baked. Take this note into account, because in this way you can not mess around with the dough every time, but prepare pita bread for future use and use it whenever you want!

Another option for long-term storage of Armenian lavash is freezing. We put the cakes in a bag, tightly tie and freeze. Everything is very simple!

1. Cooking the dough. To do this, pour kefir into a large bowl, add soda, then flour and salt. In order to make the dough more magnificent, the flour can be sifted beforehand. Knead the dough well so that it is elastic and does not tear when rolling out further.
2. Wrap the finished dough with cling film and set aside for 30-40 minutes.
3. While the dough is “resting”, you need to prepare the fillings.
4. For the first filling, peel the potatoes and boil in salted water until tender. Drain the water, prepare a puree with the addition of butter. The potatoes must be mashed very carefully so that there are no large pieces left, otherwise they may tear the dough in the future. Peel the onion, chop finely, fry in butter and mix with mashed potatoes. Stuffing number 1 is ready!
5. To prepare the second filling, grate cheese (Adyghe, brynza, Russian) on a fine or medium grater. Peel the garlic and pass through a press. Rinse greens (parsley, dill, cilantro, green onions), dry and finely chop with a knife. Place all ingredients in one bowl and mix well. Filling number 2 is ready!
6. Divide the dough with your hands into pieces or roll into a thick sausage and cut into equal parts. Shape each piece into a patty with your hands. Put the filling in the center of each cake (on one half of the cakes - filling No. 1, on the second - filling No. 2). Close the edges of the dough, forming a kind of bag.
7. Next, roll out each "bag" with a rolling pin into a thin cake about 5 mm thick. You need to roll it out very carefully so that the dough does not tear.
8. Fry the khichins in a hot dry frying pan on both sides until the dough turns white and ruddy spots begin to appear on it. Approximate frying time on one side is 3-5 minutes. If, during the frying process, hichins with potato filling begin to puff up, they can be slightly pierced with a fork to release the accumulated air. Khichins with cheese should not be pierced, as the filling will begin to flow out quickly and burn.
9. Place the finished khichins on a plate one by one, generously lubricating each cake with butter.

Appetizing khichins can be served immediately after preparation. However, it is better to cover them with a plate and a dry kitchen towel and let them brew for 10-15 minutes. Soaked in butter and the aroma of the filling, the cakes will be even tastier!

Khichins can be served with melted butter, natural yogurt, ayran, sour cream, fresh vegetables and herbs.

To make cornmeal tortillas, you will need:

Corn flour - 400 g
wheat flour - 400 g
semolina - 200 g
salt - 2 tsp
sugar - 5 tsp
kefir - 300 ml

How to make cornmeal tortillas:

1. Just mix everything, cover with a film and let stand (corn flour and semolina will absorb liquid, the dough will swell slightly).
2. We take one lump of dough, and, dipping it in flour so that it probably does not stick, roll it out.
3. We shift the rolled circles with baking paper or tracing paper, while not forgetting, just in case, sprinkle them with a little flour.
Flat cakes can be frozen, or you can just store them in the refrigerator, but in this case, do not forget to wrap them in a bag, well, the shelf life in the refrigerator will be shorter than in the freezer, but they will definitely lie for a week and a half normally, most importantly - in the coldest camera compartment to put them.
They are also very easy to prepare: pour the filling (whatever you like) and put it in the oven at 180 degrees Celsius, or you can under the grill, if there is one. As soon as the cakes are golden - take them out and eat!

To make Finnish rye bread, we need:

Rye flour - 1 tbsp.
natural (unsweetened) yogurt - 200 ml
honey - 1-2 tsp
soda - 1 tsp
salt - 1 tsp
vegetable oil - 1 tbsp. l.

How to make Finnish Rye Flatbread:

1. Let's start by mixing yogurt with honey in one bowl (it's best to immediately take a comfortable deep bowl), and add vegetable oil here. Stir everything well until smooth (beat with a fork or whisk).
2. In a separate container, mix the dry ingredients - flour, salt and soda (in this case, it is advisable to sift the flour through a sieve). Now we combine the dry ingredients with the liquid ones, gradually adding flour to the bowl of yogurt. We knead the sticky dough (it should be without lumps), which we then roll into one large ball. Wrap it in cling film and set aside for half an hour.
3. Thoroughly sprinkle the working surface of the table with flour, then spread the dough on it and roll it out with a rolling pin into a relatively thin layer (about 1 cm thick). Now we cut out small cakes from the dough of whatever shape you wish and immediately lay them out on the prepared baking sheet (that is, greased with a sufficient amount of vegetable oil and lightly sprinkled with flour).
4. After that, we prick each cake in several places with a fork and send them to a preheated oven to bake until cooked and a ruddy shade is formed (for about 15-20 minutes, at a temperature of 220 degrees).
5. It is best to serve ready-made tortillas from the oven warm, along with your favorite soft cheese, fresh tomatoes, or, conversely, with pickled vegetables. And they are also very tasty with a pear and thin slices of bacon, believe me, this is really so! Most importantly, don't be afraid to experiment!

1. Sift the flour on the table, make a small depression in the center, add the remaining ingredients and knead the dough.
2. You can do it differently. Whisk eggs with sugar. Without ceasing to beat, add sour cream, and then - softened butter. The resulting mass should be completely homogeneous.
3. Pour the mixture gradually into the flour and knead a fairly stiff dough, gradually adding flour to it.
4. Divide the dough into balls of about 100 g each (as a result, you should get 10-11 balls), give them the shape of cakes with a rolling pin, grease with a beaten egg, make cuts with a knife.
5. Put the cakes on a baking sheet, well oiled, and bake in the oven at a temperature of 180-200 degrees for 15-20 minutes.

Cakes in a pan on kefir with cheese are prepared as follows:

  • a small amount of salt and sugar dissolves there (to taste);
  • 2 eggs are driven in, the mixture is shaken with a whisk with vegetable oil;
  • 1 kilogram of flour is poured in small parts;
  • the dough is placed in the cold.

After two hours, the aged dough is laid out on the table, kneaded, the sausage is rolled up and divided into koloboks. Each is rolled into a centimeter-thick cake.

The cheese is cut into small cubes, laid out on cakes and pressed into their surface. Then the products are fried and poured with hot butter.

Flatbreads with cheese and herbs

This recipe is a variation on the previous one. The ingredients are the same and in the same quantity, only instead of hard cheese they take soft, such as suluguni. Additionally, a bunch of various greens is included in the set of products - cilantro, dill, basil, parsley.

The dough is prepared using the same technology as for ordinary kefir cakes. Next, they act like this:

  • cheese is crushed with herbs;
  • form lumps from the cheese mass;
  • in the middle of each rolled cake put a cheese lump;
  • collect the edges of the cake in a bag, glue;
  • turn the products over on the other side and lightly pass with a rolling pin.

Tortillas in a pan with cheese and herbs are also fried without oil. They are served piping hot, not allowed to cool, with hot butter.

Flatbreads with cheese and ham

The technological scheme for making cakes looks like this:

  • 1 teaspoon of soda is extinguished in 2 glasses of kefir, sugar and salt are dissolved (to taste);
  • a little ham is placed in the middle of each, the edges are gathered in a bag and glued together;

Fried flatbreads are served with hot butter.

Georgian cheese cakes

The most famous cheese cakes in the world are khachapuri. For a classic recipe, they take Georgian cheese imeruli. But since it is not easy to find it on sale, you can experiment with combinations of cheeses:

  • cheese and suluguni;
  • Adyghe cheese and cheese;
  • Adyghe cheese and mozzarella;
  • fatty non-acidic cottage cheese and mozzarella.

Another necessary, but hard-to-find product for khachapuri is matsoni. However, it is well replaced by a mixture of sour cream and kefir in equal proportions.

Before kneading the dough, some preparatory manipulations are performed. 100 grams of butter is kept warm. It should become soft, but not spread. Then 2 tablespoons are deposited on the filling, and the rest is melted.

Heavily salted cheese is soaked in cold water for several hours.

The next course of action is:

  • in 250 ml of kefir-sour cream mixture (or in the same amount of yogurt) half a teaspoon of soda is added;
  • salt and sugar are dissolved there;
  • melted butter is poured;
  • slowly, in small parts, flour with a volume of 300 grams is poured;
  • the dough ripens in the cold.

The filling is prepared in a couple of minutes: 350 grams of cheese is rubbed with 2 tablespoons of sour cream and soft butter.

The dough is divided into quarters. A cake is made from each, and a quarter of the filling is placed in the middle. The edges are gathered in a bag. The product is flattened by hand and slightly smoothed with a rolling pin. The final thickness is about 1.5 centimeters.

Khachapuri is fried without fat and served with butter.

Flatbreads with Abkhazian cheese in a frying pan

An incredibly delicious cheese cake in a pan comes out according to an Abkhazian recipe. In Abkhazia itself, this dish is called "achash".

First of all, the starter is prepared:

  • in a small volume of heated water, dissolve 1 teaspoon of fast-acting yeast, a little sugar and flour;
  • mixed and left for 20 minutes.

When the starter starts to bubble, you can start preparing the dough:

  • 1 kilogram of flour is sifted in a slide directly into the bowl;
  • a hole is made at the top;
  • leaven is poured into the hole;
  • everything is salted;
  • 2 eggs are driven in;
  • 500 milliliters of fatty kefir and 200 grams of melted butter are poured in small parts;
  • the dough is put in the cold to ripen.

Meanwhile, the filling is being prepared: 800-900 grams of Adyghe cheese is crushed and, if necessary, salted. From the dough and separately from the cheese, identical koloboks are formed. Dough koloboks are rolled out, lumps of stuffing are placed on them. The edges are rolled up and pinched. Everything is rolled out again with a thickness of 1-3 centimeters.

Achash is fried under a lid in oil. The product is very fluffy.

Tomato cheese cakes with herbs in a pan

Original, tasty and bright cakes are made from custard dough, prepared on the basis of tomato juice.

The dough for tomato-cheese cake is done like this:

  • 400 ml of tomato juice, 400 ml of water and a little salt are brought to a boil with 8 tablespoons of vegetable oil;
  • the mixture is removed from the fire;
  • 800 grams of flour are gradually poured into the hot liquid;
  • everything mixes well and cools down.

The dough is divided and small cakes are formed. In the middle of each is a portion of the filling, made from 600 grams of grated cheese and a bunch of any chopped greens. The edges are raised and pinched. The product is flattened by hand. After frying, it is poured with hot oil.

Italian tortillas with cheese and herbs in a frying pan without oil

The Italian flatbread is called focaccia. This traditional Mediterranean dish is easy to prepare, and the range of products for it is very affordable.

Focaccia is prepared according to the following technology:

  • 2 teaspoons of fast-acting yeast are dissolved in 1 glass of heated water, salt and sugar are added in an arbitrary amount;
  • 200 grams of flour are mixed, covered and left in a warm place for a short time;
  • another 200 grams of flour and 4 tablespoons of olive oil are added;
  • everything is kneaded until smooth, covered with a napkin and kept warm a little more;
  • the risen dough is kneaded for the last time;
  • cakes are rolled out.

Then they are fried on one side and turned over. On the fried top side is placed a filling made from 300 grams of grated cheese mixed with chopped herbs and marjoram. The focaccia comes to readiness under the lid.

Spicy tortillas with smoked cheese and herbs

This is another variant of cakes, in which cheese is added directly during frying. The dough for them in consistency is more like dough for pancakes.

It is prepared by simply mixing 6 cups of wheat flour, 900 ml of kefir, 2 eggs, salt and sugar. In kefir, 2 teaspoons of soda are preliminarily repaid.

While the dough is standing in the cold, 600 grams of smoked cheese is rubbed and mixed with a bunch of chopped greens. An arbitrary amount of hot pepper is added to the mixture - to taste.

Vegetable oil is poured into the pan, it warms up well. The dough is put into it. When it is slightly browned and bubbling, the cheese mixture is placed on top. Then a few more tablespoons of dough are added, and the cake turns over.

You can serve such a product to the table with sour cream.

Cheese curd cakes

The combination of cottage cheese and cheese in the filling of flat cakes is unlikely to leave you indifferent, and the dough for this product is prepared very quickly:

  • 450 grams of wheat flour is mixed with salt and 1 teaspoon of soda;
  • 2 tablespoons of melted butter and 300 milliliters of kefir are poured into the flour, kneaded;
  • kneading is done with adding flour;
  • The dough is left to rest for 15 minutes.

Meanwhile, the filling is being prepared. 150-200 grams of cheese is taken out of the brine and kneaded along with 1 pack of cottage cheese. A bunch of greens and a few green onion feathers are chopped and added to the cheese-curd mixture.

Cakes are formed from the dough. A little filling is laid out on each. The edges are pinched with a pouch. The cake is rolled out with a rolling pin and sent to the pan.

After frying, it is served with hot oil.

Cheese cake with meat in a pan

A tortilla fried with cheese and meat is a very satisfying dish that can replace dinner. To implement the recipe, you will need 2 cups of finely chopped boiled beef or pork meat.

In some versions of the recipe, chopped boiled meat is proposed to be replaced with raw minced meat. However, in the filling it does not bake too well, so it should be fried first.

Cheese-meat cake is prepared in the same way as a cake with cheese and ham.

  • 1 teaspoon of soda is extinguished in 2 glasses of kefir;
  • sugar and salt dissolve in kefir (to taste);
  • sprinkled with 2 cups of grated cheese;
  • 4 cups of wheat flour are added in small parts;
  • the dough is sent to ripen in the cold;
  • after 2 hours, cakes are formed;
  • meat filling is placed in the middle of each, the edges are gathered in a bag and pinched;
  • the product is once again slightly flattened with a rolling pin.
    • in 4 glasses of kefir, 2 teaspoons of soda are extinguished;
    • sugar and salt are dissolved there (to taste);
    • pour 4 cups of grated cheese;
    • 4 cups of rye flour are added in small parts;
    • in the process of kneading, wheat flour is gradually poured in such a volume that the dough leaves the hands well;
    • the dough is sent to ripen in the cold;
    • after 2 hours, cakes are formed;
    • in the middle of each, a filling is placed, made from chopped boiled chicken meat (it will take about 3 glasses) and chopped dill;
    • the edges are collected in a bag and pinched;
    • the product is once again slightly flattened with a rolling pin.

    The cakes are sprinkled with sesame seeds and, after roasting, are served with hot oil.

    Summary

    Pancakes with cheese in a pan are a great way to diversify the daily menu. They are good on their own, and in addition to hot dishes instead of bread. Cheese cakes have only two drawbacks. The first - they need to be eaten hot or at least warm. The second - "if they are, then they are immediately gone."

Cheese cakes can be prepared without kefir, say, cheese cakes with milk. Here you can use a fresh dairy product or sour that you have. The amount of lactic acid depends on what other ingredients should be added to the dough so that the cakes turn out to be lush and not rubbery.

Ingredients:

  • 2 tbsp. flour;
  • a pinch of salt;
  • 2 tbsp. l. vegetable oil (in the dough);
  • 0.5 st. fresh milk;
  • 0.5 st. finely grated hard cheese.

Cooking:

  1. Knead the dough, as in the previous recipe.
  2. We roll out the blanks of cakes.
  3. But you can fry in 2 ways. First: in a hot frying pan. Note that additional fat for frying can be omitted. But if you don't want your cheese cakes with milk to be too dry, you can lightly oil the pan or choose a very fatty cream cheese.

The second cooking method: in the oven. Dough blanks are laid out on a baking sheet and baked in the oven for no more than a quarter of an hour. Before baking, you can sprinkle cheese crumbs on top so that the finished cakes have a characteristic crispy crust.

Fillings and flavorings

As we have already mentioned, cheese cakes without kefir can be prepared with filling. This will add extra flavor to the dish. Most popular supplements:

  • finely chopped or grated ham;
  • smoked sausages;
  • cottage cheese, cheese, suluguni, cheese mixtures;
  • greens (including onions);
  • finely chopped or grated boiled eggs;
  • stewed sauerkraut;
  • chopped, lightly sautéed, mushrooms;
  • grated, passivated carrots;
  • potato filling;
  • fried meat, liver, liver minced meat.

In general, all those food leftovers that were lying around in your refrigerator. Portions of dough prepared according to one of the proposed recipes are rolled into shortcakes no more than 10 mm thick. In the middle of the shortbread we lay out a portion of the filling, we do not regret it. We fasten the ends of the dough (like pies) so that the filling does not leak out. Again, lightly pass with a rolling pin to give the semi-finished product a plane. Fry or bake as suggested earlier.

  1. Try to grind the ingredients of the filling as finely as possible so that the edges do not break through the dough when rolling out the stuffed cakes.
  2. It is desirable that the filling is dryish, but not crumbly. Otherwise, crumbs may fall when biting.
  3. Fillings that have been fried should be “degreased” on a paper towel - why do you need extra calories ?!
