In the video, I used fresh dry blueberries as a filling, so I laid out the filling without additional wisdom directly on the dough. If your berry is not dry enough, then you can: pre-bake the yeast base (5–10 minutes to set the dough), and then quickly fill it with stuffing, decorate and bake further; first put a thin layer of bread crumbs, then the filling and then according to the recipe; cook the filling as I did in the recipe. If you cook with frozen berries, then use it in frozen form, without first defrosting.
For dough, take a little warm water, add yeast and let stand for 5 minutes so that the yeast is saturated with water and swells. Stir until the yeast dissolves, add sugar and such an amount of flour that you get a dough that resembles oatmeal in thickness: it should be liquid, but at the same time not drain from a spoon.

Let the dough stand for 5–10 minutes, breathe, then close the container with a lid or film and leave at room temperature for 2–3 hours to ferment. First, the dough will grow, then its surface will be covered with bursting bubbles, wrinkles will appear on it, and it will begin to reverse movement, i.e. fall off. This is what is an indicator of the readiness of the dough. The fermentation time of the dough depends on the ambient temperature, so it may fluctuate.

For baking, mix eggs, salt, sugar, butter and milk into a smooth mixture.

Stir the muffin into the brew. Gradually adding flour, knead a soft elastic dough that will not stick to your hands and work surface.

I have already written a lot about this, but still I will repeat ... In the process of kneading, it is important to achieve non-stickiness of the dough not with a shock dose of flour, but with a sufficiently long kneading. The kneading should last about 10 minutes. During this time, the gluten of the flour has time to swell, and the dough acquires the properties we need. In the process of kneading, use flour only when necessary and in minimal quantities, solely so that the dough does not stick to your hands and the board. The kneading process looks something like this: dust the table with flour, knead the dough until it starts to actively stick, as soon as this happens, dust it again, knead again, etc. to a non-sticky test. The portions of flour will be gradually reduced, and the time between dustings will increase. At the very end, the dough must be thoroughly kneaded on the board without dusting.
Place the dough in a bowl, cover with cling film or a lid and leave at room temperature until doubled in size. If you have time, punch down the risen dough and let it rise a second time.

I only used half of the dough for the pie. Separate about a third from the dough and set aside. We use this dough to decorate the cake. Roll out the rest of the dough and transfer to a baking sheet lined with baking paper. From part of the reserved dough, roll a tourniquet as long as the perimeter of the rolled out dough. Whisk the egg with a little water and brush the edges of the base. Glue the harness.

Cover the pie base with a towel and leave to rise for 20-30 minutes. Roll out the remaining dough. For roses, cut small circles with a glass. Fold the mugs 4-5 in a line and roll up. Pinch the center, cut.

As a result, you will get 2 roses. For the leaves, cut the dough into ribbons about 2 cm thick, cut to the desired length. On each piece of ribbon, make notches on both sides.

Mix blueberries, sugar, starch and fill the base. I want to draw your attention to the fact that this should be done literally at the last moment so that the berry does not give juice. Put the prepared decor on top, grease with a loose egg.

  6. The resulting elastic, non-sticky dough is wrapped in plastic wrap and sent to the refrigerator. It is necessary to withstand the dough for at least half an hour, and preferably two to three hours.

Filling and shaping the pie

  1. Pour blueberries into a deep bowl, add sugar and potato starch to it.

  2. Mix well with a spatula, transfer to a bowl.

  3. We warm the filling over low heat for about ten minutes, stirring often. After heating, the mass of the filling will look like watery blueberry jam.

  4. Let the stuffing cool down while we make the dough.

  5. We divide the mass into two parts, large and small. We send the last one back to the refrigerator.

  6. We roll out most of the dough into a layer with a rolling pin on a kitchen table sprinkled with flour.

  9. We take out a smaller piece of dough from the refrigerator and also roll it into a layer, then close our pie with it.
