I love to cook, I love to bake, I love to just spend time in the kitchen. But, unfortunately, circumstances sometimes develop in such a way that you barely have time to cook breakfast / lunch, and there is practically no time left for baking. But without a biscuit bun, lunch seems somehow unfinished, so when time is running out, I bake these simple sweet buns from yeast dough. A recipe with a photo, each stage of preparation is described step by step, so you should not have any difficulties with baking. The most important thing is to pay due attention to the dough and the amount of flour (so as not to interrupt the dough). Otherwise, there is absolutely no fuss and no complicated moldings. The dough came up, rolled round buns and baked goods. Everything is simple and amazingly delicious! Buns are soft, airy, with a delicious creamy vanilla flavor!

Ingredients:

  • milk - 200 ml,
  • sugar - 100 g,
  • yolk - 2 pcs.,
  • salt - 0.5 tsp,
  • butter - 100 g,
  • vanillin - 1 sachet,
  • yeast - 25 g fresh or a bag of "quick",
  • flour - 4 tbsp. 250 g each (without peas),
  • yolk + 1 tbsp. l. milk - for greasing the buns before baking.

How to make sweet yeast dough buns

Let's prepare the brew first. To do this, we take the entire volume of milk and dissolve yeast in it and 2 tbsp. l. Sahara. The milk for the dough must be warm, otherwise the yeast (especially pressed) will take a very long time to come up.


When the sweet milk-yeast mixture becomes homogeneous, sift 1 tbsp. flour. We bring the dough to homogeneity and set it aside in a warm place for 10-15 minutes - for good, fresh yeast, this time is more than enough.


As soon as the dough has grown, we introduce yolks into it. Then melted, but slightly cooled butter. I do not advise saving on butter for these buns or even replacing it with margarine. It is this delicate creamy aroma, combined with vanilla, that makes the buns especially fragrant.


Pour the remaining sugar into a bowl and knead the dough with a whisk.


Last but not least, vanillin, salt and flour interfere with the dough.

Be sure to sift the flour so that the dough (and then the pastries) come out really magnificent, and add a little, so as not to interrupt with flour. The finished dough is very soft and does not stick to hands at all. There are different flours on sale, so if you filled up all 4 tablespoons, but you see that the dough is still slightly fluid, add a handful or two more.

Knead the dough well for at least 7-10 minutes, cover and leave to proof. Here you need to be patient and let the dough stand for about 40-60 minutes. The dough must be well suited, otherwise you will not get fluffy buns.


As soon as the dough has grown, move it from the bowl to the work surface, punch down and proceed to the formation of buns. To do this, simply cut off (or pinch off) small pieces about the size of a large tangerine from the dough, and round them.

We place the formed buns on a baking sheet covered with paper. We leave them to rise and only after they grow up, grease the tops with a mixture of egg yolk and milk.


Now the buns can be sent for baking, after preheating the oven to 180-200 degrees. The buns are ready in 20 minutes.


They can be served both warm and cold. They go great with just milk. And if they survive until the morning, be sure to try cutting them in half, smearing them with butter and serving with a cup of hot tea - it’s hard to imagine a tastier breakfast!
