First we make the dough for the pies. This is a very simple technology, but requires care to keep all proportions. Pour salt into boiling water, pour oil. Then we introduce 1 cup of sifted flour and knead properly so that lumps do not form, and the mass is viscous and homogeneous.




As soon as the mass cools down a little, add the rest of the flour to it and knead the soft plastic dough vigorously.




Then we cover it and let it rest while we prepare the filling.




We wash the tomatoes and wipe them dry, then cut into slices.






Grind the cheese on a grater.
Peel the garlic and chop finely.

  • 5-6 medium tomatoes
  • 50 g hard cheese
  • 0.5 greens
  • 1.5 st. l. mayonnaise
  • 1.5 st. wheat flour
  • 0.7 st. water
  • 2 tbsp. l. vegetable oil in dough
  • 100 ml vegetable oil for frying
  • 2 pinches of salt

Cooking

1. In a bowl, stir water with 2 tbsp. l. vegetable oil, salt. Pour in the sifted wheat flour and knead not too stiff dough.

2. Leave it for 15 minutes to "ripen", covering with cling film.

3. On a fine grater, grate hard cheese into a small bowl, chop the washed fresh herbs there and season everything with mayonnaise of your chosen fat content. At this stage, it is possible to add pressed or ground dried garlic.

4. Divide the ripened dough into two halves, roll one of them into a round layer on the working surface, not forgetting to sprinkle it and the rolling pin with flour. Rinse the tomatoes, wipe with a towel and cut into circles, and remove the cuttings. Lay out the tomato circles on the dough, leaving an equal distance between them.

5. Put the cheese mass with greens on the circles, trying not to get on the dough.

6. Roll out the second circle from the remaining half of the dough and carefully cover the first one with it, slightly pressing the mounds with the filling.
