Many people believe that healthy desserts do not exist. And what about cheesecake? Even after heat treatment, the curd filling will retain the original dose of calcium.

This option is ideal for the growing body of the child. Cottage cheese contains not only calcium, which strengthens bones and hair, but also vitamin B, a natural assistant for improving vision.

This product does not contain dyes and harmful food additives. Yes, and mothers should not count calories and be afraid of being overweight. The exception is eating 5 pies a day.

Ingredients:

For dough kneading:

1. Sugar - half a glass;

2. Flour - 2 cups;

3. Butter - 150 gr;

4. Baking powder - 1 tsp

For filling:

1. Cottage cheese - 400 gr;

2. Eggs - 2 pcs.;

3. Starch - 2 tablespoons;

4. Cherry - half a glass;

5. Sugar - 2/3 tbsp.

Cooking method:

1. We start by preparing the dough. Grind the oil on a coarse grater. A similar dough can be made with margarine. Add sugar to butter.

3. Grind all the components with your hands into crumbs. It is advisable to send the sand crumb to the refrigerator for 10 minutes.

4. Cover the bottom of the cake pan with parchment.

5. Place 2/3 of the dough into the mold. After that, the dough should be leveled and compacted with a spoon. If you do not have a springform pan, you can bake the cake on a baking sheet with high sides.

6. The next step is to prepare the filling. To do this, put the cottage cheese in a deep bowl, and beat in the eggs. You can choose cottage cheese of any fat content, and curd mass is also suitable - the filling will turn out to be more airy.

8. Pour in the starch and mix with a spoon until smooth.

9. Put the curd filling on top of the dough and spread evenly over the entire surface. The curd filling will be more airy, pasty if made with sour cream.

10. Place pitted cherries on the curd mass. Instead of cherries, you can use any other berries, fruits, dried fruits. By adding orange and lemon zest, baking will acquire citrus notes.

Pour the remaining third of the dry mixture on top. It should completely and uniformly cover the entire filling.

Let's start baking:

11. Send the pie to the preheated oven for 45 minutes. Baking temperature - 180 degrees.

12. Take out the cake from the mold in a cooled state.

Using this technology, you can bake a cottage cheese pie with crumbs in a slow cooker. However, some nuances should be taken into account:

13. Sand chips in a slow cooker will not turn red, but only soften. Therefore, it is better to use the entire dry mixture as the basis for the pie.

The cooking time of the cake in the "Baking" mode is 60 minutes. However, you should check the readiness of the pie by the curd filling: if there is no fingerprint left when touched, then the dessert is ready. Otherwise, increase the baking time.

14. To prevent the airy soufflé from settling, the freshly baked cake should be cooled directly in the bowl.

The pie is very tasty. on top of a crispy, ruddy crust, under which there is a delicate curd layer with cherries, and a crispy, shortbread base. Decorate the cake as you wish: with grated chocolate, powdered sugar, fresh berries or almond flakes.

Who doesn't love cherry pies? Cherry pie is generally absolutely reference, it always comes to mind when it comes to homemade pies. Well, how else? After all, a successful cherry pie is really beautiful, it combines the most attractive and appetizing colors and textures, this sourness of juicy ripe cherries, the tenderness and aroma of a ruddy, golden sand cake and the sweetness of sugar crumbs - just divine! But this very cherry pie, the dream of a sweet tooth, the beauty and pride of the hostess, nevertheless, is an insidious thing, with whims and tricks that suddenly appear in the cooking process. We don’t want to get a thick layer of dough that doesn’t want to bake in any way, but only burns? Or a flowing incomprehensible substance instead of an elastic berry filling. Or even boiling porridge made from cherries and dough ... A pie with cherries is full of surprises, which is already there. But I defeated him, calling for help all the logic and self-control. And here it is, get acquainted - an excellent pie with a perfect, berry to berry, cherry filling on a thin and crumbly, absolutely not wet shortbread cake, and even with a sweet crumb on top. Overeating! What is the secret - I will explain along the way, be careful.

To make this Cherry Pie with Sugar Powder, you will need the following ingredients:

Dough:
100 g butter,
1 egg
60 g sugar
170 g flour
a pinch of salt,
zest of one lemon
1 tsp baking powder.

Filling:
500 g cherries
150 g sugar
50 g breadcrumbs.

Chit:
40 g butter,
50 g sugar
60 g flour.

How to make a simple cherry shortbread pie with crumbled sugar:

So, let's move on to the process of making a cherry pie from shortcrust pastry with sugar crumbs.

First, let's prepare the filling. From carefully washed and dried cherries, we take out the seeds and fill the berries with sugar.

Leave for half an hour for the cherry to release the juice. After that, we still heat it over low heat, not for long, just a couple of minutes, without bringing it to a boil. See how much juice has appeared. If they put cherries in the pie as it is, without processing, it would drown in this liquid. In addition, cherries, having been in syrup, will become sweeter. Do not be afraid, it will not be too sweet - the grassy aftertaste characteristic of these berries will simply go away.

Set aside the cherry for a while and proceed to the test.
Combine softened butter, sugar, egg, salt and lemon zest. You can, of course, just add vanillin, but if you are not too lazy and still grate lemon zest into the dough, the aroma of the pie will be unreal!

Mix the ingredients with a mixer.

Add flour and baking powder.

And knead soft dough.

Grease a baking dish with a diameter of about 25 cm with sunflower oil and sprinkle with flour.

We distribute the dough in shape, make small sides.

Sprinkle the dough with breadcrumbs (we made sure that the cherry juice did not exactly wet the cake during baking).

We select cherries from the syrup (we just catch them, no need to squeeze, there will be no excess juice) and put them on top of the crackers.

Now it's a matter of crumbs. Combine flour, cold butter and sugar.

Quick recipes have long become one of the favorites for modern housewives, because the modern rhythm of life does not allow us to spend a lot of time on cooking, especially when it comes to baking. But you really want to pamper your family with something delicious, homemade! Cottage cheese pie with crumbs is one of those options, for the preparation of which we will spend a minimum of time and effort, while the result exceeds all our expectations. Still don't know his recipe? We'll be happy to share!

Classic cottage cheese pie

As a rule, in the process of preparing a recipe, each cook adds something of his own to the recipe, adding personality to the dish. And over time, it changes so much that it is almost impossible to return to the roots. If we talk about cottage cheese pie, then some people make it with the addition of berries, pour fruit jelly after baking, add citrus fruits, jam or pieces of fruits and berries to the filling.

We offer you the original version of the recipe, changes to which you can make to your own taste.

Dough Ingredients:

  • Flour - 2-3 cups;
  • Butter - 1 pack;
  • Sugar - ½ cup;
  • Soda - 1 teaspoon.

Filling Ingredients:

  • Cottage cheese - 300-400 grams;
  • Egg - 1 piece;
  • Vanillin - 1 pack (to taste);
  • Sugar - 1 glass.

Cooking a pie with cottage cheese crumb according to the recipe is not difficult in principle, but for your confidence, we have detailed the step-by-step process:

  1. The first thing to do in the kitchen when planning to bake is to turn on the oven. Since the ingredients for the pie are cooked quite quickly, this time is enough for it to warm up well. So, set the temperature to 200-220 degrees (it all depends on your oven) and start cooking.
  2. We freeze the butter in the freezer, so it will be much easier to knead the crumbs from it.
  3. Grated frozen butter.
  4. Sift flour and mix with soda or baking powder.
  5. We mix butter, sugar and a mixture of soda and flour in one bowl, after which we knead the crumbs by hand. Please note that our task is not to knead the classic shortbread dough, but to leave it in the crumb consistency. We send everything to the refrigerator, since both shortbread dough and shortbread crumbs do not like heat.
  6. Now let's start preparing the filling. Here the algorithm will depend primarily on your taste and on which version of the cottage cheese you prefer. If this is a curd mass, which initially has a uniform consistency, then it will be possible to immediately start mixing. Granular cottage cheese, if you don’t like such a structure, you will have to grind through a sieve or pass through a meat grinder. If you want to keep the graininess, you will have to knead the filling very, very carefully.
  7. Having decided on the texture of the filling, we begin to combine all the ingredients. It is better to beat the egg separately with sugar until a thick foam, then just add this sweet mixture to the curd mass and knead.
  8. Preparing the form. It is advisable to pre-lubricate the usual form with a small piece of butter; with silicone, such manipulations are not necessary at all.
  9. We divide the crumb in half, since we will lay it out in two layers. The first layer is flour crumbs, the second will be the curd-egg mass, which must be evenly distributed throughout the form. The last layer is the remains of the crumbs. We try to distribute them in such a way that they completely cover the cottage cheese.
  10. We send everything to the oven. On average, a cheesecake with crumbs bakes for about 20 minutes, but it’s better to focus on its condition than on the recommended time, because different ovens can work in completely different ways. A golden crust in this case does not always indicate readiness, since the readiness of the filling is of paramount importance here. If the crust is already ready, take out the pastries and check the consistency: shake a little. The finished delicacy will not "shudder". In the case when it remains watery, you need to reduce the baking temperature and send the cake again for another 10 minutes.

Try not to take the cake out of the mold until it has completely cooled, as it may break. It is also better to serve it already cooled down, because hot cottage cheese can burn you badly. How to apply? As your soul desires! You can simply cut it into segments and serve it with a cup of tea, or you can feel like a real artist and create a mini-masterpiece on a plate. Decorate it with fruit sauce, multi-colored jelly pieces or jam, and sprinkle with powdered sugar on top. The final touch is a mint leaf. Believe me, no one will even guess that under all this beauty the most ordinary cottage cheese pie with shortbread is hidden.

Margarine pie

As you know, both butter and margarine are equally well suited for shortcrust pastry. Moreover, the latter makes baking much more budgetary, because these products differ significantly in cost. Therefore, we decided to offer you a recipe for a cheaper treat:

Ingredients:

  • Flour 3 cups;
  • Margarine - 1 pack (200-250 grams);
  • Soda 12; teaspoon (you can replace 1 tsp baking powder);
  • Cottage cheese 400 grams;
  • Egg 1 piece;
  • Sugar 1 glass.

Now let's start cooking the pie with margarine:

  1. It is not necessary to freeze margarine, just enough to keep it cold.
  2. Sift the flour and mix with soda, pour it onto the prepared surface in a slide. It will be much more convenient to knead the crumbs on the table, and not in a bowl.
  3. We spread the chilled margarine in the center of the slide and chop it into small pieces with a knife. When the margarine is fine enough, you can continue kneading with your hands. The main thing is not to overdo it and not turn the crumb into a full-fledged dough. You can add sugar to the mixture, but we did not include it in the recipe, since for many the combination of sweet dough and the same filling seems very cloying. The resulting amount of crumbs is divided approximately into two equal parts and sent to the refrigerator for a while, while we will deal with the filling.
  4. Turn on the oven and start preparing the filling. Beat the egg with sugar in a separate bowl. If it seems to you that one egg is not enough for such an amount of cottage cheese, you can add another one, because, as they say, you can’t spoil porridge with butter.
  5. We give the cottage cheese a homogeneous structure with a blender or meat grinder and add to the egg mixture. Bring it back to homogeneity. Everything, the filling is ready. It's time to start forming the pie.
  6. For baking, a detachable form is most suitable, since then there are no problems with getting it. Lubricate the form with a small amount of margarine or cover the bottom with parchment. Spread the crumbs in the first layer. If you are very confused by its porous structure, you can press down a little with your fingers. Then pour the curd-egg mass and smooth it well. The last layer is the second part of the crumb. We try to completely cover the top with it.

Now we send our workpiece to the oven that has warmed up by that time. Baking will reach readiness in about 20-30 minutes, but after 15 minutes, start watching the top. A feature of some ovens is that the top layer of the cake starts to burn, while the middle is not baked well enough.

Therefore, if you see the liquidish structure of the cake itself with a golden crust, slightly reduce the degree of baking. Some chefs also recommend covering the pastry with parchment or a sheet of paper on top (however, this is undesirable if the form is in close proximity to a heat source). It is best to serve it chilled.

My family most appreciates delicious and healthy cottage cheese pies, which I quickly and without hassle cook in the oven or slow cooker. I got the recipes from my grandmother, who often surprised us and family friends with delicious sweet pastries, cooked in just an hour or an hour and a half.

One of her signature creations was a stunning curd cake with crumbs, famous for its tenderness, exquisite taste and pleasant fresh aroma. Such a pie is perfect for both a standard family tea party and a sweet children's dessert - even the most fastidious children will like its attractive appearance.

Did you know? Among the ancient Slavs, cottage cheese was considered one of the most obligatory products for consumption. It was used almost every day. Our ancestors rightly believed that there is nothing more useful than a tender and crumbly dairy product, and its addition to pies and cakes makes them true masterpieces of national cuisine.

Ingredients and preparation

Kitchen appliances

Prepare the equipment and utensils that are necessary for making a cottage cheese pie:

  • a round metal shape (preferably detachable) with a diameter of 20 cm or a multicooker bowl with a non-stick coating;
  • volumetric bowls with a capacity of 300 to 800 ml;
  • a few teaspoons and tablespoons;
  • steel whisk;
  • large grater;
  • measuring cup or kitchen scales;
  • linen or cotton towels;
  • wooden spatula.

In addition, also prepare a blender (if you have one) to properly mix the filling for your pie.

Chit

Additionally

  • 10 g creamy margarine or butter.

Important! It doesn't matter what density you choose for your pie, but it should not contain too much liquid. If you come across one just like this, put it on a double layer of gauze an hour before cooking, tie it at the top and hang it over the sink - unnecessary moisture will gradually drain in this way.

  2. Lubricate the shape or bowl of the multicooker with margarine or butter.

    Important! You can also dust your pan with a teaspoon of flour on top of the margarine to make sure the cake doesn't burn or stick to it. However, do not pour more than 10 grams: excess flour will mix with crumbs, and the taste of the bottom of the pie will be lower than the top.

  3. We take the crumb out of the refrigerator, divide it into two parts.

  4. Pour the first half of the crumbs into the bottom of the mold or multicooker bowl.

  5. Smooth out, spread the curd base on top.

  6. Smooth again with a wooden spatula.
  7. Pour the second part of the crumbs over the curd mixture.

  10. Check for readiness with a wooden skewer or toothpick.

In principle, baking with creamy flour crumbs does not need additional decoration, but you can additionally pour melted dark chocolate on top of your cake or sprinkle with crushed nuts.

Calories per 100 g: 150-250 kcal.

You will need:

  • 125 g of cottage cheese;
  • 30 g butter;
  • 200 g of powdered sugar;
  • 3 g vanillin.

Did you know? For cream, cottage cheese with a fairly high fat content is ideal: about 9%. Also, choose a fine-grained product, as this will make the consistency of the cream smoother.

Cooking sequence

Ready! Now get ready to decorate your cake: take a pastry bag or a spacious syringe and fill it with cream.

Then carefully draw a circle with cream on the surface of the product, focusing on the edges. That's all - now turn on your imagination and draw any shapes that you can think of, including congratulatory inscriptions or beautiful floral ornaments. The main thing in this matter is not to overdo it and not overload the cake with an obscure pattern that cannot be disassembled at first glance.
