Today I will tell you how to quickly and tasty cook a luxurious pie with chicken and potatoes on kefir, which is baked in the oven. Yeast dough for a kefir pie is made in just 10-15 minutes and turns out to be unusually soft and airy. It will take you about 20 minutes to prepare the filling.

I offer two toppings for you to choose from. In fact, using the same dough, you can make two completely different pies. Cook both options in turn, because they are both successful and very tasty. A pie with chicken fillet and potatoes in the first version turns out to be juicy and fragrant due to the fact that during the cooking process, a little chicken or vegetable broth is poured into the filling through the hole on the lid (you can use water).

In the second version, the filling of potatoes, chicken, mushrooms and cheese is laid out in layers and simply covered with a dough lid. In both cases, the cake turns out to be wonderful, able to easily win the hearts of people close to you. Let's start by preparing a hearty, juicy potato and chicken pie.

Kitchenware:

  • ladle or small saucepan;
  • 2 bowls: one wide, larger (for kneading dough), the other smaller (in order to marinate the chicken);
  • wooden spatula or spoon;
  • pie mold (baking tray);
  • bag or cling film;
  • pan;
  • oven.

Required products

For the chicken and potato filling:

  • 300 grams of chicken meat;
  • 4-5 medium sized potatoes;
  • bulb of medium size;
  • 50 grams of kefir;
  • a teaspoon of salt;
  • black pepper to taste;
  • a teaspoon of paprika;
  • two tablespoons of chopped cilantro (parsley);
  • 1 bay leaf;
  • 2-3 tablespoons chicken or vegetable broth (if no broth, use water)
  • 50 grams of butter for frying the onion and another 20 grams to grease the pie

To decorate the pie:

  • egg yolk

For the chicken, potato and mushroom filling:

  • 250 grams of champignons;
  • 3-4 potatoes;
  • small chicken fillet;
  • bulb;
  • 150 grams of any hard cheese;
  • half a glass of sour cream;
  • chopped parsley;
  • salt to taste;
  • pepper to taste;
  • oil for frying mushrooms.

Choice of Ingredients:

  • Any kefir is suitable for making dough, I usually take medium fat content.
  • The flour must be sifted, so the dough will turn out more magnificent.
  • For the filling, chicken meat can be from the thigh or breast. The main thing is that it is fresh.
  • In the first version of the chicken and potato filling, it turns out very tasty with chopped cilantro. This healthy spicy herb will give the cake a unique spicy, oriental flavor. It is best to buy fresh cilantro in the market. If for some reason you do not like cilantro, replace it with parsley.
  • In the second version of the chicken, potato and mushroom filling, I use fresh champignons, but any dried mushrooms are also perfect. They must first be boiled and fried with onions. For this recipe, any kind of hard cheese that is on hand will work. I use "Poshekhonsky" or "Russian".

Pie step by step

To begin with, let's start preparing our kefir dough for chicken and potato pie.

  1. Mix kefir with half a glass of sunflower oil and heat a little, the mixture should be warm. Dissolve salt and sugar there.

  2. Mix sifted flour and yeast. Then take a wide bowl and make a slide out of this mixture in the middle. In the center of the slide, make a recess with a diameter of approximately 15-20 cm.

  3. Pour the warm kefir-yeast mixture into this recess.
  4. Take a spoon and slowly mix with a spoon, moving from the center to the edge, flour with kefir mass until it thickens.

  5. Now dust clean, dry hands with flour and knead the dough with your hands. Do everything in the same wide bowl. Stop when you see that the dough does not stick to your hands, that it has become soft, elastic and elastic. Now that everything worked out and you have a soft lump of perfect dough in your hands, put it in a bag or cover with cling film. The test will take about 15 minutes to "fit". Leave it, and do the stuffing yourself.

  6. Finely chop the onion and sauté it in butter.

  7. While the onion is cooling, marinate the chicken. Cut it into medium cubes, put in a bowl. Add kefir, paprika, salt, pepper and mix well. Leave for a while.

  8. Now prepare the potatoes. Wash, peel and cut into small cubes.

  9. Mix all the filling ingredients and add bay leaf to them. The filling is ready.
  10. Sprinkle a clean table with your hand. Divide the dough into two parts (the first is slightly larger, the second is smaller).

  11. Roll out the first piece of dough in the shape of your baking sheet or baking dish (rectangular or round) and place the dough on the oiled pan so that it goes over the sides (to make pinches). Spread the filling in an even layer and evenly distribute the chopped cilantro (parsley).

  12. Roll out the second part of the dough and cut a circle with a diameter of 5-7 cm in the middle. This will be the lid of the pie. The hole is needed in order to pour broth (water) into the cake. This will make it more juicy and tasty. Cover the pie with this dough and make beautiful tucks around the edges, similar to a pigtail.
  13. Preheat oven to 180°C and bake for 25-30 minutes. Then take the pie out of the oven and pour a couple of tablespoons of broth into the hole on the lid of the pie. Brush the top of the pie with egg yolk.
  14. Send the cake back to the oven for another 15 minutes. Potato pie with chicken is golden brown, emits a fragrant fragrance, and, therefore, it is ready.
  15. Take out the finished cake and grease it with butter to make it shine. If you will not serve it to the table immediately, cover the cake with a damp canvas napkin, and cover with a waffle, kitchen towel on top. So all the moisture will remain in the cake and it will be juicy and soft even the next day, if it survives.

Pie options

A delicious pie can also be made on the basis of yeast (as in my recipe) or yeast-free dough (as in the video recipe). Of course, with yeast dough, the cake turns out to be more magnificent and softer. Instead of chicken fillet in a potato pie, you can use minced chicken. In general, for the filling, you can use both raw ingredients and brought to half-cooked or fully cooked.

If you put raw potatoes, chicken and onions in the filling, the baking time of the pie will increase slightly (up to 40-45 minutes), but you will spend less time preparing the filling. If all the ingredients are already cooked, the baking time for the pie will be reduced to 20-25 minutes, but you will have to “tinker” with the filling a little.

Try to cook this way and that, and you will understand which cooking option is more to your taste. You can add all kinds of spices that you know and love to the filling, greens, as well as cheese and mushrooms, as in my second version of the filling. You can also bake open pies with chicken and potatoes.

A hearty pie with chicken and potatoes can be safely prepared for dinner, it can easily replace any dish and perfectly satisfy your hunger. There are many different recipes for chicken and potato pies. The dough used in this recipe is very easy to prepare even for an inexperienced hostess. It turns out airy and soft, for its preparation you need a minimum of products. In some sources, this yeast dough is called "dough like fluff."   • flour - 600 g;
  • fast-acting yeast - 1 pack (11 g);
  • kefir of any fat content - 200 ml;
  • salt - 10 g;
  • vegetable oil - 100 ml;
  • sugar - 20 g.

  • medium-sized bulb - 1 pc.;
  • potatoes - 300 g;
  • chicken fillet - 400 g;
  • salt - 10 g;

Recipe for chicken and potato pie in the oven:

We begin to prepare "dough like fluff." Mix kefir just above room temperature with instant yeast. Leave this mixture for about five minutes so that the yeast is completely dissolved. Then add sugar and salt to it. We mix.
Add vegetable oil and mix gently.

Gradually add flour through a sieve. Mix better with your hands. Vegetable oil in the composition makes the yeast dough not sticky, it is very easy to form it.
Yeast dough for the pie must be covered with a towel and placed in a warm place for 1.5-2 hours. During this time, it will rise, and it will need to be kneaded at least 2 times. The dough is like fluff for a delicious pie with potatoes and chicken is ready.

Cooking stuffing for chicken and potato pie
Now it's time to prepare the potato and meat filling. Chicken fillet should be finely chopped. You can use ready-made minced chicken for filling or chop poultry meat in a blender.
Potatoes must be washed and peeled. Then cut into thin slices.
Finely chop the onion and greens, it is best to do this in a blender. Onion, herbs and chicken fry over medium heat until half cooked. Let's not forget the spices. In a separate frying pan, cook potatoes, salt and pepper.

Cooking a delicious cake in the oven
We divide the finished yeast dough into two equal parts. Carefully roll them out with a rolling pin. Lubricate the baking sheet with vegetable or butter so that the finished cake does not stick to the bottom.

We begin to form a pie with a filling. Lay fried potatoes on the bottom sheet of yeast dough. Place chicken and onion over potatoes. Above is the second sheet. Carefully seal the edges of the pie so that the potato filling does not fall out.
From above, the cake can be smeared with beaten egg yolk (so that the lush and tender cake is golden brown), you can skip this step.

We send the baking sheet with the meat pie to the preheated oven for about 30 minutes. Baking temperature - 180-190 degrees.

Wash potatoes, peel and rinse again. Cut the potatoes into thin slices (slices) about 3-4 mm thick. Dip the potatoes in boiling salted water and cook for 7 minutes. After that, drain the water and cool the potatoes (under the lid so as not to become weathered).





We wash the chicken fillet, dry it with paper towels and cut into thin slices (about 0.5 cm), across the fibers. Salt and pepper the fillets.





The dough for such a pie can be used ready-made - puff or yeast. And you can cook.





We divide the dough into 2 parts: 2/3 and 1/3. Grease a detachable baking dish with vegetable oil. You can line the form with parchment, but if the parchment is of poor quality, it is better to grease it too. We spread most of the dough into a mold and splash it with our hands, forming sides 2.5 - 3 cm high.







We spread a layer of chicken fillet on the dough, placing the pieces close to each other, without gaps.





We clean the onion from the husk, wash and cut into very thin half rings. Next add a layer of onions.





Then we place a layer of potatoes.





The remaining piece of dough is splashed or rolled out to a mold diameter (20 cm) and carefully transferred to the mold, covering the potato layer. We connect the protruding side with the upper layer of dough and securely pinch. In the center of the dough, we select a little dough and form a round “lid” with which we cover the resulting hole. (You will need this hole to add some water to the cake - to make it more juicy.)







Shake the egg yolk with half a teaspoon of water and grease the surface of the pie.





We place the form with the pie in the oven preheated to 190 degrees C for 20 minutes. Then we take out the cake, carefully remove the lid and pour about 2-3 tablespoons of water into the hole. If there is a layer of potatoes under the lid, cut it so that the water gets inside and is absorbed, and does not flow out to the surface.





Place the cake in the oven for another 20 minutes. But we make sure that the top of the cake does not darken too much, so after 10 minutes we cover the top with a sheet of foil.





We take out the finished cake from the oven, cool for 10 minutes, and then remove the detachable part, transfer the cake to a dish and serve. The pie is also delicious cold.

How to make Chicken and Potato Pie:

In a deep bowl, cut the softened butter into pieces. I add flour mixed with salt (2 tsp), and quickly knead with my fingers until fine crumbs.


I add cold water and knead the dough. I stir until the dough comes together into a ball. I will say right away that it is not very convenient to mix the dough, it will crumble and stick to your hands. To facilitate the kneading process, you can grease your hands with vegetable oil.

When the dough rolls up in a lump, I put it in the refrigerator and start preparing the filling.


Peel potatoes and cut into small cubes. I separate the chicken thighs from the bones, chop them. I put everything in a saucepan, sprinkle with salt (1 tsp) and pepper, mix.


I am filling. Beat eggs, sour cream, milk in a deep bowl with a whisk until smooth.

I grease the cake mold with a piece of butter. I take the dough out of the refrigerator. I put it in a mold and knead it along the bottom with my hands. I make high sides (4 cm). I prick in several places with a fork so that the dough does not swell during baking.


I put the filling on the dough. I press lightly with my hands.


I pour over the top. It should almost cover the filling.

I cut the cake right in the mold. I did this as carefully as possible so as not to scratch the shape. She took out the pieces with a wooden spatula. I did not dare to take it out entirely, because it is very large.
