For test:
- flour -1.5 cups
- butter - 150 g
- egg - 1 pc.
- yolk - 1 pc.
- sugar - 150 g

For filling:
- cherry - ½ kg
- vanilla sugar - ½ sachet
- powdered sugar - 2-3 tbsp. spoons

For protein foam:
- egg whites - 5 pcs.

Cooking cherry shortcake with protein foam

1 .Mash the softened butter with sugar, add the egg, egg yolk, vanilla sugar and, adding flour, knead the dough. It is not necessary to knead for a long time, as soon as it begins to gather in a lump, stop kneading.

2. Lubricate the cake pan with butter and spread the dough in it with a thickness of 1 cm with the transition to the sides.

3. Remove the pits from the cherries and drain in a colander to separate excess juice. Then lay out on the dough in the form.

4. Put the cake in the oven preheated to 190 degrees and bake for 40-45 minutes.

5. Remove the cherry shortcake from the oven, sprinkle with powdered sugar mixed with vanilla sugar.

1. Divide the butter into small cubes. Add granulated sugar and grind until a homogeneous white mass is obtained, we will try to grind so that the grains of sugar dissolve better in the total mass. The main secret of tender shortcrust pastry is that it must be prepared from cold butter.


2. Separate the proteins from the yolks, add the latter to the oil base, mix the ingredients thoroughly. Put the squirrels in the fridge to keep them cold.


3. Sift the flour into the resulting dough base. It is better to sift it through a sieve so that the dough is light and fluffy.


4. Quickly knead the dough and put it in the refrigerator for 10 minutes. When kneading and rolling, it is important to sprinkle the surface with flour as little as possible, try to do it quickly so that it remains tender and pliable.


5. If possible, squeeze the juice from the cherries so that the cake remains dry inside.


6. Lubricate the baking sheet with butter, roll out the dough for the base of the pie right on it.


7. Lightly sprinkle the dough with starch, it will not allow the juice from the cherries to spread.


8. Gently spread the berries over the entire surface of the dough and put the baking sheet in the oven, heated to a temperature of about 100 degrees, for 20 minutes.


9. Let's start forming a layer of meringue. We take out the remaining proteins from the refrigerator, it is important that they are cold, then the meringue whips better. We put them in the mixer bowl and start whipping the protein mass. When the protein is whipped enough, the foam will become white and strong, we begin to pour sugar into the mass with a tablespoon. It should be white and strong.


10. We take out the base of the pie from the oven, cool it slightly and cover it with the finished protein mass on top, using a spoon or a culinary syringe we form patterns. This jam pie was supposed to bear the proud name of Gagarin's Pie. Should have, but didn't. Pie recipe, which caught my eye under this name, turned out to be not at all the pie for which he pretended to be. And I had to change the recipe a little during the baking process.

Pie Ingredients:

Jam (thick), marmalade, jam or confiture - for filling (it is better to take with sourness)

Potato starch - for sprinkling jam filling

A pinch of salt - for the meringue

A pinch of citric acid - for meringue

For sand dough:

Flour - 2.5 cups (a glass of 200 grams, which includes 140-150 grams of sifted flour)

A pinch of salt

1 teaspoon baking soda (no top)

200 gr. butter or margarine (chilled)

Eggs - 4 pieces (whites for filling, yolks - for dough)

Milk - 0.5 cup (approximate amount) Note: a small amount of milk may be needed if the dough is hard and will not mix into a lump

Sugar - 1 cup (half a cup - for the dough (mixed with yolks), the other half of the cup - for the filling (meringue)

Cocoa powder - 1.5-2 tablespoons (in the dough)

Sift flour along with baking soda.

Here we rub the butter on a grater, add salt

In another cup, mix the yolks with half a glass of sugar and grind well, preferably to such a state that there are no sugar grains left.

We combine both masses, mix.

We divide the dough into three unequal parts: two identical - smaller and one larger (this part will be the basis for the pie). Mix one of the small parts with cocoa.

The finished dough does not mix well with cocoa, and uneven coloring may result. Do not worry, this will not affect the taste of the pie and do not knead this piece for a long time so as not to disturb the structure of the shortcrust pastry.

We put the largest piece in the refrigerator, wrap the smaller pieces, each separately, in polyethylene, and put them in the freezer (for about 1 hour).

While the dough is freezing, make meringue for pie.

Start beating the egg whites with a mixer at a low speed, gradually moving to a higher speed. While beating, add a pinch of salt. When the proteins increase in volume, gradually add sugar and beat until we get meringue. At the end of whipping, add a pinch of citric acid. Meringue should be whipped until stable, as in the photo. Sprinkle the surface of the jam with starch. Next, rub the second piece of dough with cocoa on top of the jam.

  • a handful of crushed almonds (they can be replaced with other nuts)
  • 4 egg whites
  • a few drops of lemon juice
  • 2 tbsp. spoons of powdered sugar

For shortcrust pastry, beat butter with egg yolks, sugar, vanilla with a mixer, add 1 tsp. a spoonful of lemon zest.

On top of the sweet butter mass, sift the flour, pre-mixed with baking powder and salt.

Knead the elastic dough, wrap it with cling film and put it in the refrigerator for half an hour.

Then preheat the oven to 180 degrees.

In a separate container (it is very important that it is dry), beat the egg whites with a few drops of lemon juice with a mixer until a stable foam, gradually pouring the powdered sugar in a thin stream.

Should not be too sweet, because there is enough sugar in the jam.

We cover the baking sheet with parchment, spread the dough on it and roll it right here into a thin rectangular layer, almost the size of the baking sheet.

We distribute raspberry jam on top of the dough, sprinkle it with crushed nuts and carefully spread the whipped proteins with the top layer.

We bake a shortbread pie “under a fur coat” for about 25 minutes, until the surface of the protein coating is golden.

Sprinkle the top of hot pastries with 1 teaspoon lemon zest for extra flavor.
