Liver cake cookie recipe. Liver cake: delicious recipes from beef, pork and chicken liver in layers with a photo

Decided to take a swing at the liver cake? Especially for you in detail how to cook a liver cake according to all the rules. Of course, the liver cake looks like only a professional chef can make it. But in fact, everything is simpler than it seems. There is an easy way to make sure that the liver pancakes that make up the cake do not fall apart, turn out to be soft, do not burn or taste bitter. We will give you the ideal proportions of products for the cake. Let's tell you how much mayonnaise is needed for impregnation. And it’s not at all necessary to start with a high construction of 10-12 layers. First, prepare a liver cake, such as in the photo. Really, is he cute? And you only need to fry five pancakes for him. Any skill can be developed with experience. The simpler the initial task, the more impressive the end result will be. So, to business!

Ingredients:

for 3 cakes (or 1 high):

  • pork liver (or beef) - 700g;
  • milk - 100 ml;
  • chicken egg - 2 pcs.;
  • wheat flour - 150g;
  • sunflower oil - 20 ml;
  • salt - to taste;
  • onion - 1 pc.;
  • carrots - 1 pc.;
  • mayonnaise - 2 packs;
  • garlic - optional (about 5 cloves are needed);
  • greens - for decoration.

How to make liver cake

First, let's dwell on the typical mistakes of those who cannot make a liver cake:

  1. incorrect proportions of ingredients (for example, little flour - pancakes crumble),
  2. not enough butter in the dough - pancakes burn,
  3. too strong fire - pancakes are not fried until cooked,
  4. not enough mayonnaise - the cake is not soaked enough,
  5. a lot of garlic - the dish will be bitter.

And now in detail about how to cook a liver cake so that it turns out tasty, beautiful, and “correct”.

First you need to deal with the liver. This is a very whimsical product that must be bought fresh. I do not advise taking frozen liver, because after defrosting its taste is lost. Both pork and beef liver are suitable for making a liver cake. There is no fundamental difference, the only thing is the cost (beef is 2 times more expensive).

Soak the liver in water or milk for several hours, and then mince, along with one peeled onion, or chop these products with a food processor.

Crack the eggs in there.

Pour in milk. Beat everything well until smooth. The dough for the liver cake should turn out like thick sour cream, without lumps. Add flour or milk if necessary.

Pour sunflower oil directly into the dough, stir.

Now you can fry the "cakes". Preheat the pan, switch the fire to slow. Then pour the dough with a ladle, distribute it in a thin layer over the entire bottom. You need to fry the liver pancake on both sides, but always on a slow fire so that the inside of the pancake can bake well.

The dough should make about 15 pancakes, which is enough for 3 low cakes (5 pancakes for each). By the way, if you want, you can make a tall liver cake from all the pancakes. While the cake layers for the liver cake are cooling, grate the carrots and fry them lightly in a pan, cool. Lubricate each pancake with mayonnaise, then lay out the carrot (2-3 teaspoons are enough), cover with the next pancake and repeat this several times.

Lubricate the top of the cake with mayonnaise, decorate with herbs or grated boiled egg. We leave the cake in the refrigerator for several hours so that it is well soaked. Before serving, do not forget to cut the liver cake into portioned pieces.

The liver is very useful, it is rich in protein, vitamins of groups B, A, C, E, D, K, PP. It contains valuable mineral components such as nickel, potassium, phosphorus, iron, magnesium fluorine, zinc, as well as useful cholesterol, fatty acids, enzymes. The use of beef liver is recommended by dietitians with a decrease in hemoglobin, weight correction, to strengthen the musculoskeletal system, and immunity.

Liver cake can be made from both chicken and beef liver. . As a last resort, you can use pork liver, but not everyone loves it because of the bitter taste. To reduce it, cut the pork liver into pieces and soak for 1-2 hours in milk. As a filling, sour cream or low-fat mayonnaise with various sautéed vegetables, fried mushrooms or boiled eggs is suitable. This makes the cake very tasty. Garnished with a grated egg or carrots, this dish will be the main one on the festive table.

In order for such a valuable product as the liver to benefit your body, choose it correctly. Here are the main recommendations:

Recipe

No festive feast is complete without appetizers. At the same time, every hostess wants not only to tasty feed the guests, but also to surprise with an unusual treat. When planning a menu, we most often prefer budget and economical dishes that do not take a lot of time to cook. Therefore, one has to show culinary imagination in order to turn the available ingredients into a beautiful and appetizing gastronomic masterpiece.

Among such dishes, the first place in my cookbook is a simple recipe for an appetizer liver cake with carrots. It is easy to prepare, and the necessary offal can be purchased on the market or in any supermarket for a reasonable price.

Ingredients:

for cakes:

  • beef liver - 600 g
  • eggs - 3 pcs.
  • milk - 150 ml
  • sunflower oil - 50 ml
  • flour - 3 tbsp. l. with a slide
  • salt - 1 tsp without a slide

for filling and decoration:

  • sour cream - 250 ml
  • boiled egg - 2 pcs.
  • carrots - 2 pcs.
  • onion - 1 pc.
  • vegetable oil - 3 tbsp. l.
  • salt, pepper - to taste.

How to cook

Beef liver for cakes must be thoroughly washed and cleaned. It is necessary to remove a thin film from it.

To make the film easier to separate, the liver should first be soaked for 30 minutes in cold water.

After removing the film, it is necessary to carefully cut out large vessels. To clear the offal from the bile ducts, cut it into smaller pieces so that the cut goes along the veins. The opened ducts on the sides must be cut with a sharp knife and carefully separated along the entire length from the liver.

Then the liver must be cut into large pieces.

They should be crushed with a blender or passed through a meat grinder. You should get a homogeneous liquid mass.

Add eggs and milk to it. The cakes will turn out thin and bake well if you follow simple proportions: for 200 g of liver you need 1 egg and 50 ml of milk. Mix the liver dough with a whisk and add salt.

Then you need to pour in a little vegetable oil. Thanks to this ingredient, the cakes will not stick to the pan when frying.

In order for the dough to acquire the desired consistency, flour should be added. Depending on its hygroscopicity, 2-3 tablespoons will be required.

Instead of wheat flour, you can use potato or corn starch.

The liver dough must be carefully so that no lumps remain. In order for the mass to turn out homogeneous, you can use a mixer or blender.

It is better to make cake layers of small diameter so that they do not break. To do this, you can use a pancake maker or a frying pan with a diameter of 15-16 cm. It should be lubricated with a napkin soaked in vegetable oil and warmed up well. Then you need to pour a little dough into the pan and distribute it in a circular motion in an even layer. The layer thickness should be 3-4 mm. The cake must be fried until the pink tint disappears for 2-3 minutes.

Then pry it off with a spatula and turn it over with a quick movement. After 2 minutes, the cake should be transferred to a plate to cool, and start frying the next one.

From the specified amount of ingredients, 10-12 cakes are obtained.

While they are cooling, you need to prepare the filling. To do this, wash, peel and finely chop or grate carrots and onions.

The cut of my cake looks rough. Try using a fine carrot grater. It will be more beautiful.

They should be sautéed in vegetable oil for 7 minutes until soft. Then the filling must be removed from the heat, salt and pepper to taste.

When the cakes and filling are completely cool, you can collect the cake. Each cake must be greased with sour cream.

Take the amount of sour cream according to the situation. The more sour cream, the softer the cake. But know the measure.

On all cakes, except for the top, you need to put 1 tbsp. l. filling and distribute evenly.

Before you grease the last layer, you should lightly press down on the cake so that there are no voids left.

Then the top cake and sides of the cake should be greased with sour cream.

The remaining boiled eggs must be divided into protein and yolk, and then grated on a fine grater.

Sprinkle the top cake with crushed yolks, and decorate the sides of the cake with whites.

To make the liver cake even more elegant, you can decorate it with a carrot or tomato rosette and herbs or onion arrows.

I recommend putting the finished treat in the refrigerator for a couple of hours for impregnation. Then cut into portions, or serve whole with a knife for cutting and a spatula for easy plating.

Other options for toppings for the cake

Nut-garlic stuffing

One of the simplest and most delicious fillings for this appetizer can be made from a mixture of mayonnaise (sour cream), mustard sauce, chopped walnuts and crushed garlic. Nuts give a pleasant taste and crunch, which is in perfect harmony with the dish. Thanks to the nuts, the snack is even more satisfying and nutritious.

Ingredients:

  • mayonnaise or sour cream - 350 - 400 ml
  • walnuts -20 pcs.
  • garlic - 4 cloves
  • black pepper - 0.5 tsp.
  • mustard sauce - 2 tbsp. l.
  • hard cheese - 70-100 g (for decoration).

Cooking

  1. Chop the shelled walnuts very finely with a knife. Of course, it would be much faster and easier to grind nuts with a meat grinder or knead on a board with a rolling pin. But I don’t advise you to do this, because mashed and ground nuts lose the desired crunch, unlike chopped ones.
  2. Rub the garlic on a grater or crush in a mortar.
  3. Mix mayonnaise (sour cream) with mustard sauce, ground garlic, chopped nuts. Add ground pepper.
  4. Spread the resulting mixture on the liver cakes. Garnish the dish on top with grated cheese.
  5. Let it brew and soak for 1-2 hours and serve.

Pickled cucumber and boiled corn filling

This type of filling gives the appetizer a special piquancy, a combination of pleasant sweetness with sourness. This filling option is very convenient, as it cooks quickly and reduces the time for the hostess. In this case, roasting vegetables is not required. You can use ready-made preservation.

Ingredients:

  • pickled or pickled cucumbers - 6 pcs.
  • canned corn (boiled) - 1 can (340 g with liquid, 280 g of grains without liquid)
  • sour cream or mayonnaise - 250 g.

How to cook

  1. Rub the cucumbers on a grater or chop with a knife into small strips.
  2. Open a jar of corn, strain the grains from the liquid.
  3. Mix corn with cucumbers.
  4. Place the snack cake layers one by one on a flat dish. Lightly grease each cake with sour cream (1-2 tablespoons). Then on each cake lay out about 2 tbsp. l. toppings, which we distribute evenly. Then we repeat the procedure with the next cake and so on until the end.
  5. Deciding on the amount of filling, be guided by your own taste. Decorate the cake with olives and herbs on top.

For lubrication and connection of liver cakes, you can also use processed salted cheese of soft consistency.

Simplified version of the cake

Some housewives do not like to cook this snack cake because the process of preparing and frying the cakes seems laborious to them. First you need to mess around with grinding the offal, then the cakes either burn in the pan, or break when awkwardly turned over. To simplify the process to the maximum, I propose to take note of the recipe for a pancake-liver cake.

The essence of cooking is to first fry about 15 pancakes (thin pancakes) from a dough based on milk, eggs and flour (you will need about 0.5 liters of milk, 3-4 eggs, 190 g of flour).

Then you need to take 500 g of liver, 1-2 carrots, 1-2 onions, chop and stew or fry all together until tender.

We pass the liver with vegetables 2 times through a fine sieve of a meat grinder to make a pate. Add salt to taste and spices to the pate. If the pate is dry, add a few tablespoons of sour cream or mayonnaise to it.

The resulting pate should be smeared with pancakes, which are laid out on a flat dish in turn. Decorate the top of the appetizer as you wish.

Useful video

Here is the video recipe:

Very tasty and elegant cake.
Liver cakes are very tender, the filling perfectly complements the taste.
The filling can be used any, to taste.
From the indicated amount of ingredients, 6-8 servings are obtained.

Ingredients

Cooking

Finely chop the onion.

Grate carrots on a fine grater.

Fry the onion in vegetable oil.

Add carrots, fry.

Add the garlic squeezed through the garlic press to the mayonnaise.

Mix.

Clean the liver (raw) from the film, pass through a meat grinder.

Add eggs.

Mix.

Add milk.

Mix.

Add flour, salt.
Mix.

Fry the pancake on one side in a greased pan (fry for about 5 minutes).

Flip over and cook on the other side (about 5 minutes).
So that the pancakes do not break when you turn them over, I advise you to do the following. When the pancake is fried on one side, it will easily roll off the pan onto the plate, and from the plate you turn it back onto the pan and fry the other side.
I got 5 pancakes with a diameter of 16 cm.

Grease a warm pancake with mayonnaise.

Lay out the carrots and onions.

Cover with the next pancake.

Assemble the cake in this way.
Decorate to taste.
For example, decorate the sides with squirrels grated on a fine grater, sprinkle yolks grated on a fine grater on top.
I also made tomato roses.
It is advisable to let the cake soak.

Bon appetit!
