So boil the water. Pour hot water into a bowl, dip a piece of liver into it. And leave it there for 3-4 minutes. It will become scary that the liver will begin to actively change color. The first time I had a panic, because everyone knows that the less time you cook the liver, the tastier and juicier it turns out later. But all fears are in vain, just check once - and you will do this all the time.

Drain the water after a few minutes. And elementary, just prying in one place, we remove the entire film with one movement of the hand.

After that, I cut the liver into large pieces. Look, inside it remained raw, with a natural color, and only a thin border around the edges, the color changed (this does not affect the taste in any way).


In a separate bowl, I mix eggs and milk.


Now you can start grinding the liver. It would be nice to pass it through a meat grinder twice. Or just puree in a food processor. Choose your favorite method, the main thing is that the mass should be homogeneous. To enhance uniformity, you can add 1-2 tablespoons of vegetable oil to the already ground liver. And mix everything.

Add the milk-egg mixture to the minced meat. And gradually begin to pour flour and starch. This is a very subtle question. I think no one will ever be able to say exactly how much flour should be put in. And in the list of ingredients, I wrote only approximate proportions. It is important to remember: the dough should be as thick as pancakes. Don't forget to season the minced meat with salt and freshly ground pepper. It would be nice to use Adyghe salt for flavor. It contains garlic and fragrant suneli hops. You will get a delicious and appetizing flair.

Perhaps it’s worth mentioning that adding starch to flour is not necessary at all. But it seems to me that it is he who makes the cakes soft and airy. However, if you put in too much starch, there is a risk that the cakes will turn hard and "rubber" tasting.

Now we bake liver cakes. Everything is extremely simple. I'll heat up the pan. Pour some vegetable oil on it. We collect the minced liver dough with a ladle and bake large plump pancakes. Approximately 3-5 minutes over medium heat (watch for a golden crust to appear), then turn over and bake for another 2-3 minutes. Don't worry, the cakes flip over very easily and don't break at all.

By the way, the pan can be greased with a piece of bacon - it is very convenient and simple. Thread a piece of fresh bacon onto a fork and pass it through the dry pan before baking each next cake.

Stack the finished cakes on top of each other and cover with a bowl so that they do not dry out around the edges.
