Lean sesame cookies

And this is a low-calorie and lean version of sesame cookies. It can also be called dietary. The composition does not contain products of animal origin, therefore it can be safely considered vegetarian and even vegan.


The peculiarity of this recipe is also that the composition includes boiled chickpeas. These are new taste notes, and additional enrichment of the product with proteins, vitamins and minerals. In general, both tasty and healthy!

Ingredients:

  • Sesame - 50 g.
  • Boiled chickpeas - 50 g.
  • Water (or chickpea decoction) - 3 tbsp. spoons;
  • Sugar (or fructose) - 50 g.
  • Wheat (or oatmeal) flour - 150 g.
  • Sunflower refined oil - 50 ml.
  • Soda - 2 pinches;
  • Salt - 1 pinch;

Step by step cooking

  1. Put boiled chickpeas in a bowl, and spoons of broth there. Mash with a fork to a smooth puree.
  2. Add sugar, salt, butter. We mix everything. Now add sesame seeds and mix thoroughly again.
  3. Combine flour with soda, then pour it into the sesame mass. Knead a homogeneous dough, it will be a little dense.
  4. Pinch off pieces, then roll them into balls and place on a baking sheet.
  5. We close in the oven preheated to 200 degrees for 15 minutes until blush.

Cheesy sesame cookies

Very fragrant sesame cookies with cheese. It can be made both sweet and not sweet. I prefer without sugar, this is the option we will cook.


I advise you to take processed cheese, you can even cheap cheese. The top of gourmetism is the addition of pieces of fresh herbs to such cookies.

Ingredients:

  • Corn starch - 8 tbsp. spoons;
  • Wheat flour - 9 tbsp. spoons;
  • Butter (margarine) - 200 g.
  • Salt - 0.5-1 tsp (to taste);
  • Cheese (processed cheese) - 200 g.
  • Baking powder - 0.5 tsp;
  • Sesame - 50 g.

Cooking

  1. Sift flour, then mix it with starch, salt and baking powder.
  2. Soften margarine.
  3. Pour the flour with starch into the cheese-butter mass and knead the soft dough.
  4. Roll out the dough thinly (0.5 cm). We squeeze out the desired figures with a special mold. Can be molded by hand.
  5. Lay everything out on a baking sheet. Ignite the sesame seeds for 5 minutes in a pan (without oil, stir constantly!).
  6. We decorate cookies with sesame seeds and send everything to a hot oven (200 degrees) for 10 minutes until golden brown.

With chocolate

Here we will reduce the proportion of sesame seeds, while adding cocoa and a spoonful of cognac for flavor.


It turns out the most wonderful shortbread and chocolate cookies with sesame seeds.

Ingredients:

  • Flour - 140 g.
  • Cocoa powder - 2 tbsp. spoons;
  • Butter - 70 g.
  • Sugar - 2 tbsp. spoons;
  • Cognac (whiskey) - 1 tbsp. spoon;
  • Sesame - 2-3 tbsp. spoons;
  • Salt - 1 pinch;

Cooking

  1. Stir the melted butter with sugar, cognac, cocoa and salt.
  2. Fry sesame seeds in a frying pan (without oil) until blush.
  3. Pour the flour, mix, then add the sesame seeds and mix thoroughly again.
  4. We mold cookies of any desired shape from the dough. It is possible in the form of flattened balls as in the photo. They can also be sprinkled with sesame seeds on top if desired.
  5. We send them to the oven preheated to 190 degrees for 10-15 minutes. Cookies may crack in places during baking. It's okay, it's even an additional charm of "home cooking".

Without flour

Is it possible to make sesame cookies without flour? And this is possible! By "flour" I mean wheat flour. Part of the sesame seeds will have to be ground to "flour" using a coffee grinder.

Such a recipe is popular in pp (diet "proper nutrition") and among people involved in fitness.

Required Ingredients:

  • Raw egg whites - 3 pcs.
  • Sesame seed - 270 g.
  • Sugar - 50 g (optional, you can even exclude it);
  • Vanillin - 1 pinch;
  • Sunflower oil (refined) - 2 teaspoons;

Cooking

  1. As mentioned above, you will have to use a coffee grinder. Grind half of the volume of sesame seeds to the likeness of flour.
  2. Mix "flour" with whole grains.
  3. Beat egg whites with sugar. Pour the sesame mass to them, mix, at the end add the oil.
  4. We make thin cookies, then bake them at a temperature of 180 degrees for about 13 minutes.
  • Sesame cookies in itself have a very original taste. It may sting a little. There is nothing wrong with this. It is this light, barely perceptible bitterness that gives the bewitching flavor notes to the liver.
  • As mentioned at the very beginning, such cookies not only taste good, they are also very healthy. And the more you add sesame seeds, the more benefits will be added. Sesame is rich in calcium, unsaturated oils and vitamins (especially E).
  • In addition to sesame, you can add to all of the above recipes: sunflower seeds, peanuts, walnuts, puffed rice and other crunchy things and nuts.
  • Do not forget about dried fruits: raisins, dried apricots, dates, prunes. This is not only an additional taste, but also a decoration. The cookie looks much more appetizing when pieces of raisins peek out of it.
  • Butter can be replaced with sour cream, thick yogurt or kefir.
  • For greater crunchiness and friability, add baking powder.

Cookies with (or made from) sesame seeds are a delicious dessert that goes well with tea or coffee. It is quite easy to prepare and very useful, especially for children: sesame contains much more calcium than many other foods. And if you try to bake it in different ways, then the taste will “sound” in a new way every time.

Despite the apparent lightness, sesame cookies are hardly suitable for dietary nutrition. Not only because it is a sweet dish, but also because of the sesame itself, which is not for nothing called the "oil plant". It has a lot of vegetable fat - even oil is pressed from sesame seeds. So there are plenty of calories in such a dessert, and young ladies who are watching their weight and figure should not get carried away with them.

Having eaten only one hundred grams of your favorite cookie, the sweet tooth will receive:

  • 8.5 grams of protein (that's 11 percent of the daily value);
  • 24.7 grams of fat (nearly 26 percent of the required daily volume);
  • 50 grams of carbohydrates (which is about 17 percent of the amount needed per day).

The total calorie content reaches 433.5 kcal (1814.98 kJ) - this is a quarter of what the body is supposed to provide in one day.

But from time to time you can treat yourself. And if the calorie content of sesame cookies is not scary, since by nature the increase in the waist does not threaten, or simply does not care, all the more worth getting acquainted with the recipes of the delicacy.

Let's crunch "Sesame"

Such pastries resemble oriental goodies, light and appetizingly crispy. There is another plus - to cook it, you do not need a lot of effort, time, and you do not have to be an ace pastry chef. Everything is done simply and quickly.

Take 0.5 kilograms of sesame. Lightly fry in a pan to achieve a golden hue.

Then let's do the test. We will need:

  • a glass of sugar sand;
  • a pair of raw testicles;
  • half a glass -100 g - oil (vegetable);
  • a glass (200 g) of premium wheat flour (first you need to sift it);
  • baking powder (if there is no special confectionery, soda is also suitable).

Carefully grind the eggs with sugar. We introduce oil and flour into the resulting paste in any order. Mix well, and after that add the stored baking powder.

We will send our sesame seeds to the cooked mass (while hot). Now you need to put it on a baking sheet with a spoon (the bottom is already covered with parchment). Flatten the dough with a fork. If you use a spoon or spatula, it will stick.

We put the container in the oven (it is heated to 180 C), and after 10-12 minutes we take it out.

During this time, our dough seized. We cut it with a sharp knife into rectangles and move it away from each other (so that the sides of the cookies are also baked). We put it back and keep the same amount.

It is very good to cook such a “confectionery” in an oven with a convection mode (when the heating elements are turned off).

If the equipment is ordinary, then after 10-13 minutes you need to look in and check if it burns.

Adding lemon juice

If you use a cookie recipe with sesame seeds and lemon juice, then it will turn out not as dry as in the previous case, but more magnificent.

The following products will be needed:

  • 60-65 g butter (butter);
  • 120-130 g of granulated sugar;
  • 70-75 g flour (preferably the highest grade);
  • chicken egg;
  • 160-170 g sesame seeds;
  • half a teaspoon of salt and soda;
  • chayn. a spoonful of lemon juice (freshly squeezed);
  • ½ tsp. spoons of vanilla (or a bag of vanilla sugar).

We start the process.

  1. We combine dry ingredients (excluding sugar) into a total mass.
  2. Butter (after standing on the table in the kitchen, it became soft), beat with sugar (first with a fork). We also put the egg, vanilla, pour lemon juice there. It is necessary to beat it all again well for at least 25 seconds. Now our assistant is a mixer.
  3. We set the device to a low speed and at the same time slowly introduce flour into the mixture in a thin stream.
  4. When we are done, mix in the sesame seeds (all that is). Can be raw, can be pre-fried to a golden hue.
  5. While we were preparing the dough, our oven was heated to 180 C.
  6. Be sure to lay a special parchment on a baking sheet. With a dessert spoon, place portions of the dough on it, but not too close to each other. Then, spreading, the cookies will not stick together.
  7. We bake at least eight, but no longer than fifteen minutes. Then our shortbreads will not remain raw, but they will not burn either.

With cheese - for beer

Sesame cookies can be served not only with hot tea or warm milk, but also with cold drinks - juices (for example, tomato) and even beer. Only in the latter case, such an appetizer is not made sweet.

Let's try to create it.

  1. We take out a larger bowl from the cabinet. We sift high-grade flour (a glass) made from wheat into it, and then add grated cheese (150-160 g, hard, of any kind).
  2. After that, we introduce soft butter (from cream) into the resulting mixture and drive in a fresh chicken egg. We carefully mix everything.
  3. Seasoning line. We have ¼ tea. tablespoons nutmeg (grated) and a full teaspoon of cayenne pepper.
  4. It turned out elastic tight dough. We wrap the semi-finished product with foil and send it to cool for an hour in the refrigerator.
  5. Roll out (the layer should not be thin). We squeeze out blanks with special baking figures.
  6. We place them on a special silicone mat and grease with egg yolk (previously beat it with a spoonful of water). Make sure you don't miss a single cookie.
  7. Ten minutes in the oven will be enough for the beer snack to reach the desired condition.

Striped zebras: baby

Children love bright things - toys, clothes, and even food. Therefore, two-color sesame cookies will go with a bang!

To bake such "minke zebras", you will have to prepare a rather impressive list of ingredients:

  • sesame (white) - four to five tables. spoons;
  • coffee (instant is better) - a teaspoon with a slide is enough;
  • a tablespoon of regular and condensed milk;
  • 10-12 grams of baking powder;
  • creamy margarine (200 gram package);
  • three pieces of eggs;
  • 1.3 cups of granulated sugar;
  • ½ cup sesame flour;
  • ½ cup potato starch;
  • three and a half glasses of flour (wheat of the highest grade).

Now you can start.

  1. We combine all dry products (except granulated sugar) into a common mixture.
  2. We turn two eggs and sugar in a mixer into a white airy cream.
  3. We introduce margarine into it, which was previously melted and cooled.
  4. Slowly add our dry mixture to the resulting liquid. We knead the dough. It should be tender and soft.
  5. We collect the workpiece in a "bun", wrap it with cling film. In this form, leave for one and a half to two hours in the refrigerator.
  6. We divide the “kolobok” into parts - from three to four. We roll each, but not very thinly. Cut out the shapes. For example, bunnies, horses, hippos (whatever you have). Children really like to "crunch" cookies in this form. While one piece of dough is being worked on, the rest are waiting for their turn on the refrigerator shelf.. The dough is buttery and should not lose shape during baking.
  7. We create a coffee and egg "cocktail". For him, let's dissolve coffee in milk, dip the yolk of the last egg there and beat it.
  8. We thickly spread the animals from the dough and “draw” wavy patterns with a fork.
  9. In the oven, at 180 C, keep no longer than 8-10 minutes. During this time, the cookies will brown and “grow up”.
  10. The final touch is to “paint” each side with condensed milk and sprinkle with sesame seeds so that they stick.
  11. Now the "zoo" is ready to be eaten.

What if there is no pain?

You can bake sesame cookies without wheat flour. Completely without. Get by with only sesame seeds, thoroughly grind the seeds (it is convenient to use a coffee grinder). It will also be very tasty.

How are we going to cook?

  1. Sugar (you need half a cup) will grind with a couple of yolks from chicken testicles.
  2. Add sesame flour (we will take 250-270 g) to the resulting sugar-egg mixture.
  3. Let's not forget about vanilla (or vanilla sugar).
  4. Knead and get the dough. We will "house" him in paper bags for cupcakes. Or just spread with a spoon on baking parchment.
