Ingredients:

Veal liver - 600 g

Eggs - 4 pcs.

Milk (2.5%) - 500 ml

Flour (fried) - 200-250 g

Onion - 4 pcs.

Carrots - 4 pcs.

Sunflower oil - 80 ml

Vegetable-cream mixture - 20 g

Homemade mayonnaise - 500 ml

Pour the liver dough with a ladle into a frying pan heated with oil. Fry over medium heat until browned, about 3-5 minutes. After that, turn over and fry the liver cake for about 2-3 more minutes until fully cooked. Bake 9 more cakes in the same way.

Prepare the filling for the cake. Cut the onion into cubes and fry until soft. Grate the carrots on a coarse grater and add to the onion along with two tablespoons of boiled water. Simmer vegetables together for another 8-10 minutes. Transfer onions and carrots to a colander to cool and drain excess oil.

Form a cake: on each cake, evenly distribute first the mayonnaise (leave 1 cm from the edge), then the carrot-onion filling.

Smear the top layer with mayonnaise to the brim. Garnish according to your preference, such as grated hard-boiled egg yolk and sprigs of herbs.

Put the liver cake in the refrigerator for one hour.

Meanwhile, it's no secret that this offal is useful, especially for children, mature people and those who are weakened after surgery or illness. Therefore, the liver cake from Alla Kovalchuk is useful to all caring mothers and wives: it is so tasty that even the most capricious people eat it with appetite. Delicate taste and airy structure appeal to everyone.

Cooking "pancakes"

In order for the liver cake from Alla Kovalchuk to succeed, you need to correctly make the cakes from which it will consist. The author of the recipe recommends taking 600 grams of veal liver for them and dipping it for five minutes in hot water. Then the surface film is removed from it, the offal is cut and gets rid of the veins. Pieces of the liver are scrolled twice with a meat grinder; before the second time, a spoonful of vegetable oil is poured into the mass - for complete uniformity. Four eggs are combined with half a liter of medium-fat milk and a melted creamy vegetable mixture (20 g). A glass of flour is fried in a dry frying pan. Both are gradually, in portions, introduced into the minced meat. The result should be a substance similar in density to sour cream. It is seasoned with Adyghe salt. The “dough” is poured with a ladle, like a pancake, only a little thicker, and fried on both sides until browned.

Stuffing and assembly

This liver cake is with carrots and onions, which must be pre-prepared. Four onions are finely chopped and stewed until soft, after which 4 carrots, coarsely grated, are added to them. Joint stewing lasts about seven to ten minutes, after which the vegetables are filtered from water and excess oil.

Liver cake is traditionally prepared for the holidays. It looks original and appetizing. But what prevents you from pampering yourself with such a delicacy on a typical weekday?

Preparing a liver cake is simple, the products required are available. So that the liver cake does not taste bitter, it is better to take beef liver.

Your liver cake will be more tender and tastier if you make it in advance and let it soak well.

You will need:

for pancakes: 600 g beef liver, 3 eggs, 2 tbsp. spoons of flour, 50 g of milk, 2 tbsp. tablespoons of vegetable oil, pepper, salt to taste;

For filling: 2 onions, 2 carrots, 1 clove of garlic, a bunch of dill, 150 g mayonnaise, 1 tbsp. a spoonful of vegetable oil, salt to taste.

Cooking method:

Prepare liver pancakes.

Wash the liver, remove the veins and film.

Grind the liver in a blender. Add milk, eggs, flour, pepper, salt and mix well.

In a frying pan, heated and greased with vegetable oil, fry the pancakes under the lid, frying them on both sides for 2-3 minutes. It is important not to overcook the liver, otherwise the pancakes will be tough.

You should get 6-7 pancakes.

Prepare the filling.

Grate carrots on a coarse grater. Finely chop the onion.

Sauté the onions in vegetable oil, then add the carrots and fry the vegetables until golden brown, then cover and simmer for 3 minutes.

Add mayonnaise, chopped garlic, herbs to the cooled vegetables, salt and mix.

Prepare the liver cake.

Put liver pancakes and stuffing in layers on a dish, spread with mayonnaise on top and decorate with herbs.

For the best taste, the liver cake should be infused and soaked for 3-4 hours.
