I had a bag of rice flour lying around in my closet. Actually, I bought it for sprinkling proofing baskets so that the bread does not stick. But for a number of reasons I don’t bake bread yet, and the flour disappears. I came across a recipe for pancakes with this flour, I decided to try it. And that's what happened.

1 egg
130 g rice flour
220 ml milk
75 g wheat flour
1 tsp baking powder (I put baking powder by weight of flour in accordance with the instructions on the package, it can be different)
1 tbsp sugar (or to taste)
a pinch of salt

In a bowl, mix rice and wheat flour, sugar, salt, baking powder

Whisk the eggs separately with milk.

Combine the flour mixture with the liquid, knead the dough. It gets quite thick. Leave for 15-20 minutes.

The recipe didn't say anything about oil, but I still poured a tablespoon of vegetable oil into the dough before frying the pancakes.

I bake all the pancakes in cast iron pans, grease with a piece of unsalted bacon. The fire is not very big. For 1 pancake poured 2/3 ladle of dough

Pour the dough and wait until the bubbles stop tightening (it was written 1 minute, but I got less, be guided by your pans)

Turn over and fry until done. I fried quickly, so I advise you not to go far from the pan.

Ready-made pancakes are porous, but quite dense, it may even seem that they are a bit dry. Therefore, I would advise them to serve them with some fairly thin sauce, in the original it was cherry. I didn’t have cherries, I had apples boiled with sugar, sour cream and maple syrup (not included in the photo)

And today I’ll just share a great recipe for banana pancakes, which I now cook almost every day)) If you manage to buy rice flour, don’t hesitate, take it right away! She makes such delicious baked goods! In combination with corn flour, it will delight you with a wonderful breakfast that both adults and children will be happy with)) If there is no such flour, it doesn’t matter, just replace it with a regular one)
And I’ll also give you a recipe for a cool homemade banana sauce, which is made in just a minute!)) And it will be an excellent replacement for store-bought sauces with additives! And here, everything is naturel, as they say)) soft, sweet, thick ... mm ... you will lick your fingers!

Ingredients:

1 large ripe banana
150 ml milk
110g yogurt without additives (or kefir)
1 tbsp without a slide of cane sugar (not necessary, but it tastes better with it))
100g rice flour
100g cornmeal
2 eggs
1 pinch baking powder

1) Puree the banana in a blender. Add 2 eggs and sugar to it, and shake the blender again for about a minute - you get a lush thick mass.

2) Add yogurt and milk, beat with a whisk until smooth.

3) Add both flour and baking powder, and whisk again until smooth.

4) Heat the pan well, then reduce the heat to medium, and spread the future pancakes with a spoon. As soon as bubbles appear, wait a couple more seconds and turn over.

Banana Sauce:

1 ripe banana
2 tbsp with a slide of yogurt without additives
I usually take milk "by eye", but approximately it is about 40g (weighed on a scale))
(if desired, you can add 1 tsp maple syrup or agave syrup or honey)

We put all the ingredients in a blender (I put in a tall bowl of a blender and use a submersible blender), squeeze for about 1 minute until completely smooth. Then pour into a gravy boat and serve with pancakes, waffles, well, anything))

Ingredients:

  • oat flakes - 1 tbsp.
  • milk 1% - 1 tbsp.
  • whole grain flour - 1 tbsp. l.
  • eggs - 1 pc.
  • slaked soda - 1 tsp
  • sweetener - to taste.

Cooking:

We mix oatmeal with 1/3 cup milk. The remaining milk is beaten with an egg (until a frothy state), add a sweetener, beat. Beat well the oatmeal with milk, add milk, whipped with eggs and sweetener, a tablespoon of flour and beat everything again, then add slaked soda. Leave for at least 40 minutes.
Then mix with a large spoon from the bottom up until smooth. We fry in a preheated pan (the first time we grease the pan with oil, we fry all the rest without oil.
Fry until bubbles appear, turn over and fry for another 8-10 seconds.

Ingredients:

  • natural yogurt - 300 g.
  • whole grain flour - 160 g.
  • egg - 1 pc.
  • vegetable oil - 1.5 tbsp. l.
  • lemon juice - 1 tsp
  • soda - 1 tsp
  • salt - to taste.
  • sweetener - to taste.

Cooking:
These pancakes can also be called pancakes, because they are cooked with a minimum amount of oil. Put in a bowl 300 gr. Yoghurt (12 tablespoons), add a pinch of salt, sweetener and an egg. Pour a teaspoon of soda without Slides with lemon juice and mix thoroughly. Add to yogurt, pour in a tablespoon of oil and stir with a whisk or fork. Sift into a bowl 160 gr. Flour and mix until smooth. All! You can start cooking. Turn on medium heat, grease the pan with a thin layer of oil before cooking the first fritters. Put the dough with a spoon at a distance from each other, the shape of future pancakes can be corrected with the same spoon. For thin pancakes, 1.5 tablespoons will be enough, if you want more magnificent - you can spread 2-3 tablespoons of dough for one pancake. Gently flip the pancakes with a spatula, reduce the heat and cook for 1-2 more minutes on the second side. So cook the whole batch (no more oil is needed.

  • 500 milliliters of kefir,
  • 2 eggs,
  • some salt
  • baking powder,
  • sunflower oil,
  • half a teaspoon of soda,
  • sugar and cocoa powder 4 tablespoons each (you can add more),
  • 200 grams of flour.

Cooking:

1. It is better to put kefir on the table in advance so that it becomes of medium temperature and is not cold. The ingredients are best added one at a time. First, add sugar, then place 2 eggs and salt a little. Bring the finished mixture to a homogeneous and uniform state.
