The cuisine of the hospitable Caucasus is unthinkable without beans, nuts and all kinds of spices, which are added to dishes without stint. Bean salad with walnuts is a vivid example of Caucasian cuisine. The basis of the dish is, of course, dried beans. Chopped walnut kernels go great with it. This composition is complemented by spicy herbs - green onions in a duet with parsley and dry spice - red hot pepper. Cooking

1. Sort the beans and soak in cold water for at least 6-8 hours. Change the water 1-2 times while soaking.

2. Then rinse the beans, put them in a saucepan and pour in a small amount of cold water, so that the liquid barely covers the grains. Bring to a boil and simmer over medium heat, covered, for about 1 hour. Evaluate the beans: they should be soft.

Drain the cooked beans in a colander to drain the liquid.

3. Wash green onions and parsley, dry and chop finely.

4. Remove the kernels from the nuts and finely chop them with a wide-bladed knife.

5. Peel, rinse and chop the garlic cloves very finely.

6. Put boiled beans, herbs, nuts and garlic in a salad bowl. Salt to taste and season with red pepper.

  • water 4 tbsp.
  • walnuts 100 g
  • large onion 1 pc.
  • garlic 3 cloves
  • ground black pepper 2 chips.

  • ground coriander 0.5 tsp
  • cilantro 1 bunch
  • vegetable oil or butter 2 tbsp. l.
  • salt and hot pepper to taste
  • balsamic vinegar or tkemali 1.5 tsp.

How to cook bean lobio with walnuts

  1. I soak dry beans in cold water for 10-12 hours (overnight). Thus, the beans will swell and the cooking time will be significantly reduced. In the morning I wash the grains and fill them with clean cold water in a ratio of 1: 4. I put the pot on the fire and bring it to a boil. Cook over low heat for about 2 hours, adding boiling water if necessary. I add salt about 15 minutes before the end of cooking. As a result, the beans should become soft and easy to crush with your fingers when pressed.

  2. I take the pot off the fire. I pour the decoction of the beans into a separate container, and lightly knead the beans themselves with a crush or a wooden spoon. It is not necessary to bring the puree to a state of puree, it is enough just to slightly crush part of the beans so that their skin cracks more.

  3. I pour back a little decoction into the resulting mass - the liquid in which the beans were boiled. Enough 0.5 cups. Then I return the pan to the stove again and boil for 10 minutes, on the smallest fire.

  4. Separately, I pass onion, diced, in a small amount of vegetable / butter.

  5. I put a pinch of salt, all spices and herbs in a mortar, as well as garlic and half of finely chopped cilantro. That's where I put the nuts. I grind everything in a mortar (can be in a blender).

  6. As soon as the lobio is ready, I add onion fried, vinegar and a fragrant mixture from a mortar to it. I warm it up on the fire for another 5 minutes.
  7. Lobio from beans with nuts, before serving, I sprinkle the top with the remaining cilantro and half rings of pickled red onion. You can add pomegranate seeds. The dish is equally delicious both hot and cold. You can eat with a spoon, dip pieces of pita bread or mchadi corn cakes into it. Bon appetit!

Boil the beans as described above, but add bay leaf to the beans during cooking. In a separate bowl, crush the garlic. Fry the onion in a frying pan, add carrots to it, fry, add fresh red pepper (sweet), simmer together until half cooked. Then add ketchup or tomato paste and stew spices for another 5 minutes. Add nuts to vegetables, mix. Add slightly crushed beans. At the end, put greens and garlic in the dish and simmer everything until tender for a few more minutes.

Another recipe in which beans are successfully combined with nuts. Boil the beans. In a separate bowl, mix chopped or crushed garlic with nuts (chopped), salt and red pepper. Ingredients: 220 g of red onion, 2 tomatoes, 340 g of red beans, 90 g of walnut kernels, 3 cloves of garlic, salt, 70 ml of refined oil, 60 ml of wine vinegar, 8 g of suneli hops and dried mint, half a bunch of fresh cilantro.

  1. Bean components are sorted, washed and filled with cold water all night.
  2. The cilantro is washed, shaken off excess liquid. The leaves are crushed with scissors, and the stems are poured with vinegar and left for several hours.

  4. Small pieces of onion are fried in any fat. Then slices of tomatoes without skin are added to it. To easily peel tomatoes, you just need to pre-scald them with boiling water.
  5. Together, the products are stewed for 12-14 minutes.

  1. Legumes are soaked for at least 5-6 hours, after which they are boiled until softened and slightly kneaded with a spatula.
  2. The meat is washed, cut into pieces and fried until cooked with chopped onions in any way.
  3. Tomatoes are blanched, diced and added to the meat along with minced garlic, cilantro and oregano.
  4. At the very end, the mass is combined with beans and laid out in pots.

Lobio will languish in a well-heated oven for another 20-25 minutes.

Georgian red beans

Ingredients: 230 g of red beans, 440 g of white onions, 60 g of walnut kernels, a large spoonful of suneli hops, 250-300 g of tomatoes, 2 cloves of garlic, table salt.

  1. Pre-soaked legumes are washed and boiled in salted boiling water until completely softened.

Ingredients: large white onion, 30 g of tomato paste, a bunch of cilantro, 1.5 tbsp. red beans, 4-5 cloves of garlic, salt, aromatic herbs.

Ingredients: large tomato, 3-4 pickled garlic cloves, 70-80 g walnut kernels, a standard can of canned beans (red), half an onion, 3 pinches of fine salt, 25 ml of balsamic vinegar, a bunch of various greens.

  1. Nuts crumble finely. It is convenient to use cling film and a heavy rolling pin for this. Then they are combined with chopped herbs and chopped pickled garlic.
  2. Fine salt is added to the mass and balsamic vinegar is poured.
  3. In a thick-walled dish, chopped onion is fried with slices of tomato, previously rid of the skin. Instead of fresh vegetables, you can take a couple of large spoons of tomato paste. In this case, the main thing is to remember to use a pinch of sugar to make the additive less acidic.
  4. When the vegetables become soft, beans from a jar without liquid are laid out to them.
  5. The dressing from the first step is also added here. The mass languishes under the lid for 3-4 minutes. And then left on the cooling plate for another 8-9 minutes.

Served with canned red bean lobio with fresh tortillas. Its main advantage is the speed of preparation.

Red lobio in Adjarian

Ingredients: 320 g dried red beans, 80-90 g walnut kernels, a bunch of fresh cilantro, 2-4 garlic cloves, a pinch of ground pepper, onion, salt.

  1. Legumes are washed well with running water, after which they are poured with boiling water and left overnight. Before cooking, the liquid is changed to a fresh composition, and the beans are cooked until completely softened. By the end of cooking, the contents of the pan are salted.
  2. Next, the beans are left in the water to cool. The liquid from the pan does not need to be drained.
  3. Cilantro, garlic, onion and walnuts are ground using a suitable blender attachment or in any other convenient way.
  4. Salt and pepper are added to the cooled beans, the mass is well mixed and slightly kneaded with a spoon.
  5. The mixture from the third step is also laid out here.
  6. It remains to heat the contents of the pan over medium heat, mix well, then simmer for 3-4 minutes and arrange on plates.

Lobio for the winter

Ingredients: a pound of red beans, large carrots, 2 sweet bell peppers, 70-80 g of walnut kernels, a pinch of dried cilantro, basil, suneli hops, a full faceted glass of thick tomato juice, salt, 2 cloves of garlic.

  1. Legumes are soaked in water for several hours in advance, after which they are boiled until softened. In addition to salt, bay leaves can be added to the water for a pleasant aroma. When the beans are completely ready, the lavrushka is thrown away.
  2. Walnuts are ground in a blender. The mass should be as homogeneous as possible.
  3. Carrots, onions and peppers are chopped into thin long pieces. Next, they need to be fried in refined oil until golden brown.
  4. The mass from the blender and tomato juice are sent to the pan. The mixture is salted, sprinkled with seasonings and stewed for 25 minutes. Further - another 15-17 minutes already with beans.
  5. During this time, you need to prepare small jars and lids - sterilize. In them, the dish is laid out still hot. Filled containers are sterilized for another 6-7 minutes, rolled up and put away in coolness.
