Ingredients:

  • 1 kg beef tenderloin
  • 2 tbsp. l. fuck

  • 4 tbsp. l. butter
  • 2 pcs. onion
  • 2 tsp thyme leaves
  • 1 tsp ground black pepper
  • 120 ml cognac or brandy
  • 120 ml cream
  • 2 tsp soy sauce
  • 100 gr. bacon, ham or prosciutto (thinly sliced)
  • 400 gr. puff pastry
  • 1 egg

Cooking method:

1. Clean the cutout from films and other unnecessary. Wash and dry with paper towels. Then roll the edges of the tenderloin into a tight roll and pull or tie the whole piece with a rope. Interval 2-3 cm.

2. Heat the pan with 2 tbsp. l. vegetable oil. Fry the tenderloin on all sides for 1-2 minutes over high heat until a crust forms. No need to fry the meat!

5. Put the meat on a wooden board.

6. In a bowl, mix ground pepper, horseradish and mustard. Remove the rope from the meat and carefully grease it on all sides with the resulting mixture.

7. Remove the beef from the refrigerator.

8. Finely chop the mushrooms, then chop in a blender.


9. Fry the mushrooms in butter. Chop the onion and add to the mushrooms. Add thyme. Simmer everything with constant stirring over medium heat.


10. Pour in brandy, continuing to stir, evaporate it from the mushroom mass.
Pour soy sauce and cream over mushrooms. Boil the mixture until thick.


11. Salt and pepper to taste. Remove from fire and cool.

12. Spread cling film on the table. Spread the overlapping bacon or ham in an even layer. Then the mushroom mass.


13. Lay on the bottom edge - beef. Roll up into a tight roll, wrapping the beef with mushrooms and bacon.


14. Wrap the roll with cling film as tightly as possible and put it in the refrigerator.

15. Roll out the puff pastry into a layer 10 cm wider than the bundle with meat.




16. Put the meat from the cling film on the bottom edge of the dough. Brush the edge of the pastry over the beef with the beaten egg.

18. Remove the meat in the dough in the refrigerator for 30 minutes.

1.Combine chopped garlic with salt and pepper.
2. Rub the prepared pork with garlic mixture, cinnamon and seasonings. Then we make incisions, and in each we lay a little garlic mass and one cherry.
3. The meat is fried in vegetable oil. We spread it on a mold and pour over with cherry juice. Bake for 1 hour 30 minutes, pouring over the juice that stands out.
4. Prepare the sauce: - dissolve the starch in 3 tbsp. cherry juice. Pour the rest of the juice into a saucepan, add the juice from the baking sheet, salt and pepper again, add paprika, sugar and heat.
Then, add the diluted starch, and stir all the time until thickened.
5. Cut the finished pork into pieces, decorate with lettuce, carrots and dill. The sauce is served separately.

Veal with cherries

For veal with cherries, we need:

  • 700 g veal
  • 1/3 cup cherries, pitted
  • 1/3 cup cherry juice
  • 2 tbsp butter
  • 2-3 tbsp flour
  • 2-3 tbsp cinnamon
  • salt to taste
  • ground pepper, black
  • 1 lemon

Cooking:

1. Wash the meat, dry it and with a knife we ​​make punctures along the fibers.
2. Fill the holes with cherries, rub with salt and pepper, and leave to marinate in a cold place for 30 minutes.

To keep the meat soft during the roasting process, pour over lemon juice while marinating.

3. Put the meat in a mold, add melted butter and sprinkle with cinnamon.
