Great Lent has begun, and I suggest you try lean pastries. Yes, yes, without eggs, butter and sour cream, you can bake delicious lean muffins, buns and gingerbread.

And there are so many different recipes for lean baking that you can try something new almost every day. Last year I already published a lot of them, you can see everything.

And now let's start with an interesting and tasty recipe - lean tea cupcakes.

The dough for them is prepared on ... tea! Initially, it was a tea cake, and I came up with the idea of ​​\u200b\u200bdividing the dough into small molds, and we got tea mini-cupcakes.

Ingredients:

  • Freshly brewed tea - 1 cup (200 ml);
  • Sugar - 5 tablespoons (100-120 g);
  • Flour - 7 heaped tablespoons (200-220g);
  • Any pitted jam - 3 tablespoons;
  • Vegetable oil - 3 tablespoons (odorless sunflower);
  • Baking soda - 1 teaspoon (without top);
  • Table vinegar 9% - 0.5 tablespoon;
  • Ginger (pinch), cinnamon (pinch), raisins (100g), powdered sugar.

How to bake:

We combine the dry ingredients of the dough: sifted flour and soda, sugar, spices, and mix

Add vegetable oil and jam.

After mixing, pour in warm fresh tea (no tea leaves!!!) 🙂 And add vinegar or lemon juice, which will extinguish the soda in the dough. Instead of soda and vinegar, you can add baking powder to the flour, 1.5 teaspoons.

Pour raisins into the dough, mix. You can also add chopped walnuts or dried apricots.

We spread the dough on cupcake molds. We bake either in small molds, or in a shallow, but wide, or better - in a form with a hole - otherwise there is a possibility that the cupcakes may not be completely baked.

We bake tea cakes at 180-200C for about half an hour. We test for readiness with a wooden stick.

Let the cupcakes cool a little in the molds, because they are very tiny when hot.

Then put them on a dish and rub them with powdered sugar through a strainer.

  • Carrot juice - 350 ml
  • Dates (peeled) - 150 gr
  • Olive oil -200 ml
  • Powdered sugar - 2 tbsp
  • Flour - 2 tbsp
  • Whole grain flour - 1 tbsp.
  • Baking powder - 1.5 tsp
  • Nuts - 100 gr

Cooking:

  1. Squeeze juice from carrots.
  2. Remove the pits from the dates and puree in a blender (they didn’t want to puree for me, I had to add juice).
  3. Combine in a bowl carrot juice, date puree, olive oil, powdered sugar (I decided not to add much sugar, because dates give sweetness) and mix well.
  4. Add the sifted flour with baking powder to this mixture and knead a smooth dough.
  5. Grind the nuts lightly so that they are felt in baking and add to the dough.
  6. Put the dough into a mold, put in a preheated oven to 180 degrees for 50-60 minutes (orient yourself according to your oven) until a dry splinter.

Ingredients:

  • 4 cups flour
  • 2 cups sugar

Ingredients:

  • half a kilo of frozen cherries;
  • two glasses of flour;
  • half a glass of oil;
  • two tablespoons of cocoa powder;
  • half a glass of sugar;
  • a spoonful of baking powder;
  • cinnamon and vanilla to taste;
  • two tablespoons of natural honey.

Cooking method:

  1. Put a colander on a saucepan, put berries in it.
  2. Sift flour and mix with sugar, cocoa, baking powder.
  3. The juice from the cherry, released during thawing, add water to the desired volume. You should get a glass of liquid.
  4. Dilute honey in juice, pour in oil, add vanilla and cinnamon if desired.
  5. Knead the dough.
  6. Put the berries, whole or pureed in a blender, into the dough.
  7. Bake in the prepared oven for fifty (large) or twenty (small) minutes.
  8. Remove when pastry is completely cool.

Lean berry

  • wheat bran - 150 g
  • whole wheat flour (or white) - 60 g
  • cocoa powder - 3 tbsp
  • dry soy milk (you can not add!) 3 tbsp. l.
  • brown sugar - 150 g
  • baking powder 10 g
  • a pinch of sea salt
  • vanilla sugar or vanilla extract 1 tsp
  • frozen blueberries 100 g (you can use any berries you like)
  • vegetable oil - 80 ml
  • water 300 ml

Cooking:

  1. Mix all dry ingredients in a bowl.
  2. Add berries, water and vegetable oil. Knead the dough very carefully so as not to damage the berries.
  3. You can bake in 3 ways with a silicone mold in the microwave for about 20 minutes, in the oven for 50 minutes at 180 g or in a bread machine for 1 hour (all methods have been tested and I like it best in a bread machine)
  4. Cool and sprinkle with powdered sugar or dark chocolate chips.

Fanuropita-lean

The number of ingredients must be odd:

  • 0.5 kg cake flour (with baking powder)
  • 2 stacks of sugar
  • 2 cups orange juice and zest
  • 2/3 cup vegetable oil (preferably olive oil)
  • 100 gr raisins
  • 0.5 stack. ground nuts
  • sugar powder

Cooking:

  1. Mix flour with sugar, gradually add juice, butter and zest. The dough turns out like a biscuit.
  2. Roll the raisins and nuts in flour so that they do not settle during baking, and add to the dough.

  4. Preheat the oven to 180 * C and bake for 60 minutes. We check the readiness with a toothpick.

  • 1 cup muesli
  • 1 cup of sugar
  • 200 gr coconut flakes
  • 100 gr poppy seeds (steamed)
  • 2/3 cup vegetable oil
  • 1 can (330 ml) forfeits

Cooking:

  1. In a deep bowl, mix all dry ingredients.
  2. Gradually introduce butter and fanta (I have no sugar content), whisking with a whisk. The dough turns out like thick sour cream.

  • 1 stack orange juice
  • 1/2 stack. olive oil
  • zest of 1 orange
  • 100 gr light raisins

  • 75 gr candied oranges
  • 50 gr chopped nuts (any)
  • vanilla.

Cooking:

  1. Mix sifted flour with baking powder and sugar.
  2. Gradually add juice and oil. Mix thoroughly until a homogeneous dough is formed, the density of sour cream.
  3. Mix dried fruits and nuts with 2-3 tablespoons of flour (select flour from the total amount).
  4. Pour dried fruits into the dough and mix.
  5. Grease the mold with olive oil. butter and sprinkle with breadcrumbs or semolina. Lay out the dough and smooth it out.
  6. Bake in preheated oven at 180*C for 40-45 minutes. Focus on your oven.

  • a glass of sugar;

  • 50 milliliters of vegetable oil (odorless);
  • vanillin.

According to this recipe, you can bake a delicate dessert with a slightly moist structure relatively quickly. It has a pleasant taste and light honey aroma. To prepare it you will need:

  • 400 grams of frozen cherries (pitted);
  • a couple of tablespoons of powdered sugar and cocoa powder;
  • 3 tablespoons of real liquid honey;
  • a couple of glasses of flour;
  • 100 milliliters of refined sunflower oil;
  • 1.5 teaspoons of baking powder;
  • a glass of sugar.

Juice is drained from thawed cherries and diluted with water so as to obtain 200 milliliters of liquid, and then honey, vegetable oil and sweet sand are added to it.   • 200 milliliters of orange juice (with pulp);
  • a glass of sugar;
  • 100 milliliters of vegetable oil (odorless);
  • a tablespoon of orange peel;
  • 1.5 cups flour;
  • 10 grams of baking powder;
  • a couple of tablespoons of ground hazelnuts;
  • 30 grams of dried cranberries;
  • ¼ teaspoon each of nutmeg and cardamom;
  • sachet of vanilla sugar.

In one container combine vegetable oil and orange juice. Vanillin, zest, sugar, baking powder and sifted flour are also added there. Everything is well mixed and combined with nuts, cranberries and spices. The resulting dough is laid out in a multicooker bowl. Such a dessert is prepared in the “Baking” mode, and after thirty-five minutes the device is transferred to the heating program and left for another quarter of an hour.

Variant with raisins

The composition of these lean muffins includes simple and easily accessible ingredients, most of which are always in stock for every prudent housewife. To prepare them you will need:

  • 3 cups flour;
  • 160 milliliters of vegetable oil;
  • 2/3 cup sugar;
  • 300 milliliters of freshly made tea;
  • 1/3 cup raisins and walnuts;
  • a teaspoon of cinnamon;
  • a bag of baking powder;
  • ½ teaspoon salt.

In a deep bowl, combine cinnamon, baking powder, sifted flour and vanilla. Salt, vegetable oil, chopped nuts, tea leaves and pre-steamed raisins are also added there. Everything is intensively kneaded, laid out in a heat-resistant form and sent to the oven. Dessert is prepared at a temperature of 200 degrees for about half an hour.

Variant with apricots and apples

This fragrant homemade cake is not only quite tasty, but also very healthy. Thanks to its pleasant fruity aroma, it will be an excellent addition to friendly gatherings over a mug of strong tea. To prepare it you will need:

  • 350 grams of flour;
  • 100 milliliters of drinking water;
  • 60 grams of sugar;
  • a couple of tablespoons of refined vegetable oil;
  • salt.

All this will be added to the dough. To get the filling you will need:

  • 250 grams of ripe apples and apricots;
  • 200 g of granulated sugar;
  • 50 grams of potato starch;
  • cinnamon and nutmeg.

Washed and peeled fruits are covered with sugar and left in a cool place for a day. After 24 hours, you can take the dough. To prepare it, sifted flour, vegetable oil and a chilled sugar-salt solution are combined in a deep container. Everything is intensively mixed until smooth. The resulting dough is divided into two unequal parts, wrapped in food grade polyethylene and put in the refrigerator. After about an hour, a larger piece is distributed along the bottom of the multicooker bowl, greased with vegetable oil. A fruit filling mixed with starch, cinnamon and nutmeg is placed on top. All this is covered with the remaining dough and cooked in the “Baking” mode for an hour.
