My grandmother used to bake such pies for us, and my brother and I gladly ate them at the dacha right hot with sour cream! The recipe is really similar to baboulin in terms of the composition of the dough and the method of molding, but in our family pies are still called "grandmothers" and apparently, this is forever: )) I also baked and bake them, and the children love my pastries, but ... my grandmother and mother always seem to me tastier .. Probably, because only their pastries have the taste of childhood :)

Recently, the children asked me to bake them "granny" pies with potatoes .. In fact, there can be a lot of fillings, except for this one - in childhood we loved them very much with sweet cottage cheese, with pumpkin, with green onions and eggs, with buckwheat, mixed with fried onions and mushrooms .. But my children adore them with mashed potatoes and mixed with onion fried in butter .. I divided the filling into two parts (in the second part of the filling I put some mushrooms so beloved by the boys).

The dough for such pies is prepared quite simply:

in one container, mix two cups of flour with 0.5 tsp of salt, 0.5 tsp of soda (or 1 tsp of baking powder).

in another container, beat 1 egg, a little less than half a glass of vegetable oil, 1 tsp of 9% vinegar, half a glass of water.

Gradually add the liquid part to the flour and mix. Quickly knead a smooth and plastic dough (if necessary, add flour to the desired consistency). We cover the dough with a film and put it in the refrigerator for about an hour (by the way, granny cooked it in advance for our arrival, because the dough can be safely stored in the refrigerator for up to 3 days).

We divide the dough into two parts, roll each of them into a very thin large layer. Closer to one edge of the layer lay out the filling.

Regarding the fat content of dairy products: according to recent scientific studies, it is considered a mistake to believe that for the preparation of dietary dishes it is better to use dairy products with a minimum fat content (among other things, they usually taste disgusting). Ingredients:

  • medium-fat cottage cheese - 200 g;
  • dried fruits (dried apricots, raisins, prunes, etc.) - about 100 g;
  • any chopped nuts.

Cooking

If the cottage cheese is dry, add a little sour cream, or cream, or unsweetened yogurt to it. Dried fruits should be steamed in boiling water for 10-15 minutes, then drain the water, rinse again with boiled water. We remove the seeds from prunes, dried apricots and prunes can be chopped. Add dried fruits to the curd mass and mix. If you want something sweet, add 1-2 tbsp. spoons of natural flower honey. Seasonally, instead of dried fruits, we add fresh fruits and berries to cottage cheese desserts.

To prepare the casserole, we use the same curd mixture, only we exclude honey from its composition (during heat treatment, it forms toxic compounds). We include 1-2 chicken eggs in the dough, a little wheat or oatmeal and / or cereal flakes soaked in milk. Before filling the baking dish with the mixture, grease it with butter. Bake in the oven for 25-35 minutes at a temperature of about 200 degrees C.

The main thing is not to confuse the pleasant with the useful, and not to get carried away with sweet dishes, because not a single healthy eating system considers them the basis of the diet. For 4 servings: 2 tablespoons of oatmeal, 1 tablespoon of germinated wheat, 1 tablespoon of powdered bran, 100 g of dates, raisins, dried apricots or prunes, 3 tbsp. olive oil, 1 tablespoon sliced ​​almonds, cinnamon, a little salt, 1 tablespoon agave or maple syrup, 1 tablespoon water.

Preheat oven to 130 degrees. Grease a baking sheet with oil. In a bowl, mix dried fruits, nuts, bran, wheat and cereal pre-soaked for half an hour in water. For the "dough": 2 tablespoons oat bran for baking (at the drugstore or online stores for the Dukan diet), 1 tablespoon of rye or wheat bran, you can grind crunchy bran from the pharmacy, 4 protein, 1 egg, baking powder, vanilla stevioside liquid or any other sweetener you use + vanilla, 1 tablespoon skimmed milk powder, 2 tablespoons low-fat cream cheese.

For the filling: 200 g fat-free cottage cheese, stevioside or other sweetener. Optional - cocoa, artificial flavors, cinnamon.

Mix the ingredients for the filling with a mixer, leave. To knead the dough, first beat the whites, add the baking powder and sweetener, then the egg, cottage cheese, and finally the bran of both varieties. You should get a relatively thick dough. Pour the filling into the cupcake mold so that 2/3 of the mold is filled. We bake for 10 minutes at 180 degrees, then take it out, carefully lay the cottage cheese on top, and bake for another 10-12 minutes without changing the baking temperature.

For the dough: 125 g soft cottage cheese with a high protein content, preferably 0%, 4 regular eggs, or egg substitute for baking, 2 servings, vanillin, sweetener.

For the topping: 125g cottage cheese, vanilla or vanillin, sweetener, optional nut-flavored coffee powder (Nescafe Taster's Choice or similar, 1 packet, some types contain dextrose), or any version of sugar-free cocoa powder.

Spread a sheet of baking parchment on a baking sheet, spread the dough in a relatively thin, 1.5-2 cm layer. Bake for 10 minutes at 200 degrees. Leave to cool at room temperature. Stir gelatin again, add cottage cheese, stir until smooth, add sweetener. Put the mass into a rectangular shape, cool, leave to solidify. Then cut the cake in half, place the mass on one sheet, cover with a second sheet, press down a little, and cut into portioned “cakes”.

200 g fat-free creamy cottage cheese, flavored stevioside or just stevia plus vanillin, a quarter packet of gelatin.

For glaze: 1 tsp. instant coffee, 2 tbsp. l. milk and 1 tbsp. l. defatted cottage cheese.

Dissolve gelatin in water according to the instructions (you can take agar, if available). Next, stir the rest of the ingredients in the gelatinous mass, you can beat a little with a blender.
