Kefir pie with cabbage filling

Another delicious pie with healthy cabbage filling. It can be an addition to lunch, dinner or an independent breakfast.

Products:

  • 450 g of kefir 1%;
  • 400 g cabbage (usually they take white cabbage, but you can also try Brussels sprouts, cauliflower, broccoli);
  • 320 g wheat or oatmeal flour;
  • 2 pcs. carrots;
  • 1 tsp soda;
  • salt, pepper, dill.

The cake will take 1 hour to make.

Calories per 100 g: 121.6 kcal.

Cabbage is cut finely, carrots are rubbed on the large side of the grater. Fry carrots in oil with salt, pepper, dried dill. Then the cabbage is poured in and left to stew until the products are ready (vegetables become soft).

Soda is added to kefir and left for 10 minutes. Then add a pinch of salt, flour, beat the dough with a mixer. In a dish, the walls of which are greased with oil, spread half of the dough. Pour the filling on it and fill it with the remaining mass. It will take 40 minutes to bake (160-180 degrees).

When preparing jellied pies, you need to make sure that the oven is working properly so that it evenly bakes the product from below and from above.

To begin with, half the mass of the dough is poured into the mold so that the filling does not burn.

Then the filler is poured out and filled with the rest of the dough. Such pies are also called bulk pies, as the dough is poured into a mold for the filling.

As a filler, you can use a variety of products:

  • apples, pears sprinkled with cinnamon and sugar;
  • plums with sugar;
  • berries (fresh, frozen, canned);
  • stewed or fried meat or minced meat (it can be mixed with vegetables or an egg);
  • vegetables - stewed or steamed;
  • mushrooms;
  • fish - canned, fried, boiled.

The ingredients for the filling can be combined with each other, add herbs, spices according to your preferences. When serving, sweet pies are sprinkled with powder, eaten with ice cream or sauces. Unsweetened can be served with herbs, sour cream, vegetable salad.

The pie is served almost cold. It can usually be stored in the main compartment of the refrigerator for 1-2 days. But most often, delicious, lush aspic pies disappear from the table very quickly, and hardly anything remains the next day.

The essence of the jellied pie is that the filling is not wrapped in the dough, but filled with it. Another feature of jellied pies is that they can be cooked without an oven. A jellied pie on kefir can only fail in the 1st case if you used kefir made using modern technology that completely kills all lactic acid bacteria. Such kefir is prepared from sterile milk, which can be stored for months, using dry starters, which are not natural. Soy kefir is also not suitable.
In order for kefir to be of high quality, it is better to take home-made kefir on milk mushroom or yogurt obtained by samokvass - this is when a piece of rye bread is placed in warmed milk and left in a warm place for fermentation. When the milk turns into a clot that rises to the top, and the whey exfoliates below, the yogurt is ready. Not every store-bought milk is suitable for this - choose milk with a short shelf life, it is pasteurized, but alive.

Whatever filling you plan for a jellied pie, it will always turn out juicy, soft, fragrant and delicious in taste. Fillings for jellied pie are different - meat, vegetable, fruit, fish, jam, cottage cheese and others. Also, the filling can be combined - an egg with onions, a fish with rice or cheese with minced meat, and the like.

I propose to cook a jellied sweet pie on kefir, below are several different recipes to choose from.

To prepare sweet dough on kefir, you need:

0.5 liters of kefir or yogurt;
1 raw egg;
5 st. spoons of granulated sugar;
0.5 teaspoon of salt:
1 teaspoon of tea soda;
4 tbsp. tablespoons of vegetable oil;
flour, how much dough will take.

Sweet jellied pie on kefir. How to cook:

First, mix kefir, vegetable oil, salt, sugar and egg until smooth. Next, add 1 cup of flour mixed with soda. After the first glass, add flour to the dough in portions of half a glass. The amount of flour depends on its quality. Knead the flour until the dough stops dripping from the spoon and begins to tear. We cover the dough with a blanket or film and put it in a warm place, and in the meantime we will prepare the filling.

For jellied sweet pie on kefir, you can use:

Grated with cinnamon and sugar (1 large apple + 2 tablespoons of sugar and half a teaspoon of cinnamon);
apples with carrots, vanillin and granulated sugar (1 small apple + 1 medium carrot, 1 sachet of vanillin and 2-3 tablespoons of sugar);
apples with mint, sugar and vanilla (one apple and pear each + 1 teaspoon of dry, crushed mint + 2 tbsp sugar + 1 sachet of vanillin);
prunes with dried apricots and lemon zest (100 g each of finely chopped, steamed prunes and dried apricots + zest from one lemon);
cottage cheese with jam (150 gr. cottage cheese + half a glass of any jam and 2 tbsp. sugar);
cherry with an apple (100 gr. Pitted cherries + one and 2 tablespoons of granulated sugar):
raspberries and sugar (200 gr. raspberries + 1 tbsp. sugar, instead of raspberries, you can use currants, strawberries, plums or other berries).

There are many filling options for a jellied kefir sweet pie, it all depends on your preference, taste and wallet.

You can bake a kefir pie with rhubarb or sorrel. Or with the addition of any jam; nuts, sunflower seeds or pumpkin seeds; add ground coriander, tarragon or anise - only your own imagination can limit you.

Pour a little (slightly less than half) of the dough onto a mold greased with butter or vegetable oil. Then, spread the filling evenly, pour over the rest of the dough and bake over low heat until cooked (about an hour or a little more - depending on your oven). If the cooking temperature is high, the cake will brown, but the inside will be raw. We check readiness with a toothpick - if when piercing the pie through, the dough does not stick to the toothpick, then the pie is ready.

Sweet jellied pie with jam

If you decide to make a sweet jellied pie with jam, then you need to add the jam before you stir in the flour. You will get something like a biscuit, almost a cake. If you want to add seeds or nuts, then pour them into the bottom of the mold first, before pouring the dough. When the cake is ready, you simply cover the pan with a spatula, board or flat plate and shake (tilt) the cake. Just first go with a knife or spatula between the cake and the mold around the entire circumference. Seeds or nuts will be on top.

When preparing a jellied pie on a stove in a frying pan, the volume of the dough should not exceed half the form and it must be cooked under a closed lid, over low heat.

The most important thing in a jellied pie is a delicious dough. As a rule, the dough is prepared with mayonnaise or kefir. In my case, it will be kefir.

To prepare a jellied kefir pie with chicken and potatoes, we will need eggs, vegetable oil, salt, sugar and baking powder. If you add soda instead of baking powder, then you don’t need to quench it with vinegar, since it is successfully quenched with kefir acid. Soda take 2 times less than baking powder.

Please note that vegetable oil can be removed from the recipe and the pie will be less high-calorie.

Pour kefir into a container where you will knead the dough. Beat in 3 eggs and add vegetable oil.

Add baking powder, sugar and salt. At this stage, many recommend stirring the dough so that the reaction occurs (baking powder - kefir).

I used to do that too. Now I put all the ingredients at once and beat with a blender.

Add flour.

And beat with a blender until the dough is smooth.

To make the cake tasty, you can not do without the filling. The filling can be different: meat, vegetable, fruit, cheese ... whatever your heart desires.

I wanted to cook something more satisfying and I settled on chicken fillet and potatoes. I took all the ingredients raw. I wanted a juicy pie. Don't worry, the pie will have time to cook.

So, chop the chicken fillet quite finely.

We also cut potatoes, onions and greens.

We combine all the ingredients for the filling, salt to taste, add your favorite spices, I have zira and a mixture of peppers. We stir.

We stir. It remains to lay out all the blanks in a baking sheet and bake the cake. Grease a baking sheet with margarine and sprinkle with semolina.

Pour half of the dough onto a baking sheet and smooth with a spoon. Lay the filling on top. Pour the filling with the second part of the dough. It is easier to do this with a spoon, evenly covering the entire filling with dough.

Preheat the oven to 240 degrees, put the cake in it and immediately reduce the temperature to 170 degrees. The cake will bake for 45 minutes.

I made a big jellied kefir pie with chicken and potatoes. My children ate half hot and the other half (after the photo session :)) cold. When asked how it tastes better - hot or cold, everyone unanimously said that both options are excellent!
