Recipe 6. Minced meat roll with mushrooms in the oven with sun-dried tomatoes

Ingredients

For minced meat:

700 g of pork;

5 g ground black pepper;

bulb;

5 g of table salt;

10 cloves of garlic.

300 g mushrooms;

5 g ground black pepper;

150 g Cheddar cheese;

3 g of kitchen salt;

bulb;

1 bell pepper;

50 g sun-dried tomatoes;

100 g sour cream.

Cooking method

We start by preparing the filling. Chop the peeled onion as finely as possible. Fry it in sunflower oil, stirring regularly, until soft. Wash mushrooms, clean and cut into slices. Add the mushrooms to the onion, salt and continue to cook until the liquid has evaporated. Season with pepper and remove from the stove.

We free the pod of bell pepper from the stalk, clean it from seeds and cut into thin strips.

We twist the peeled onions and garlic in a meat grinder along with the meat. Mix with your hands, season with salt and pepper. Spread the minced meat in a thin layer on a cling film. Place thin slices of cheese on top. On one side lay out the stuffing and sun-dried tomatoes. We roll the stuffing into a roll. We wrap it in foil and send it to bake for 45 minutes at a temperature of 200 C. Remove the top layer of foil, grease with sour cream and put in the oven for another quarter of an hour.

Minced meat must be kneaded for at least ten minutes to make the meat mixture viscous.

If you want to reduce the calorie content of the dish, do not fry the mushrooms, but boil them.

Eggs, flour or starch can be used as a binder.

The roll can be rolled up with cling film or foil.

Delicious meatloaf with mushrooms!

The recipe for this dish came to my mind by itself when, after conducting an audit in the refrigerator, I identified products that require immediate use.

Later, when my creation was presented to the strict court of my husband, it turned out that a similar dish exists in Greek cuisine (moussaka), only eggplants are added there.

I want to immediately draw attention to this point: it may seem to someone that the recipe lacks mayonnaise - IT'S NOT SO! Mayonnaise, especially store-bought mayonnaise, is a product of dubious quality and is strictly prohibited in our house. The minced meat roll turns out to be juicy, moderately fatty and fragrant - mayonnaise is absolutely useless there!

So, what do we need for minced meat roll

Minced meat (I took pork / beef, 1/1) - 350 g;
Potato - 2-3 tubers;
Onion - 1 piece;
Cheese - 250 g;
Mushrooms (champignons) - 250 g, more can be.

  • Grate potatoes on a coarse grater and squeeze out the juice.
  • Cheese - cut off a few plates, the rest - grate or cut into cubes.
  • Chop the onion and mushrooms into medium sized cubes. Mince - salt and pepper.

How to assemble minced meat roll for baking

  • Spread all the ingredients in layers on cling film.
  1. Potato + cheese;
  2. Half an onion;
  3. Ground meat;
  4. The rest of the bow;
  5. Mushrooms.
  • Cover each layer with cling film on top and lightly tamp with a rolling pin. Then remove the film and lay out the next layer. Then repeat all over again until you lay out all the layers.

  • When all the layers of the meatloaf are laid out, roll the flat puff structure into a roll (using the same film). Very carefully transfer the roll to a baking sheet.

  • Send the roll to the oven for 35 minutes. Baking temperature - 200 C.

Cheese mixed with potatoes will melt when heated and form a fairly strong shell. She will hardly miss the juice and let the roll fall apart.

  • 10 minutes before readiness, put cheese slices on top of the roll and send back to the oven.

It is convenient to divide the finished roll with a spatula into portions and put it on a plate. You can sprinkle with fresh herbs. Oddly enough, the roll does not require any additions (sauce, garnish). It exudes a warm cheese flavor and whets your appetite! Delicious!

- pork pulp - 400-500 gr.,
- chicken breast - 300 gr.,
- white loaf - 2 - 3 slices,
- chicken eggs - 2 pcs.,

1. Rinse the pork pulp, as well as the chicken breast and pass through a meat grinder. Also chop the peeled and washed onions (1 pc.). Salt and pepper the minced meat to taste. Tip: You can also use a mixture of pork and beef for minced meat. You can also add a clove of garlic if you like - it's a matter of taste.




2. Soak slices of bread (yesterday's) in milk. Then squeeze and combine with minced meat.




3. Add chicken eggs to the main ingredients and mix thoroughly. At this stage, you can add some milk left over from soaking the bread. Beat the minced meat well with your hands so that it is enriched with oxygen. From this, the meatloaf will be tastier and more tender. Therefore, "throw" minced meat into a bowl in the truest sense of the word.




4. Prepare the mushroom filling. To do this, peel the onion, rinse and cut into cubes. Transfer to a frying pan and fry in a small amount of vegetable oil until translucent.






5. Peel the mushrooms and cut into small pieces. Combine with onions and cook over medium heat for about 10-15 minutes.




6. Salt and pepper the mushroom filling. Simmer for a couple more minutes and remove from heat. Set aside to cool down.




7. Lubricate a rectangular piece of foil with vegetable oil. Spread the minced meat over the entire surface of the foil, forming a 1 cm thick rectangle. Tamp well so that voids do not form.




8. Distribute the cooled mushroom filling in an even layer, slightly stepping back from the edges of the meat layer.






9. Roll everything into a tight roll. Level if necessary. Wrap in foil, bend the edges. Transfer the roll to a baking sheet. Bake in a preheated oven at 180C until cooked through, about 40-50 minutes. Shortly before the end of the cooking process, unfold the foil so that the minced meatloaf with mushrooms in the oven browns a little. Cool the finished roll. Be sure to prepare this one too.




10. Before serving, decorate the meatloaf with mushrooms with a “mesh” of mayonnaise and parsley, or as fantasy suggests.
