Mix flour with sugar, salt and pieces of chilled butter. Knead until a crumbly mass is obtained. Add milk and knead a tight dough. Then it should be rolled up in a lump and put in the refrigerator for 20 minutes. While it is cooling, let's make the lemon filling.

Pour water, lemon juice into a saucepan, stir sugar and starch and zest there. Put on the stove and bring to a boil, then reduce the heat and simmer for about 5 minutes. While whisking the yolks well. Add them to the lemon syrup, stir well and cook over low heat for another 10 minutes. The mass should become thick, creamy.

Back to the test

Preheat the oven to 180 degrees.

Take the dough out of the refrigerator, roll it out thinly and put it in a greased form. From above it is necessary to press a large sheet of foil. Pour beans or something similar on the foil so that the cake does not swell during baking.

  3. Add sugar to them, pour it into a saucepan and cook over low heat for 15-20 minutes until the mass becomes thicker. The result should be lemon curd, jam, jam - call it what you want, but the meaning is clear.
  4. Grease the baking sheet with oil. We lay the first layer of dough, press it tightly and form the sides so that the filling does not run away.
  5. Cut the remaining dough into strips, which should be laid on top of the filling in the form of a lattice. Pinch the edges to keep the cake in place. In the photo, by the way, they just covered it with a whole sheet of dough. It is possible and so, the main thing is not to forget to make a few cuts on top so that nothing swells.
  6. We put in a hot (200 degrees) oven for 25 minutes until crispy.

Lemon pie in a slow cooker

Something all the recipes for the oven and for the oven ... Let's bake a lemon pie in a slow cooker!

In fact, this is a jellied pie without filling, but with a very tasty dough.

Ingredients:

  • Chicken eggs - 4 pcs.
  • Butter (margarine) - 110 g.
  • Sugar - 120 g.
  • Wheat flour - 170 g.
  • Baking powder - 1 teaspoon
  • Lemon - 1 pc.

Cooking

Grind the lemons with the skins in a blender. Don't forget to remove the pits from the lemons! Then mix them with sugar, melted butter, eggs, flour and baking powder.

Pour the lemon dough into the multicooker bowl, turn on the “baking” mode and close for 60 minutes.

  • What can and should be added to lemon pie? Of course oranges! Oranges will not only make the filling sweeter, but also give their zest a new flavor.

I will show you my favorite option - with curd, puff-yeast dough. This dough itself is a godsend - a very quick version of puff pastry that does not need to be pre-cooled before baking - you can use it almost immediately. By the way, with this dough you can cook pies not only with sweet fillings, but also with any other - a very versatile dough. Baking from it is very tender, soft and does not stale for a long time.

Butter must be taken out in advance so that it becomes quite soft - so it will be easier to spread it over soft dough later.
Now you need to activate the yeast. To do this, pour the required amount of dry yeast into a 200 gram glass, mix with 1 teaspoon of sugar and then pour warm water into about 1/5 of the glass volume.


Cover (to avoid drafts) the top with something, even a plate, and leave for 10 minutes until a foam cap appears.


While the yeast is activated, we work further.
Cottage cheese can be rubbed through a strainer - this is if it has a granular structure.
Then add salt, sugar to it and mix everything until smooth.
Then add the yolks, activated yeast and warm milk (somewhere around 37 degrees). Mix everything well again.


Then gradually add flour, be sure to sifted. Sifted flour is saturated with oxygen, with such baking it always turns out to be more airy and does not get stale for a long time.
At the very beginning, boldly pour in about half the norm of flour and mix until smooth.


Then, gradually adding the rest of the flour, knead a soft dough that does not stick to your hands. To make it easier to knead, you can lubricate your hands with a small amount of vegetable oil.
Now from this simple yeast dough we will make puff pastry.


Divide the butter into 5 equal parts.


Next, roll out the dough into a rectangular (oval) layer about 1 centimeter thick (not very thin). With one part of the oil (1/5), grease 2/3 of the dough layer (it is very convenient to do this with a silicone spatula).


And then we fold the dough in three, starting from the unblurred edge - we get the dough in three layers.


Now this piece of dough must be rolled out again to its original size and again similarly oiled by 2/3 and folded again ... i.e. Repeat this process until all the oil is gone.
If the dough breaks somewhere when rolling out, it’s not scary, just pour a little flour into the hole, in the end everything will still turn out beautifully.
After the last folding, the dough is put aside - let it infuse a little (rest).


In the meantime, let's prepare our lemon filling.
Since we will use lemons with a peel, it is better to choose thin-walled ones so that the white (bitter) layer is as small as possible. Lemons should be thoroughly washed and, even not superfluous, scald them with boiling water.

Next, grind the lemons in any way you are used to - they can be scrolled through a meat grinder or grated. For example, I first cut off the “buttocks” (there is just the most white layer in them) and cut into slices - it’s easier to take out the bones inside.


And then I grind it together with sugar and vanilla sugar in a blender.


Now let's make a cake. Divide the dough into unequal parts - 2/3 and 1/3.
Here in this photo, after cutting, you can just see the layering of the resulting dough.


Roll out most of the dough to the size of your form (I have a square 28x28 centimeters), so that there is enough for the sides.



The remaining (smaller) part of the dough is also rolled out according to the size of the mold so as to cover the filling.
Lubricate the entire surface with a mixture of yolk and milk. We cover with the edges (from the sides) and pinch a little, forming beautiful (if possible) edges. We also coat them with a milk-yolk mixture.
On the surface, you need to make several holes with a knife, cutting through only the upper part of the dough to release steam - the filling is still liquid. Let the cake stand for a bit, 20 minutes is definitely enough, while the oven heats up to 190 degrees.

Bake for 30-35 minutes until nicely browned.
To avoid burning, you can cover the cake with a sheet of foil after a while.


The finished lemon pie should be completely cooled before serving, otherwise the filling may leak, and you can easily burn yourself.

Attention! If the lemons for the filling are taken along with the peel, so that it does not turn out bitter, they will need to be soaked in warm water for half an hour beforehand.

When there is not much time, but you want to cook a dessert quickly, you can make a puff pastry pie with lemon filling by buying a ready-made semi-finished product in the store.

For such a dessert, you need only three ingredients:

  • a pack of puff base;
  • several lemons;
  • sugar.

How to make puff pastries:

  1. Defrost the dough, divide into 2 parts and roll out to the desired size.
  2. We cut the lemons, remove the seeds and grind in a meat grinder or in a blender bowl.
  3. Add sugar to the citrus pulp and put the mixture on fire.
  4. We warm the filling, stirring constantly, for a quarter of an hour, until it thickens a little.

  2. Beat the egg with a little salt, and then pour the dough into it.
