The recipe is quite universal: according to my mood, I cook chicken liver, then pork. It turns out delicious with beef liver, but for my family it is an expensive product. Any liver is tender, with a light apple flavor. At the same time, apples are an excellent addition to the dish, and they can also be used as an independent snack. There is a slight difference in the preparation of chicken and pork liver, I will tell you about each cooking option.

Ingredients

  • 500 grams of liver (chicken and pork);
  • 2 large heads of onions;
  • 2 large juicy apples, with dense pulp;
  • salt and black ground pepper - to taste;
  • one teaspoon of granulated sugar and 70% vinegar;
  • odorless sunflower oil - for frying.

Cooking

We wash the chicken liver under running water, remove all the films. If the pieces are large, they will need to be cut. If you have pork or beef liver, also rinse under running water, remove all films and cut into fairly large plates (like steaks) about one and a half centimeters thick.

Apples for the preparation of this dish, according to tradition, are used green, sweet and sour. But I tried to do it with red, sweet apples: it also turned out very tasty. My apples, remove the core and cut into large slices. It is better not to peel them, otherwise they can turn into porridge during roasting.

We also cut the peeled onion into large slices. To prepare chicken liver, the process will be as follows. Heat up vegetable oil in a frying pan. We spread the chicken liver in it and fry over high heat until the liver becomes light and the blood stops flowing. Then put the apples on the liver, reduce the fire and continue to fry for another 4 minutes.

Lastly, add the onion to the pan, season with salt and pepper to taste, and continue to fry until the onion is tender, about 6 minutes. The step-by-step process for cooking pork or beef liver steaks will be slightly different (although, in principle, you can cook the same as chicken liver). First, fry apple slices in heated vegetable oil. Then put them in a bowl, cover to remain warm and retain their aroma.

Cut the onion into thin rings, fry in a small amount of sunflower oil, add a teaspoon of sugar. After the sugar has melted, pour in a teaspoon of 70% vinegar. Fry the prepared liver in vegetable oil until tender: about 4-5 minutes on each side. Salt it at the end of cooking. 5. In a preheated pan with vegetable oil, first spread the onion. Fry it for 1-2 minutes over medium heat, stirring constantly.

6. Next, add pieces of the liver, reduce the heat and cook for 3 minutes until it turns white. Then turn over to the other side and fry for another 2-3 minutes. Season with your favorite spices. It can be Provence herbs, turmeric, paprika, a mixture of peppers.

7. Now add apples. Stirring constantly, fry over low heat for 3-5 minutes, until the liver and apples are golden brown. We turn over all the ingredients very carefully to keep the shape of the slices, otherwise you will get porridge.

Tip: if you are preparing liver for adults, you can make this sauce for it: add a tablespoon of balsamic vinegar, 2 tablespoons of soy sauce and a spoonful of honey to red wine. Stir and pour into skillet.

8. Then, cover with a lid and simmer for another 2 minutes until all ingredients are fully cooked. Checking the degree of readiness is not difficult: just cut a piece of the liver: if there is no blood, then it is ready. From above, the color of the finished liver is light brown, and inside is soft pink. It is important not to overexpose the offal, otherwise it will be dry and hard.

Tip: Salt the liver at the very end of cooking. If you do this right away, the pieces will release the juice and become hard.
